1 large onion, finely chopped
1 medium green pepper, finely chopped
2 tablespoons butter
2 garlic cloves, minced
3 pints half-and-half cream
2 cups frozen shredded hash brown potatoes, thawed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of asparagus soup, undiluted
2 cans (6 ounces each) lump crabmeat, drained
1 package (8 ounces) imitation crabmeat, chopped
1-1/2 cups frozen corn, thawed
1 tablespoon dried parsley flakes
1-1/2 teaspoons dill weed
1-1/2 teaspoons seafood seasoning
1 teaspoon pepper

Steps:

  • In a Dutch oven, saute onion and green pepper in butter until tender. Add garlic; saute 1 minute longer. Stir in the remaining ingredients. Cook and stir over medium-low heat until heated through (do not boil).

15 oz pumpkin puree (or equal amount of homemade pureed pumpkin)
3 celery ribs, chopped
1/2 onion, chopped
1 tablespoon butter
15 oz chicken broth
1/2 cup crab lump meat, plus more for serving
1/2 cup heavy cream
1 teaspoon cumin
1 teaspoon salt
1 teaspoon white or black pepper

Steps:

  • Melt butter in a medium size pot. Use a heavy bottom pot if possible. Add chopped onions and celery. Saute for about 5 minutes, until fragrant and soft.
  • Add pumpkin puree, broth and spice. Mix well. Add crab and simmer soup for 5-10 minutes on medium heat to let the flavors to blend together.
  • Add heavy cream and turn the heat off. Stir and its ready to be served.

1 small ripe pumpkin - peeled & cubed
5 grains of garlic - peeled & crushed
1/2 lemon
1 habanero pepper (optional)
16oz lump crab meat
10 basil fresh leaves
1/2 cup of low-fat cream
1 can of cream of mushroom soup
1 cup water (retained after boiling pumpkin)
1 tablespoon of Old Bay seasoning
1 teaspoon ground coriander
cracked black pepper
cracked red pepper to taste
salt to taste
parsley to garnish

Steps:

  • Boil pumpkin cubes until fully tender. Drain but keep one cup of water aside. In a blender, puree garlic, basil, habanero pepper (optional), cream and soup. And pumpkin and puree. Empty into a soup pot, add crab and sqeeze lemon through a sieve over crab. Simmer on low heat for about 10 minutes cover to avoid splashing. Add Old Bay,coriander, black and red pepper to taste and salt to taste. Simmer for an additional 10 minutes. Serve hot and garnish with parsley.

3 tablespoons butter, softened
1 tablespoon brown sugar
¼ teaspoon ground cinnamon
4 slices whole wheat bread
1 cup chopped onion
2 tablespoons butter, melted
2 (14.5 ounce) cans chicken broth
1 (15 ounce) can pumpkin puree
1 teaspoon salt
¼ teaspoon ground cinnamon
⅛ teaspoon ground ginger
⅛ teaspoon ground black pepper
1 cup heavy whipping cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). To make the croutons, combine softened butter, brown sugar, and cinnamon. Spread butter mixture evenly over one side of each bread slice. Place bread, buttered side up, on a baking sheet. Bake 8 to 10 minutes, or until bread is crisp and topping is bubbly. Cut each slice of bread into 8 small triangles or squares.
  • Saute onion in butter in a medium saucepan until tender. Add 1 can chicken broth; stir well. Bring to a boil; cover, reduce heat, and simmer 15 minutes.
  • Transfer broth mixture into the container of a blender or processor. Process until smooth.
  • Return mixture to saucepan. Add remaining can of broth, pumpkin, salt, ground cinnamon, ground ginger, and ground pepper; stir well. Bring to a boil; cover, reduce heat, and simmer 10 minutes more, stirring occasionally.
  • Stir in whipping cream and heat through. Do not boil. Ladle into individual soup bowls. Top each serving with Cinnamon Croutons.
