CREAMY PASTA WITH POPPY SEEDS AND PROSCIUTTO
Adapted from a recipe from SPQR in San Francisco. This goes together very quickly and the sauce needs to be almost constantly stirred while cooking, so get all the prep work done in advance.

- Put a pot of salted water on to cook pasta. While pasta is cooking (according to package directions, make the sauce:.
- Heat butter and oil in a 12″ skillet over medium-high heat. Add sliced shallot. Season to taste and cook until soft, about 2 minutes, stirring frequently.
- Add poppy seeds and cook, stirring, until fragrant and shallots begin to brown lightly, about 3 minutes.
- Add wine and cook until almost all liquid evaporates, about 5 minutes.
- Add buttermilk and cream; cook, stirring, until reduced slightly, about 3 minutes. When pasta has cooked to almost al dente, drain it, reserving a little cooking water, and add the cooked pasta to sauce in skillet.
- Add prosciutto, cheese, and lemon juice; toss to combine, adding water if necessary to make a smooth sauce. Adjust seasoning and transfer to two plates. Sprinkle with scallions and more Parmesan.

LEMON-POPPY SEED FETTUCCINE

- Bring a large pot of salted water to a boil. Heat the olive oil and garlic in a large nonstick skillet over medium-high heat and cook until the garlic is golden brown; discard the garlic. Add the zucchini to the garlic oil; season with salt and pepper. Cook, stirring, until the zucchini is crisp-tender, about 2 minutes. Stir in the poppy seeds and remove from the heat.
- Add the pasta to the boiling water and cook as the label directs. Reserve 1 cup cooking water, then drain. Return the skillet to medium-high heat and add the pasta, 1/2 cup of the reserved cooking water, the lemon zest, butter and parmesan; season with salt and pepper. Bring to a simmer and toss to combine. Add the remaining 1/2 cup cooking water and the lemon juice and simmer until the sauce is slightly thickened, about 1 minute (the pasta will continue to absorb the sauce as it sits). Divide among bowls.
POPPY SEED CHICKEN PASTA SALAD
My boyfriend is not a fan of pasta salads and he couldn't get enough of it! You can omit the pasta and place salad on sandwich roll or bread for a yummy chicken salad sandwich.
