Steps:
- In a 4 quart saucepan saute celery and onion in butter overmedium-high heat. Saute until celery and onion are tender, approximately five minutes.
- Remove from heat and add the flour and peanut butter, stirring until melted. Once melted gradually stir in chicken broth.
- Return to medium-high heat and bring to boil for two minutes. Reduce heat and simmer uncovered approximately 10 minutes, stirring occasionally.
- Stir in heavy cream and heat through.

Steps:
- Cook rice as directed on package, omitting the salt.
- Meanwhile, cook next 5 ingredients in saucepan on low heat 3 min. or until heated through, stirring frequently. Keep warm.
- Stir-fry chicken in large skillet sprayed with cooking spray on medium-high heat 5 min. or until evenly browned. Add vegetables and 3 Tbsp. peanut butter sauce; stir-fry 5 min. or until chicken is done and all ingredients are heated through.
- Spoon rice onto platter; top with chicken mixture and remaining peanut butter sauce.

CREAMY PEANUT CHICKEN STEW
Steps:
- 1. put oil in deep skillet and turn heat to medium high. put chicken in skin side down, season with salt and pepper and brown well, turning pieces. Remove meat and drain all but 2 tablespoons of fat. 2. Add onion and ginger and cook, stirring occasionally, until softened and fragrant.(5 minutes) Stir in curry powder and cayenne pepper and cook stirring for about 30 seconds. Add cream and stock and bring to a boil; cook until slightly thickened, 1 or 2 minutes, stir in peanuts if using. 3. Return chicken to pan, bring to boil then lower heat and simmer stirring occasionally until chicken is cooked through, 20 or 30 minutes. If using peanut butter, stir into pot until blended. Taste and adjust seasonings, garnish and serve. OPTION1: use leftover turkey, or chicken breasts and chop into small pieces. OPTION2: Peanut Stew with chicken and tomatoes: Omit curry powder and cream. Once onion is cooked, stir in cayenne and 1.5 cup chopped tomatoes (canned are fine). Cook until tomatoes have softened about 10 minutes, then proceed as above.
CREAMY PEANUT CHICKEN
I was given this by one of our company's interstate sales managers, and I think it's great! Much lower in calories than other peanut chickens I've seen, and the spiciness of the curry paste perfectly balances out the sweetness of the peanut butter. Mild enough for kids to enjoy, plenty of flavour for the adults! Hope you try this and enjoy!

- Add curry paste and sambal oelek and fry for one minute.
- Add chicken and stir fry for around 4 minutes, or til golden.
- Add all other ingredients, bring to a boil and let simmer for around 8-10 minutes til sauce thickens slightly.
- Serve on a bed of rice with lemon wedges and roti bread.
- (You can add veggies such as green beans to the recipe, just throw in at step 4 and let simmer).

- Cook noodles as directed on package. Meanwhile, cook and stir chicken and garlic in 2 Tbsp. dressing in wok or large skillet on high heat 5 min. or until chicken is done. Add egg; cook and stir 30 sec. or until egg is set. Add peanut butter, water, soy sauce and remaining dressing; mix well.
- Drain noodles. Add to ingredients in wok; mix lightly. Stir in sprouts and onions; transfer to bowl.
- Top with nuts.
