1 tablespoon poppy seed salad dressing
¾ cup diced cooked chicken
½ fresh peach, diced
¼ cup chopped walnuts
1 tablespoon chopped green onions

Steps:

  • Mix cream cheese and poppy seed dressing together in a bowl; fold in chicken, peach, walnuts, and green onions until well coated.

GRILLED LEMON-ROSEMARY SALMON WITH CREAMY HORSERADISH-SCALLION SAUCE & GRILLED PEACHES image

For the salmon rub:
2 center cut wild salmon fillets, skin intact and pin bones removed
1 tbls fresh rosemary, minced
1 tsp dried dill
1 large clove garlic, minced
1 1/2 tbls lemon zest
1 tsp sugar
1 tsp kosher salt
1 tsp black pepper
olive oil
juice from 1 lemon
4 fresh rosemary sprigs
8 fresh time sprigs
2 peaches, pitted and halved, and sprinkled with a pinch of salt and sugar.
For the sauce:
1/2 cup sour cream
1 1/2 tbls horseradish
1 scallion, finely chopped
1 tsp lemon juice
a pinch of sugar
kosher salt and white pepper to taste

Steps:

  • For the Salmon: In a small bowl, combine the rosemary, dill, garlic, zest, sugar, salt, pepper, and just enough olive oil to bring the mixture all together. Place the salmon, skin-side down, on an oiled piece of foil. Sprinkle lemon juice onto the foil. Rub the rosemary mixture into the fillets. Allow the fish to marinate, at room temperature, for 30 minutes while the grill heats and the sauce is made. For the sauce: Combine sour cream, horseradish, scallion, lemon juice, sugar, salt and pepper, and set aside. Cook the salmon: Place the foil-wrapped woodchips in the BBQ. Place the foil with salmon on a pre-heated, medium heat, gas or charcoal grill. Place the rosemary and thyme sprigs around the salmon. Close the lid and grill until cooked through, 10-15 minutes, depending on the thickness of the fillets. Remove the salmon, and while the fish is resting for 5 minutes, grill the peaches until charred on each side. Plate the salmon and serve with the creamy sauce and peeled, sliced grilled peaches.

1 cup quinoa
2 cups water
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 large fresh peach, pitted and chopped
½ cup fat-free Greek yogurt
2 tablespoons honey, or to taste
1 pinch ground nutmeg
1 tablespoon lime juice, or to taste

Steps:

  • If quinoa is not pre-rinsed, rinse in plenty of cool water to remove coating, and drain. Bring 2 cups of water to a boil in a saucepan, and stir in the quinoa; reduce heat to low, and simmer until tender, 15 to 20 minutes. Drain excess water, and mix in the cinnamon and 1 teaspoon of nutmeg.
  • Mix the chopped peach with yogurt in a bowl. Serve quinoa in a serving bowl, topped with about 2 tablespoons of the peach yogurt. Drizzle with a teaspoon or so of honey, sprinkle with nutmeg, and drizzle about a teaspoon of lime juice over the top.

1 (15 ounce) can sliced peaches in light syrup, drained
1 1/2 cups fat-free cottage cheese
4 ounces fat free cream cheese, cubed
1 tablespoon Splenda granular, sugar substitute

Steps:

  • Thinly slice 4 peach slices; set aside for garnish.
  • Place remaining peaches in a food processor; add cottage cheese. Cover and process until blended. Add cream cheese and sugar substitute; cover and process until blended.
  • Spoon into four serving dishes. Top with reserved peaches.
  • Refrigerate until serving.

This is the Best Pie ever. It is like eating summer all year long. It is so simple and tastes Wonderful.

1 - graham cracker pie crust
1 box - jello brand peach jello
1 tub - cool whip brand topping
1/2 cup - boiling water
1 cup - ice water
1 cup - diced peaches

Steps:

  • In a medium bowl dissolve the peach jello in the boiling water, stirring well until fully dissolved. Add the cold water, stirring well. When ice is melted, then fold in the cool whip. Do not over mix, do not use FROZEN cool whip or the pie will NOT set up.
  • Add about 1/2 c. well drained, diced pieces into the filling mix. Spoon into a graham cracker crust. Cover and place in the fridge for at least an hour prior to serving. Serve with additional sliced peaches on the top.
