CREAMY KALE AND PASTA WITH SWEET SAUSAGE
I came up with this pasta recipe to incorporate kale into our diet. My husband had thirds the first night I made it and he is not a fan of kale (or anything green). Even the kids loved it! Enjoy.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook gemelli at a boil, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add sausage and cook, stirring occasionally, until golden brown and cooked through, about 5 minutes. Add tomato, onion, and garlic; saute for 3 minutes. Pour in chicken broth and scrape the bottom of the pan to deglaze browned bits. Add kale and cook, tossing occasionally, until wilted and tender, about 5 minutes. Season with salt and pepper.
- While kale is cooking, reserve 1/2 cup pasta water, and drain pasta. Melt butter in a medium saucepan over medium heat. Add flour and cook, stirring constantly with a whisk, for 1 minute. Pour in milk slowly while whisking vigorously to smooth lumps. Season with salt and pepper and continue to cook until mixture begins to bubble and thicken, 7 to 10 minutes. Add reserved pasta water to reach desired consistency as needed. Remove sauce from heat.
- Pour sauce into sausage mixture, add drained pasta, and toss to evenly coat. Serve warm topped with Parmesan cheese.

- Bring a large pot of salted water to a boil. Add 1 tablespoon olive oil and orecchiette and cook, stirring occasionally, until tender yet firm to the bite, 8 to 10 minutes. Drain and set aside.
- Meanwhile, heat a large (10-inch) skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard most of the fat. Transfer cooked sausage to a bowl and return skillet to medium-high heat.

- Bring a large pot of lightly salted water to a boil. Cook radiatori in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 to 12 minutes. Strain pasta from water (do NOT drain water). Place kale in the boiling water. Blanch for about 1 minute. Drain off water.
- Immediately drop kale in a bowl with ice water to stop the cooking. Drain off water, squeeze out excess liquid, and roughly chop. Set aside.
- Cut sausage into thin discs and sear in a pan over medium-high heat. Remove sausage discs and set aside.

- Take sausage out of casings and crumble.
- Put olive oil and chopped garlic in a skillet and turn the heat to medium.
- When the garlic becomes pale gold, add the sausage.
- Turn from time to time, until nicely browned all over, about 15 minutes.
- Add the tomato and cook, uncovered, stirring occasionally, adjusting the heat if necessary so it will cook at a gentle simmer.
- After about 20 minutes, when the fat separates from the other juices and floats free, add the cream and turn up the heat.
- Cook for 1 to 2 minutes, stirring frequently, until the cream is reduced.
- Add salt and a liberal grinding of pepper.
- Turn off the heat and stir in the chopped parsley.
- Cook pasta in pot of boiling salted water.
- When tender, but firm to the bite, drain; toss immediately with sauce.
- Serve at once with freshly grated parmesan cheese.
- NOTES: The sauce maybe be prepared several hours in advance.
- It should be reheated gently when the pasta is almost cooked.
- I always double the sauce because in my house there never seems to be enough.
- My family loves this sauce.
- Double everything except the sausage, pasta and parmesan cheese to double the sauce.

- Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the oregano and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the oregano and stir in the ricotta. Season with salt and pepper.

- Bring large pot of water to boil for pasta. Toss shrimp with 1 - 2 tablespoons of cajun seasoning and coat well. Heat a large skillet over medium high heat and drizzle bottom of pan with olive oil. Add shrimp and cook for 2 minutes or so until starting to curl. Flip shrimp over and cook another minute or two and then remove to a plate and set aside. Drizzle pan with a little more olive oil, add sausage and brown until nicely caramelized, about 4 - 5 minutes. Remove to plate, set aside.
- Add pasta to salted boiling water and cook until al dente, a minute less than package instructions.
- Lower heat to medium and add another good drizzle of olive oil to the pan, add the onion, red bell pepper, thyme, smoked paprika, 1 tablespoon cajun seasoning, brown sugar and a generous pinch of salt. Sauté until onion and pepper have softened a bit, scraping up any browned bits that you can. Add the garlic and cook until fragrant, about 30 seconds.

- Put large pot of salted water on high and bring to a boil.
- Meanwhile, squeeze sausage meat out of the casings into a large frying pan, over medium-high heat. Roughly chop meat. When the sausage is no longer pink, add onion and garlic to the pan. Stir and sauté until onion is softened.

- Preheat oven to 400°
- Chop butternut squash into cubes and lay on sheet pan
- Pour tbsp avocado or olive oil and nutmeg over the squash and mix well so each butternut squash cube is coated
- Bake for 40 minutes
- While the squash is roasting, bring a pot of water to a boil and cook pasta. Save at least a ½ cup of pasta water
- Cook hot Italian sausage and drain grease
- In oven save deep pot or pan over low heat add 1 tbsp olive oil and sage of low heat
- Once the sage is fragrant add the roasted butternut squash, nutmeg, salt, pepper, and let cook a few minutes in the pan
- Slowly pour in the chicken broth and bring heat to medium. Bring to a simmer
- Lower heat and use immersion blender to blend the butternut squash, sage, chicken broth, and spices well to a thick paste. If you don't have an immersion blender pour into blender and blend until smooth
- Once mixed well keep heat on low to medium and add in ricotta cheese, mozzarella, and red pepper. Fold and mix well into butternut squash
- Slowly pour in the pasta water. We like ½ cup but if it's too thick add a bit more
- Keep stirring and add in the hot Italian sausage and pasta. Mix well until fully combined
- Level out the pasta and sprinkle the beadcrumbs and parmesan cheese on top of the pasta
- Bake for 20 minutes and serve!
