Chicken Stir Fry with Rice Noodles image

One of the best Vietnamese stir fries ever

CHICKEN
2 boneless chicken thighs cut into strips
1 teaspoon(s) cornstarch
1 teaspoon(s) peanut oil
SAUCE
2 tablespoon(s) hoisn sauce
1 teaspoon(s) oyster sauce
1 tablespoon(s) dark soy sauce
1/2 teaspoon(s) sesame oil
2 teaspoon(s) shaoxing wine or sherry
2 tablespoon(s) brown sugar
1/4 teaspoon(s) white pepper
STIR FRY
4 ounce(s) rice noodles
1 tablespoon(s) olive oil
2 clove(s) garlic minced
1 medium onion sliced
1 baby bok choy chopped white and green parts separated
4 ounce(s) shiitake mushrooms chopped
3 green onions chopped
cilantro for garnish

Steps:

  • Mix the chicken cornstarch and oil together in a bowl and set aside. Mix the sauce ingredients together and set aside.
  • Cook the noodles according to package directions and drain.
  • Place the olive oil in a wok and add the onions and stir fry for 3 minutes. Add the garlic and stir fry 30 seconds. Add the chicken and stir fry 2 minutes.
  • Add the white parts of the bok choy and mushrooms. stir fry 3 minutes. Add the green onions and stir fry 30 seconds.
  • Add the noodles and sauce and stir to coat all the noodles and veggies in the sauce. Add the green parts of the bok choy and let wilt.
  • plate in bowl and garnish with cilantro.
