TWICE-BAKED POTATOES WITH CREAMY GREEN ONION SAUCE
I have been using this recipe for special occasions, holiday meals, or when I really want to impress somebody. I always get lots of compliments and requests for the recipe.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Arrange potatoes on a baking sheet.
- Bake potatoes in the preheated oven until tender, about 1 hour.
- Melt 2 tablespoons butter in small pot over medium heat. Add green onions; cook until soft, about 4 minutes. Stir in flour until well blended, about 1 minute. Pour in milk and 1/2 cup half-and-half gradually, stirring sauce constantly. Season with salt and cook until sauce is thickened, 10 to 15 minutes.
- Cut a slice from the top of each baked potato and scoop the pulp into a bowl. Mash pulp until no lumps remain. Add 1/4 cup half-and-half and 1 tablespoon butter; blend together with an electric mixer. Stir in 1/2 cup Parmesan cheese and pepper until fully combined.
- Fill baked potato skins with the mashed pulp mixture; make a well on top of each potato. Fill wells with onion sauce. Sprinkle 1/4 cup Parmesan cheese on top.
- Turn on the broiler. Return stuffed potatoes to the oven and broil until golden brown; about 15 minutes.

CREAMY BACON AND ONION MASHED POTATOES
I found this recipe on the All Recipes site and knew right away that our family would love it. We all did and now it is one of the favorites in my "keeper" file. Granted, it is high in fat content and calories but is oh-so-good for the occasional splurge -- we usually have it with grilled chicken and a steamed vegetable.

Steps:
- Place potatoes into a large pot and fill with enough water to cover. Bring to a boil and cook until tender, about 8-10 minutes, depending on the size of the potato cubes.
- Meanwhile, fry bacon in a large skillet over medium-high heat until evenly browned and crisp. Remove bacon from the skillet to drain on paper towels.
- Add the onions to the bacon grease in the skillet and fry until tender, stirring often. Drain excess grease.
- When the potatoes are done, drain the water out of pot and mash. Mix in the buttermilk (or the buttermilk/whole milk combination) until you get your desired consistency.
- Crumble in the bacon and stir in the onions. You can also stir in between 1-2 tablespoons of the bacon grease if you like. Mix together and serve.

Steps:
- Peel potatoes, cut in chunks, cover with water and boil in a big pot about 15-20 minutes or until soft and will mash easily.
- Meanwhile, in a small skillet, saute onion and garlic in olive oil until soft- don't allow to brown or burn.
- Set aside.
- Drain potatoes and return to pan, add onion-garlic mixture and all other ingredients.
- Mash with potato masher for lumpier potatoes or use your mixer for smoother texture.
- Serve hot.

CREAMY FRIED ONION MASHED POTATOES
If you are an onion lover, you will absolutely LOVE these mashed potatoes, this is a simple recipe but oh so good! Use russet potatoes only for this recipe, they make the best mashed potatoes! These go perfect with a roast beef, pork or chicken dinner. For the creamiest mashed potatoes use whipping cream!

- Do this firstly or while potatoes are boiling, in a skillet fry the onions in butter until golden brown (this might take about 15 minutes, and do not drain the butter, if you do you will have to add in more butter anyway!).
- Boil the russets in a large pot of boiling water until fork-tender; drain and transfer the cooked potatoes to a large bowl.
- Mash the potatoes with the whipping cream and fryed onion/butter mixture until fluffy (I use my Kitchen Aid stand mixer for this with the mixing attachment and make certain to mash the potatoes while they are still warm or hot).
- If desired you can add in more whipping cream depending on the consistancy you desire.
- Season with salt and tons of black pepper.

CREAMY MASHED POTATOES WITH CARAMELIZED ONION
Steps:
- Cut cream cheese into small cubes. Let stand at room temperature. Slice onions in half length wise. Place cut side down on cutting board and thinly slice. Melt butter in a large fry pan. Set over medium heat. Add onions and sprinkle with sugar and 1 tsp. salt. Cook uncovered. Stir occasionally until onions have taken on a caramel look 30-40 minutes.
- While onions are cooking, peel potatoes and cut in half. Cook a few minutes. Before potatoes are done, pour milk into a large microwave safe bowl. Microwave on medium until hot, 2 to 3 minutes. Whisk in cream cheese until evenly mixed.
- When potatoes are cooked, drain well. Mash potatoes and put through a ricer and return to saucepan. Stir milk mixture, remaining tsp. salt, and pepper into large serving bowl. Top with onions and serve.
