This easy Cheesy Tomato Baked Gnocchi Recipe made with 2 types of cheese and a perfectly spiced tomato sauce, it's about as good as you can get.

1 pound Gnocchi ((homemade or store-bought store-bought))
1 1/2 tablespoons olive oil
1 cup tomato purée (passata)
1/4 cup water
1/2 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon salt
1 clove small garlic chopped
3/4 - 1 cup shredded firm Mozzarella ((Fontina or Gruyere cheese))
1/4 cup freshly grated Parmesan cheese

Steps:

  • Pre-heat oven to 400F (200C), lightly oil an 8 x 6 inch baking dish.
  • In a medium/large pan, add the olive oil, garlic, purée, water, oregano, basil, and salt. Stir to combine, on medium heat cook until thickened (not too thick), approximately 15-20 minutes.
  • While sauce is cooking, cook the gnocchi in the boiling salted water, just until they float to the surface, approximately 30 seconds, drain immediately, do not rinse.
  • When sauce has thickened add the gnocchi and toss gently, place in the prepared baking pan, top with the shredded Mozzarella and then the grated Parmesan cheese. Bake for approximately 5 minutes then raise heat and broil for another 3-5 minutes or until cheese has browned, (watch it doesn't burn). Serve immediately. Enjoy!

Pillowy bites of gnocchi smothered in a silky tomato sauce, topped with golden cheese. Comfort food heaven! Though I make this with store bought Marinara Sauce, I like to freshen up the flavours by simmering it will garlic and onion before using.

1 ½ pounds gnocchi (store bought)
1 tablespoon olive oil
2 garlic cloves (minced)
½ onion (finely chopped)
700 ml marinara sauce (24 ounces)
½ cup heavy cream
1 teaspoon Italian seasoning ((optional))
1 cup mozzarella cheese (grated)
½ cup basil leaves (torn/chopped)

Steps:

  • Preheat oven to 350°F.
  • Cook gnocchi according to packet directions. Drain and transfer to 1.5 quart baking dish.
  • Heat oil in a skillet over medium-high heat. Add garlic and onion, cook for 1 ½ minutes.
  • Add marinara sauce. Turn heat down and bring to simmer. Stir through cream and Seasonings, if using.
  • Pour over gnocchi. Stir to spread out. Top with cheese. Bake for 20 minutes or until cheese is melted and golden.
  • Garnish with basil leaves if desired and serve immediately.

  • Cook 10 ounces chopped white mushrooms in olive oil in a large nonstick skillet over medium-high heat until golden, 8 to 10 minutes, stirring halfway through. Stir in 1 teaspoon soy sauce, 2 grated garlic cloves and 1/2 teaspoon lemon zest; transfer to a bowl. Add 1 tablespoon olive oil and a 12-ounce package refrigerated gnocchi to the skillet. Cook, stirring, until crisp, 5 minutes. Stir in the mushrooms and 1/4 cup chopped parsley. Season with salt and pepper.

2 tablespoons extra-virgin olive oil
2 tablespoons butter, plus 1 tablespoon butter
1/2 pound white button mushrooms, sliced
2 sprigs fresh rosemary, leaves finely chopped
A couple sprigs thyme, leaves chopped
1 bay leaf
1 medium onion, finely chopped
2 cloves garlic, finely chopped or grated
Salt and freshly ground black pepper
1/4 cup tomato paste
1 tablespoon Worcestershire sauce
2 cups chicken stock
1 pound chopped cooked turkey meat
1/2 cup heavy cream
1 1/2 pounds gnocchi
A few grates nutmeg
Grated Parmesan or Gruyere, for topping

Steps:

  • Cook's Note: Stir in any leftover mushrooms from the roasted mushroom meal mid-week.
  • In a Dutch oven, heat the extra-virgin olive oil and 2 tablespoons of butter over medium heat. Add the mushrooms, rosemary, thyme and bay leaf and cook until the mushrooms are lightly brown, about 7 to 8 minutes. Stir in the onions and garlic and season with salt and pepper, to taste. Raise the heat a bit and cook 5 minutes more. Stir in the tomato paste, Worcestershire sauce and stock. Bring to a boil then reduce heat to a simmer. Add the turkey and heat until the mixture bubbles, then turn off heat and cool. Store in the refrigerator for a make-ahead meal.
  • Reheat the sauce, in a covered pot, over medium heat, then uncover the pot and stir in the cream. Simmer over low heat.
  • Bring a large pot of water to a boil over medium heat. Salt the water and add the gnocchi. Cook until they float, about 1 to 2 minutes.
  • Drain the gnocchi and them to the pot. Stir in the remaining 1 tablespoon of butter and season with a hint of freshly grated nutmeg. Serve in shallow bowls topped with lots of chunky, creamy sauce and some cheese.

1 pound mixed mushrooms, such as shiitake, oyster, maitake or cremini, trimmed and quartered (or cut into 1-inch pieces, if large)
1 (12- to 18-ounce) package shelf-stable or refrigerated potato gnocchi
6 tablespoons extra-virgin olive oil, plus more as needed
4 scallions, cut into 1-inch lengths
1 large shallot, thinly sliced
Kosher salt and black pepper
5 ounces baby spinach (about 5 packed cups)
2 tablespoons Dijon mustard
2 tablespoons prepared horseradish
1 teaspoon honey
1 tablespoon unsalted butter

Steps:

  • Heat the oven to 425 degrees. On a sheet pan, toss together the mushrooms, gnocchi, 5 tablespoons olive oil, scallions and shallot. Season with salt and pepper, shake into an even layer, and roast without stirring until the gnocchi and mushrooms are golden and crisp, 20 to 25 minutes. Add the spinach and remaining tablespoon of oil, season with salt and pepper, and stir to combine. Spread in an even layer, then return to the oven to roast until the spinach is tender, another 5 to 7 minutes.
  • Meanwhile, in a small bowl, stir together the mustard, horseradish and honey until combined. Season with salt and pepper.
  • Add the butter and half the sauce to the sheet pan, and stir until melted and glazy. Eat with the remaining sauce on the side.

1 tbsp olive oil
1 onion, chopped
1 red pepper, deseeded and finely chopped
1 garlic clove, crushed
400g can chopped tomatoes
500g pack gnocchi
handful basil leaves, torn
half a ball mozzarella, torn into chunks

Steps:

  • Heat grill to high. Heat 1 tbsp olive oil in a large frying pan, then soften 1 chopped onion and 1 finely chopped red pepper for 5 mins.
  • Stir in 1 crushed garlic clove, fry for 1 min, tip in 400g chopped tomatoes and 500g gnocchi, then bring to a simmer.
  • Bubble for 10-15 mins, stirring occasionally, until the gnocchi is soft and the sauce has thickened.
  • Season, stir through a handful of torn basil leaves, then transfer to a large ovenproof dish.
  • Scatter with torn chunks of half a 125g mozzarella ball, then grill for 5-6 mins until the cheese is bubbling and golden.
