3 eggs
1 cup real maple syrup
1/2 teaspoon ground cinnamon
3 cups milk
6 teaspoons vanilla
12 oz French or other firm bread, cut into 1-inch slices, then tear into 1-inch pieces (10 cups)
2 teaspoons butter, softened
1 cup chopped pecans, toasted
1 cup premium vanilla ice cream, melted
2 tablespoons bourbon, if desired
1 tablespoon real maple syrup

Steps:

  • In large bowl, mix eggs, 1 cup maple syrup and the cinnamon with wire whisk until well blended. Beat in milk and vanilla until well blended. Stir in bread pieces. Let stand 30 minutes.
  • Heat oven to 350°F. Grease 11x7-inch (2-quart) glass baking dish with softened butter. Stir pecans into bread mixture. Pour into baking dish.
  • Bake uncovered 65 to 70 minutes or until top is puffed and light golden brown (center will jiggle slightly). Cool 30 minutes.
  • In small bowl, mix ice cream, bourbon and 1 tablespoon maple syrup until well blended. Serve sauce over warm bread pudding. Store bread pudding and sauce covered in refrigerator.

If you like your bread pudding full of custard after baking, make the same amount of custard in this recipe and use less bread (or use the same amount of bread and use more custard), because the bread will soak up most of the liquid. Refer to above post for more info.

450 g/16oz/16 slices 2-inch thick/one loaf day-old bread*
1 cup pecans ((or raisins, chocolate chips, cranberries, etc.))
6 large eggs
1 cup (200 g/7 oz) granulated sugar
4 cups heavy cream ((or milk, half & half, or a combination))
1 tablespoon vanilla extract

Steps:

  • Grease a 9x13-inch pan, and set aside.
  • Cut bread into 2-inch cubes. In a large bowl, mix together bread cubes and pecans. Place the mixture evenly in the pan.
  • In a large bowl, whisk eggs and sugar. Add cream and vanilla extract, and whisk to combine. Pour cream mixture over bread mixture in the pan until completely covered. Gently press down the bread cubes to fully cover with custard. It's best to let the casserole sit for 1 hour, covered, at room temperature, but if you're in a hurry, bake it right away.
  • Preheat oven to 325F/160C. Bake for 40-50 minutes or until custard has set and the top is golden brown. If the top is browning too fast, cover loosely with aluminum foil. Don't over bake or the bread will be dry. Let the pudding cool slightly before serving.
  • Bread pudding can be served warm or cold. It is best the same dat it's made.

¾ cup granulated sugar
4 teaspoons vanilla extract
¼ cup maple syrup*
2 ½ cups heavy cream
2 ½ cups milk
10 cups bread cubes (1-inch) from challah bread ((you need about one loaf for that))
1 cup roughly chopped pecans
1 cup heavy cream
⅓ cup maple syrup*

Steps:

  • Whisk the egg yolks with the sugar and vanilla in a large bowl.
  • Whisk in the maple syrup, the cream and the milk.
  • Add the bread cubes to the custard, cover and let soak for 30 minutes in the fridge.
  • Heat the oven to 325 degrees F.
  • Carefully stir in the pecans, then transfer the soaked bread cubes along with any remaining custard into the baking pan(s).**
  • Bake the bread pudding until no liquid remains in the center when you push down on the surface (about 50 minutes, regardless of which type and size of pan you use). Let cool a bit.
  • Combine cream and maple syrup in a saucepan, bring to a low simmer and stir continuously with a wooden spoon on medium-low heat until thickened (10 to 15 minutes). Let cool, then refrigerate.
  • Serve the bread pudding warm and pour the cold maple cream sauce on it right before serving.***

4 leftover croissants, about 6 cups cut
2 cups half-and-half
2 cups heavy cream
Pinch salt
1 vanilla bean, split lengthwise
6 eggs
1 cup granulated sugar
1/2 cup maple syrup
Serving suggestion: vanilla ice cream

Steps:

  • Preheat oven to 375 degrees F.
  • Butter a 9 by 9-inch baking dish and line it with plastic wrap going up the walls of the pan.
  • Cut up the croissants into 1-inch cubes and place them on a sheet pan. Place in oven and toast for 10 to 15 minutes until slightly crisp, then place them in a bowl.
  • Meanwhile, in a saucepan, heat the half-and-half, cream, salt, and vanilla bean over medium heat, stirring occasionally to make sure the mixture doesn't burn or stick to the bottom of the pan. When the cream mixture reaches a fast simmer (do not let it boil), turn off the heat. Set aside to infuse for 10 minutes.
  • In a large mixing bowl, whisk the eggs and sugar together. Whisking constantly, gradually add the hot cream mixture. Strain over the croissant cubes to remove the vanilla bean, and let soak 15 minutes, gently turning the cubes over once. Empty the mixture into the baking dish. Let soak another 30 minutes, or overnight, in the refrigerator. Heat the oven to 350 degrees F.
  • Place the baking dish in a hot water bath. Bake until just set and very light golden brown on top, about 25 to 30 minutes. Let cool, then chill in the refrigerator 4 hours or overnight. The next day, turn out the pudding and cut round 3-inch plugs from the pudding, place them on a microwave-proof pan and cover with plastic wrap.
  • To serve, warm maple syrup in a saucepan and keep warm. Warm the plugs of bread pudding in the microwave and serve topped with hot maple syrup. Serve with ice cream.

6 cups thin baguette slices (from an 18-inch length)
3 whole large eggs
3 large egg yolks
1 cup sugar plus more for sprinkling
2 tablespoons grated lemon zest
2 tablespoons fresh lemon juice
5 cups heavy cream, divided
1 tablespoon pure maple syrup
Accompaniment: fresh berries

Steps:

  • Preheat oven to 325°F with rack in middle.
  • Put bread in a 3-quart flameproof shallow baking dish (not glass). Whisk in zest, lemon juice, and 4 cups cream (chill remaining cup cream) and pour over bread. Press down with a spatula to help bread soak up some of custard.
  • Whisk together whole eggs, yolks, and sugar in a large bowl until pale and thick, about 1 minute.
  • Lightly sprinkle with sugar and bake in a water bath until custard is barely set and edges of bread are golden, 40 to 45 minutes.
  • Turn on broiler and broil bread pudding 4 to 5 inches from heat until golden-brown in spots, 2 to 3 minutes. Cool to warm, about 30 minutes (pudding will continue to set).
  • Just before serving, beat remaining cup cream with syrup using an electric mixer or a whisk until it just holds soft peaks. Serve pudding, warm or chilled, with cream.

1 1-pound loaf brioche or egg bread, torn into bite-size pieces

Steps:

  • For praline:
  • Spray rimmed baking sheet with nonstick spray. Stir sugar and 1/4 cup water in heavy small saucepan over medium heat until sugar dissolves. Increase heat to high and boil without stirring until mixture turns deep amber color, occasionally swirling pan and brushing down sides with wet pastry brush, about 7 minutes. Stir in nuts. Quickly spread nuts on prepared sheet. Cool. Chop praline into small pieces. (Can be made 1 day ahead. Store in airtight container at room temperature.)
  • For bread pudding:
  • Whisk eggs, cream, sugar, 1 cup maple syrup, and vanilla in large bowl to blend. Add brioche; stir to coat. Let stand at room temperature 1 hour, stirring occasionally.
  • Preheat oven to 375°F. Butter 13x9x2-inch baking dish. Transfer bread mixture to prepared dish. Bake until puffed and golden and toothpick inserted into center comes out clean, about 40 minutes. 1/2 pound white bread, cut or torn into chunks no smaller than 1 inch in diameter

Small grating of nutmeg

Steps:

  • Butter a 10- or 12-inch soufflé or baking dish and put the bread in it. Cut the remaining butter into bits and combine it with all the other ingredients; pour over the bread. Submerge the bread with a weighted plate and turn the oven to 350°F.
  • When the oven is hot, remove the plate (scrape any butter back onto the bread) and bake until the pudding is just set but not dry, 45 to 60 minutes. The top will be crusty and brown. Serve hot, warm, or at room temperature, with or without whipped cream.
