A wonderful, thick dressing - my favorite.

1 cup mayonnaise
½ small onion
2 tablespoons red wine vinegar
1 tablespoon white sugar
¾ teaspoon Italian seasoning
¼ teaspoon garlic powder
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • In a blender or food processor, combine mayonnaise, onion, vinegar, and sugar. Season with Italian seasoning, garlic powder, salt, and pepper. Blend until smooth.

Yield about 3/4 cup dresssing

1/4 cup mayonnaise
2 tablespoons sour cream
2 tablespoons white wine vinegar
2 tablespoons extra-virgin olive oil
1 small clove garlic, minced
1/2 teaspoon dried oregano
Pinch of sugar
Kosher salt and freshly ground pepper
1 tablespoon chopped fresh parsley
1 tablespoon grated parmesan cheese
1 tablespoon grated pecorino romano cheese

Steps:

  • Whisk the mayonnaise, sour cream, vinegar, olive oil, garlic, oregano, sugar, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Stir in the parsley, parmesan and pecorino. Season with more salt and pepper. (The dressing will keep, refrigerated, up to 1 week.)

This is straight out of the Atkins site on line. My sweetie just started the Atkins program and this was an exceptionally full flavored and delicious dressing. The only change made was instead of using a prepared Italian seasoning, I used a teaspoon of oregano and a teaspoon sweet basil.

1/2 oz parmesean cheese, grated
1/4 tsp crushed red pepper flakes
1 large clove garlic, minced
1 Tbsp dried parsley
1/4 tsp each salt and pepper
1/3 c white wine vinegar
1 tsp each dried oregano and sweet basil
1/2 c mayonnaise, not low fat or fat free

Steps:

  • 1. Whik the mayonnaise and vinegar together, add every thing else and whisk to combine.
  • 2. Store tightly covered in refrigerator.
