Steps:
- whisk mayonnaise, vinegar and 2 tbsp Xylitol in a medium bowl. Stir in Parmesan, garlic, Italian seasoning, pepper flakes, salt, pepper and partsley unitl well blended. Let stand for 5 minutes.
- Use immediately or refrigerate in an airtight containter for up to 3 days. Stir before using.

- Whisk the mayonnaise, sour cream, vinegar, olive oil, garlic, oregano, sugar, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Stir in the parsley, parmesan and pecorino. Season with more salt and pepper. (The dressing will keep, refrigerated, up to 1 week.)

This is straight out of the Atkins site on line. My sweetie just started the Atkins program and this was an exceptionally full flavored and delicious dressing. The only change made was instead of using a prepared Italian seasoning, I used a teaspoon of oregano and a teaspoon sweet basil.
