3/4 cup shortening
1 cup packed light brown sugar
1 large egg
1/4 cup molasses
2-1/4 cups all-purpose flour
3 teaspoons ground ginger
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup sugar
FILLING:
3 ounces cream cheese, softened
1/3 cup butter, softened
2 teaspoons lemon extract
2 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Cream shortening and brown sugar until light and fluffy. Beat in egg and molasses. In another bowl, whisk flour, ginger, baking soda, cinnamon and salt; gradually beat into creamed mixture. Refrigerate, covered, overnight., Preheat oven to 375°. Shape dough into 1-in. balls; roll in granulated sugar. Place 2 in. apart on ungreased baking sheets. Flatten with a fork, forming a crisscross pattern. Bake until set (do not overbake), 8-10 minutes. Remove to wire racks to cool., Meanwhile, combine filling ingredients until smooth. Spread over bottoms of half of the cookies; cover with remaining cookies. Refrigerate.

2 cups all-purpose flour
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
2 teaspoons ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
12 tablespoons unsalted butter, room temperature (1 to 1/2 sticks)
1/2 cup firmly packed dark brown sugar
1 cup granulated sugar
1/4 cup molasses
1 large egg
1/2 teaspoon vanilla extract
1/4 cup cream cheese
2 tablespoons unsalted butter, room temperature
1/2 teaspoon vanilla extract
1 teaspoon grated orange zest
1 teaspoon orange juice
1/2 teaspoon ground ginger
1 3/4 cups powdered sugar, plus more as needed

Steps:

  • TO MAKE THE COOKIES:.
  • In a medium bowl, combine flour, baking soda, cinnamon, ginger, cloves, and salt; set aside.
  • In the bowl of an electric mixer, cream butter, brown sugar, and 1/2 cup granulated sugar until fluffy, about 2 minutes.
  • Add molasses, egg, and vanilla, and beat at medium-high until incorporated, about 30 seconds.
  • Reduce speed to low; add flour mixture and mix until well combined.
  • Cover and chill at least 30 minutes or up to 1 day.
  • Preheat oven to 350°F
  • Place remaining 1/2 cup granulated sugar in a shallow bowl.
  • Shape dough into 1-inch balls; roll in sugar to coat.
  • Arrange about 2 inches apart on 2 ungreased baking sheets.
  • Using the bottom of a glass that has been lightly greased, then dipped in sugar, flatten dough into 1/4-inch-thick disks.
  • Bake 13 to 15 minutes, or until firm.
  • Remove from oven and immediately transfer cookies to a cooling rack.
  • TO MAKE THE FILLING:.
  • In a medium bowl, combine all ingredients; mix until smooth, adding more powdered sugar as needed (filling should have consistency of very thick frosting).
  • With a small spatula, frost bottoms of half the cookies (about 1teaspoon filling each); top with remaining cookies (so bottom sides are together) to make sandwich cookies.
  • *The fresh ginger should be peeled unless otherwise noted. To grate fresh ginger, use a microplane grater or a triangular ginger grater, which will catch unwanted ginger fibers in its teeth, leaving behind a juicy, concentrated pulp.

Carrot-ginger soup and tomato bisque are lunchtime hall-of-famers on their own. Here, the best of both worlds is combined into this one creamy and comforting soup.

12 ounces carrots, peeled and cut into 1-inch pieces (2 cups)
1 small sweet potato (6 ounces), peeled and cut into 2-inch pieces (1 cup)
1 can (28 ounces) whole peeled tomatoes, drained (juices reserved for another use)
1 tablespoon minced fresh ginger
6 tablespoons extra-virgin olive oil, divided, plus more for serving
Kosher salt and freshly ground pepper
1/2 white onion, finely chopped (3/4 cup)
1 tablespoon unsalted butter
Crusty bread, for serving

Steps:

  • Preheat oven to 375°F. In a 3-quart baking dish (such as a 9-by-13-inch), toss carrots, sweet potato, tomatoes, and ginger with cup oil. Season with salt and pepper. Roast until liquid has evaporated and vegetables have caramelized slightly, about 1 hour.
  • In a medium saucepan, heat remaining 2 tablespoons oil over medium. Add onion and a pinch of salt and cook, stirring occasionally, until lightly golden, 6 to 7 minutes. Add roasted vegetables with any accumulated juices and 3 cups water. Bring to a boil, then reduce heat to medium-low and simmer 10 minutes.
  • Transfer to a blender and let stand until no longer steaming, about 5 minutes. Add butter and blend until completely smooth. (If too thick for your taste, you can add more water, a few tablespoons at a time, until desired consistency is reached.) Season to taste and serve with crusty bread, topped with more pepper and oil.

½ cup white sugar
1 egg
½ cup molasses
½ cup water
2 cups self-rising flour
½ teaspoon salt
1 teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon ground cinnamon

Steps:

  • Cream the shortening, sugar, egg, molasses and water. Mix in the flour, salt, ginger, nutmeg, cloves and cinnamon. Cover and chill for 1 hour.
  • Preheat oven to 400 degrees F (205 degrees C).
  • Drop teaspoonfuls of dough onto ungreased cookie sheets about 2 inches apart. Bake for about 8 minutes.

1 box Betty Crocker™ white angel food cake mix
1 tablespoon Gold Medal™ all-purpose flour
1 1/2 teaspoons pumpkin pie spice
3/4 cup canned pumpkin (not pumpkin pie mix)
1 cup cold water
1 pint (2 cups) whipping cream
1/4 cup powdered sugar
2 tablespoons finely chopped crystallized ginger

Steps:

  • Move oven rack to lowest position; heat oven to 350°F. In extra-large glass or metal bowl, beat all cake ingredients with electric mixer on low speed 30 seconds. Beat on medium speed 1 minute. Pour into ungreased 10-inch angel food (tube) cake pan.
  • Bake 37 to 47 minutes or until crust is dark golden brown and cracks are dry. Immediately turn pan upside down onto heatproof funnel or glass bottle. Let hang about 2 hours or until cake is completely cool. Loosen cake from side of pan with knife or long metal spatula. Turn cake upside down onto serving plate.
  • In chilled large bowl, beat whipping cream and powdered sugar with electric mixer on high speed until stiff. Fold in ginger. Cut cake horizontally in half to make 2 even layers. Spread half of the filling on bottom layer; replace top of cake. Spread remaining filling on top of cake. Sprinkle with additional pumpkin pie spice if desired.
