1 onion chopped
12 oz lean ground veal or pork
1 tbsp dried oregano
pinch of hot pepper flakes
2 cups chopped broccoli

pinch freshly ground black pepper
1 jar 12 oz. roasted bell peppers, drained and chopped

  • In a large deep skillet, heat oil over medium-high heat. Add onion, veal, oregano and hot pepper flakes. Cook for 5 minutes or until onion is softened and veal is cooked through. Add brocoli, cover and cook for 3 minutes or until bright green and tender-crisp. Add spinach, salt and black pepper. Cook, stirring, for about 2 minutes or until spinach is wilted. remove from heat and add red peppers and olives. Stir to combine. Let cool slightly, then stir in cheese. Meanwhile, on a lightly floured work surface, roll out dough to a 12 x 16 inch rectangle. Place on a large baking sheet lined with parchment paper and reshape. Mount meat mixture in center of dough, leaving a 2 inch border at the short ends and a 3 inch border at the long ends. Cut diagonal strips about 1 inch wide and 3 inches long into the long ends. Crisscross strips over filling to get a braided look. Bake in a 400 F oven for about 20 minutes or until golden brown. Let cool slightly before serving.
