1 (13.5 ounce) can full-fat coconut milk
5 tablespoons Dutch-process cocoa powder
¼ cup white sugar, or less to taste
¼ cup fresh raspberries
¼ teaspoon almond extract

Steps:

  • Combine coconut milk, cocoa powder, sugar, raspberries, and almond extract in a blender. Blend on high until mixture is thick and fluffy like pudding, about 2 minutes.
  • Fill disposable cups with the mixture, smoothing over the tops. Insert sticks.
  • Freeze until solid, at least 3 hours.
  • Run hot water over the bottoms of the cups until the fudge pops slide out easily.

I have always loved peanut butter and when a dear friend of mine made this fudge for me back when I was only 16 years old, I was in heaven. The only chocolate involved is if you choose to drizzle some over the top. This is by far the creamiest fudge I have ever had and there is no way you will be able to eat just one piece!

Number Of Ingredients 7

2 1/2 c sugar
1/2 stick butter
5 oz can(s) evaporated milk
7 1/2 oz jar(s) marshmallow fluff
3/4 tsp salt
9 oz jar(s) peanut butter (i prefer creamy but you can use crunchy)
melted chocolate to drizzle over top if desired

Steps:

  • 1. Grease a 9-inch square baking pan; set aside.
  • 2. In large saucepan combine first 5 ingredients. Stir over low heat until blended.
  • 3. Over medium heat, bring to a full-rolling boil being careful not to mistake escaping air bubbles for boiling.
  • 4. Boil slowly, stirring CONSTANTLY, 5 minutes.
  • 5. Remove from heat, stir in peanut butter until blended.
  • 6. Pour into greased pan and let cool. Hint: When ready to cut try using a knife coated with cooking spray so fudge doesnt stick or tear.
  • 7. drizzle pieces with melted chocolate if desired

3/4 c cocoa powder, unsweetened
1 c evaporated milk
7 1/2 c powdered sugar, sifted
1/2 tsp salt
2 tsp vanilla extract
1 c nuts, chopped

Steps:

  • 1. In a 4-qt saucepan melt butter.
  • 2. Add cocoa and blend well
  • 3. Stir in evaporated milk
  • 4. Stir until well blended.
  • 5. Add vanilla and nuts
  • 6. Pour into 13x9x2 inch pan pre-sprayed with cooking spray.
  • 7. Refrigerate until cool and firm (at least 1 hour)
