CREAMY COUNTRY CHICKEN CASSEROLE

The title says it all! Wonderful comfort food! This recipe was given to me by my Aunt Marlyn in Villa Grove, Illinois! :)

Number Of Ingredients 10

3 cups diced cooked chicken (1 lg. whole stewing chicken, stewed, the meat only)
1 cup diced water chestnut
1 (4 ounce) can mushrooms, drained
1/2 cup celery (chopped or thinly sliced)
1/2 small onion, chopped fine, 1/4 cup
4 hard-boiled eggs, diced
1/2 cup mayonnaise
1 (10 3/4 ounce) can cream of chicken soup
6 tablespoons melted butter
1 1/2 cups crushed Ritz crackers or 1 1/2 cups Chicken In A Biscuit crackers

Steps:

  • Stir/fold all together except butter and crumbs, pour into baking dish.
  • Top with buttered cracker crumbs.
  • Bake at 350• for about 30 minutes.

Number Of Ingredients 16

4 small boneless skinless chicken breast, pounded to about 1/2 inch thick
black pepper
1 pkg saltine crackers, crushed (1 sleeve)
1 c all purpose flour
1 tsp seasoning salt
1 pinch cayenne pepper (optional or adjust to heat level)
1/2 tsp garlic powder (garlic lovers use 1 tsp)
1/2 tsp baking powder
3/4 c milk
2 large eggs
1 1/2 c vegetable oil
CREAMED GRAVY
3-4 c half and half cream (use 4 cups for thinner gravy)
1/4 c all purpose flour
1 tsp seasoning salt or 1/2 tsp white salt
1 tsp black pepper (can reduce if desired)

Steps:

  • 1. Season the chicken breasts with black pepper.
  • 2. In a shallow dish combine crushed cracker crumbs with flour 1 teaspoon seasoned salt, 1/2 teaspoon black pepper, cayenne pepper (if using) and baking powder.
  • 3. In another shallow dish whisk together eggs with 3/4 milk.
  • 4. Dredge the chicken breasts in the cracker mixture then dip in the egg/milk mixture, then dredge AGAIN in the cracker mixture.
  • 5. Pour the oil into a large skillet and heat to 360 degrees F.
  • 6. Fry the breasts in hot oil for about 3-4 minutes on each side or until golden brown; remove to a wire rack and cover lightly with foil.
  • 7. Carefully drain oil but reserve the browned bits in the bottom of the skillet along with a couple tablespoons of the oil.
  • 8. In a bowl mix together 4 cups half and half cream, 1/4 cup flour 1 teaspoon seasoned salt and 1 teaspoon black pepper; whisk until combined, then add to the reserved drippings in the skillet, cook whisking constantly over medium-high heat for about 10 minutes or until thickened.
  • 9. Serve the creamed gravy with the breasts.

Found this recipe on another site and didn't want to lose it. It sounds like a great and easy chciken dish.

8 bone-in chicken breast halves (about 2 1/4 pounds)
3 cups cubed potatoes (about 1 1/2 pounds)
3 cups baby carrots (about 1 pound)
1 medium onion, coarsely chopped
2 (1 1/4 ounce) packages chicken gravy mix (size is a guess)
1 cup water
1 teaspoon thyme leaves, to taste
1/4 teaspoon poultry seasoning or 1/4 teaspoon ground sage
1 teaspoon seasoning salt
1 cup sour cream

Steps:

  • Rinse chicken and pat dry.
  • Place potatoes, carrots and onion in slow cooker amd top with chicken, overlapping slightly.
  • Mix Gravy Mixes, water, thyme, poultry seasoning and Season-All in small bowl and pour over chicken and vegetables.
  • Cover and cook for 8 hours on LOW or 4 hours on HIGH until chicken is cooked through and vegetables are tender.
  • Place chicken and vegetables on platter or in large bowl.
  • Whisk sour cream into drippings in slow cooker; pour over chicken and vegetables.
  • IMPORTANT: For best results, do not remove cover during cooking.

1/2 cup mayo

2 cups thinly sliced onions
1/2 cup thinly sliced carrot
1/2 cup thinly sliced celery
2 tablespoons butter
4 boneless skinless chicken breast halves
1 cup dry white wine
1 1/3 cups chicken broth
1 tablespoon minced fresh parsley
1 teaspoon salt
1 teaspoon sage
1/2 teaspoon thyme
1/4 teaspoon pepper
1/4 teaspoon paprika
3 tablespoons flour
1/2 cup evaporated milk
8 ounces fresh mushrooms, sliced
1 tablespoon butter

Steps:

  • In lg pot, saute onion, carrot, and celery in butter until tender, remove and set aside.
  • In same pot, brown chicken on both sides.
  • Remove chicken and keep warm.
  • To pot, add wine, simmer until reduced by half.
  • Add broth and seasonings.
  • Return chicken and sauted veggies to pot.
  • Simmer for 5-6 minutes, until juices run clear.
  • Remove chicken and place on serving platter.
  • Mix flour and milk; add to pot, bring to a boil.
  • Cook and stir for 2 minutes.
  • In skillet, saute mushrooms in 1 T butter until browned.
  • Spoon mushrooms over chicken.
  • Spoon sauce over chicken and mushrooms.
