Rotisserie chicken and precooked rice (or leftover rice) are combined with easy-prep veggies and baked with a flour-thickened broth that has a little sour cream added for creaminess.

3 tablespoons olive oil, divided
4 cups sliced mixed mushrooms (10 ounces)
2 shallots, minced
Salt and pepper
2 tablespoons all-purpose flour
2 1/4 cups chicken broth
4 cups shredded chicken, from a small rotisserie chicken
2 cups cooked rice (white or brown)
1/2 cup frozen peas
1/2 cup fresh parsley, chopped
1/2 cup reduced-fat sour cream
1 cup fresh breadcrumbs

Steps:

  • Preheat oven to 375 degrees. In a large skillet, heat 1 tablespoon oil over medium. Add mushrooms and shallots and season with salt and pepper. Cook, stirring, until mushrooms are tender and browned, 10 minutes. Add remaining 2 tablespoons oil and the flour. Stir to combine and cook 1 minute.
  • Add chicken broth, whisking constantly, and bring to a boil. Add chicken and rice and return to a simmer. Stir in peas, parsley, and sour cream; season with salt and pepper. Transfer mixture to an 8-inch square baking dish. Top with breadcrumbs.
  • Bake until top is golden brown and mixture is warm throughout, 15 to 20 minutes.

2 cups chicken stock
1 (23 ounce) can condensed cream of chicken soup
1 (23 ounce) can condensed cream of mushroom soup
½ cup butter, melted
salt and ground black pepper to taste
2 ½ cups instant white rice
1 ½ pounds skinless, boneless chicken breast, cubed
2 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a deep 9x13-inch (or larger) baking dish with cooking spray.
  • Mix chicken stock, condensed soups, melted butter, salt, and pepper together in a bowl.
  • Spread rice on the bottom of the prepared baking dish. Top with cubed chicken. Carefully pour stock-soup mixture over top, being careful it doesn't overflow. Sprinkle Cheddar cheese over top to cover.
  • Bake in the preheated oven until chicken is cooked through and cheese is nicely browned, 60 to 75 minutes, depending on size of chicken cubes. Remove from the oven and cool for about 10 minutes before serving.

Steps:

  • Cook wild rice in 1 2/3 cups water as directed on package, drain if necessary.

1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up
2 quarts water
2 teaspoons salt
3 garlic cloves, minced
1/4 teaspoon dried thyme
3 cups uncooked long grain rice
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3 celery ribs, diced
2 medium onions, diced
1 medium carrot, grated

Steps:

  • Place the chicken, water, salt, garlic and thyme in a large kettle or Dutch oven. Cover and cook until chicken is tender, about 1-1/4 hours. , Remove chicken from broth; cool. Remove meat from bones; discard bones and cut meat into chunks. Set aside. Skim fat from broth. 1 1/2 cup(s) wild rice blend
1 small onion, chopped
1 pound(s) white mushrooms, sliced
2 large garlic cloves, chopped
1 package(s) baby spinach, 9-10 oz.
3 tablespoon(s) all purpose flour
3 cup(s) milk, 2%
8 ounce(s) shredded swiss cheese
1/4 teaspoon(s) red pepper
3 cup(s) rotisserie chicken, deboned
2 tablespoon(s) fresh thyme

Steps:

  • Heat oven to 375 degrees. Oil a 9 x 13 casserole dish.
  • Cook the rice according to package directions.
  • Heat 2 tablespoons oil in a large skillet over medium heat. Add the onion and cook under tender 6-8 minutes.
  • Add the mushrooms and cook until tender 6 to 8 minutes. Stir in garlic and thyme and cook for 1 minute. Transfer to a large bowl and toss with the spinach.
  • Wipe out skillet and heat remaining 2 tablespoons oil over medium heat. Sprinkle flour over the oil and cook, stirring for 1 minute.
  • Gradually whisk in the milk. Simmer whisking often until thickened about 5 to 6 minutes.
  • Remove from heat and add cheese, red pepper, salt and pepper; stir until the cheese melts and sauce is smooth.
  • Shred chicken, discarding skin and bones. Add the chicken and rice to the cheese mixture and toss to coat.
  • Fold in the spinach mushroom mixture.
  • Transfer to the prepared casserole dish. Cover with foil and bake until bubbling around the edges 45 to 50 minutes. Let stand for 5 minutes before serving.

2 cups long grain brown rice
4 cups chicken broth
2 (12 ounce) packages frozen broccoli
2 teaspoons extra virgin olive oil
1/2 medium onion, diced
2 garlic cloves, minced
1 lb boneless chicken breast, diced
1 teaspoon salt
2 cups 1% low-fat milk or 2 cups almond milk
3 tablespoons unbleached white flour
1/3 cup organic plain Greek yogurt
1 1/2 cups shredded cheddar cheese

Steps:

  • Spray a 9x13" baking dish with cooking spray and set aside.
  • Bring broth to a boil in a medium pot. Once boiling, add rice. Reduce heat to medium-low and simmer, covered, for 45 minutes. Meanwhile, cook broccoli according to package directions and set aside.

A great way to use up at that leftover chicken or turkey. We always have some leftover chicken after grilling and love to find new ways to make supper. I looked at Food.com and Bisquick.com for some ideas but in the end ended up taking 5 different recipes and making our own to taste. This is one of those hearty stick with you suppers. Serve with a great salad and bread (if you don't make it into a pot pie). We have also made this with different kinds of rice (wild, brown, and white). All very tasty! Enjoy!

1 medium onion, chopped
2 stalks celery, thinly chopped
1 tablespoon butter
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of chicken soup
1 (16 ounce) can chicken stock (or 2 Chicken bullion cubes in 2 c. warm water)
1 teaspoon ground sage
1 teaspoon thyme
4 cups cooked chicken, cubed (your choice of white or dark)
2 cups cooked rice (your choice of wild, brown, or white-I also add a Tbsp of granulated garlic to the water I cook the )
1 lb mixed frozen vegetables (ie. peas, corn, carrots, green beans etc)
2 cups shredded cheddar monterey jack cheese
2 cups Bisquick
1 1/2 cups milk
1/2 teaspoon ground sage
1/2 teaspoon thyme
salt and fresh ground pepper

Steps:

  • In a 5 qt pot:
  • 1) Cook chopped onions and celery in the butter for 10 minutes on medium heat.
  • 2) Preheat oven to 350 degrees.
  • 3) Add both cans of soup, chicken stock,sage, and thyme to pot and mix thoroughly, turn heat down to med-low.
  • 4) Add Chicken, Rice, and Veggies mix thoroughly and heat to a simmer.
  • 5) Using a 9x13 pan (we use glass) (lightly spray if using metal) pour heated filling into pan.
  • 6)Bake covered for 30-40 minutes or until bubbling.
  • 7) Remove from oven and let stand for 5 minutes until serving.
  • **Optional Cheese or Pot Pie Topping**.
  • At step 6 , uncover sprinkle with cheese and return to oven until cheese melts. Continue with step 7 and Enjoy!
  • For Pot Pie Crust.
  • After step 4, while filling is warming to a simmer mix the Bisquick, Milk, Sage and Thyme. After pouring the hot filling into your pan spread the top with your Bisquick mixture. Bake at 350 for 35-40 minutes uncovered or until Bisquick crust has risen and lightly browned. Remove from oven and let sit for 5 min before serving.
  • ***Cooks Note***.
  • Play with the recipe and make it your own. If you and yours like garlic (like we do!) add some to the filling mix and the Bisquick crust mix to your liking. We have also added onion powder, red pepper flakes if you like some heat, mixed the cheese in and still used the Bisquick crust. Really your imagination is your limitation. :o) If you don't have time for baking you could serve this right out of your 5 qt pan once heated through and the frozen veggies hot. We have done this too on those busy, got to get there nights.

1 cup rice (try brown for an added fiber boost)
2 tsp canola (or corn) oil
1 cup chopped onion
2 tsp curry powder
3/4 tsp salt
1/4 cup all-purpose flour
2 cups skim milk
2 cups thawed frozen peas
4 carrots, peeled and chopped in 1/4-inch pieces
1 red bell pepper, cored, seeded and chopped in 1/4-inch pieces
1 tbsp fresh lemon juice
2 cups chopped cooked chicken breast (or a 10-oz package cooked chicken breast)
1/2 cup cilantro, chopped
Vegetable-oil cooking spray

Steps:

  • Cook rice as directed on package. Preheat oven to 400°F. Over medium-high heat, sauté onion, curry, and salt in oil for 3 minutes. Stir in flour. Whisk in milk 1/4 cup at a time. Bring liquid to a boil and immediately reduce the heat and continue cooking, whisking frequently for another 6 minutes or until the sauce thickens. Combine sauce, cooked rice, peas, carrots, red pepper, lemon juice, chicken, and cilantro. Coat an 8" x 8" baking dish with cooking spray; transfer mixture to baking dish. Cover with foil and bake 20 minutes. Remove foil and bake 10 minutes longer. Nutritional analysis per serving: 333 calories, 4 g fat (1 g saturated fat), 49 g carbohydrates, 24 g protein, 7 g fiber

My mother-in-law made this for my husband when he was a kid and it is still his favorite, and now my family requests it as well.

2 lbs boneless skinless chicken breasts, cooked and chopped into bite-sized pieces
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1 (10 ounce) can diced tomatoes and green chilies
1 (10 ounce) can chicken broth
8 ounces Velveeta cheese, shredded
1 (15 ounce) bag nacho cheese flavored tortilla chips, crushed
cooked rice
salt and pepper

Steps:

  • Prepare chicken and rice.
  • Preheat oven to 350°F Mix together soups, tomatoes, and broth.
  • In a large casserole dish, layer half of chicken, soup mixture, and cheese. Repeat.
  • Top with crushed chips.
  • Bake for 45 minutes or until bubbling; serve over rice.
  • NOTE: The chips get pretty dark--if you are afraid they will burn cover the casserole.

I adapted from another recipe. The second number in the ingredients is if you prefer a stronger flavor in your dishes. I did this since ea. area of the country has their own preferences. If you're short on time, cook in skillet on low until bubbly, add cheese until melted. It tastes better the next day and freezes well. Serve with colorful vegetables or a green salad.

3 cups rice, prepared
1 lb ground turkey (or chicken)
1 tablespoon olive oil (DIVIDED)
1 (10 3/4 ounce) can mushroom soup (use chicken if you don't like mushrooms)
1 cup sour cream
1/2 cup mayonnaise
1/4-1/2 teaspoon ground pepper
1 -2 tablespoon dried parsley
2 -4 tablespoons Worcestershire sauce
4 -8 dashes hot sauce
1/4 cup sherry wine or 1/4 cup red wine
1/2-1 cup onion, chopped
1/4-1/2 cup green bell peppers or 1/4-1/2 cup red bell pepper, chopped
1 -2 teaspoon garlic, minced
1 -1 1/2 cup cheddar cheese, grated

Steps:

  • Prepare rice as instructed on package.
  • In skillet, brown turkey in 1/2 tablespoon of olive oil, drizzling it evenly over turkey. Your meat shouldn't be chunky (small pieces). Place in large mixing bowl.
  • In same skillet, add remaining olive oil, sherry and sauté onion, green pepper, and garlic until tender.
  • In sm-medium bowl, mix together sour cream, mayo, ground pepper, parsley, Worcestershire sauce and hot sauce.
  • Combine soup mixture into large bowl with meat mixture and mix well.
  • Stir rice into meat mixture until covered well (don't overwork the rice - prevents mushy results).
  • Spray oil over an oblong casserole dish and pour mixture evenly into dish.
  • Sprinkle grated cheese evenly over top of mixture.
  • Bake COVERED for 40-45 minutes until bubbly.
  • Before adding cheese, if you think your mixture looks a little dry, evenly pour 3-6 tablespoons of cream or milk over the top. Fork a few tiny openings for cream to work its way down into casserole dish.

This Lemon Chicken and Rice Casserole recipe is the perfect easy one pot meal full of citrus and herb essence, flavorful juicy chicken thighs and creamy tender rice!

4 bone in skin on chicken thighs (we used 3 large ones here but 4 smaller ones are great as well. )
1/2 cup all purpose flour
1/4 cup grated parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1/2 tsp lemon zest (separated)
kosher salt and ground black pepper
3 tbsp extra virgin olive oil
10.2 oz cream of chicken soup
1 cup chicken stock
3/4 cup long grain white rice
2 cloves of garlic (grated or minced)
1 lemon (sliced into rounds)
thinly sliced basil (for garnish, optional)

Steps:

  • Preheat the oven to 375 degrees. Grease an 11 x 8 baking dish (or one of similar size).
  • In a large shallow bowl, combine flour with the parmesan, garlic powder, onion powder, and ½ of the lemon zest. Season generously with salt and pepper and mix thoroughly with a fork. Dredge each piece of chicken on all sides with flour mixture. Set aside.
  • In a large skillet over medium-high heat, heat olive oil until shimmering but not smoking. Add chicken skin side down, and sear until golden, 6 minutes. Flip and cook until the opposite side is golden, around 6 minutes more. Remove from the pan and set aside.
  • Stir together the soup, water, rice, garlic, and remaining lemon zest in your prepared baking dish. Place the chicken on the rice mixture and layer lemon slices over the top of each piece. Cover the baking dish.
  • Bake for 30-40 minutes or until the chicken is done and the rice is tender. To develop a deeper color, uncover the dish for the last 5-10 minutes of baking. Sprinkle on the sliced basil. Let stand for 10 minutes. Stir the rice and season to taste before serving.

1/4 cup milk
1 tsp. dried Italian seasoning
1/2 tsp. garlic powder
2 cups CLASSICO Marinara with Plum Tomatoes & Olive Oil Pasta Sauce
2-1/2 cups cooked whole grain brown rice
2 cups chopped cooked chicken
1 cup frozen cut green beans
1 Tbsp. chopped fresh basil
1 cup bread crumbs
1 Tbsp. butter, melted
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 350°F.
  • Mix cream cheese spread, milk and seasonings in large bowl until blended. Stir in marinara sauce. Add rice, chicken, green beans and basil; mix well.
  • Spoon into 2.5-qt. casserole dish, mine is 4x13x9, sprayed with non-stick cooking spray; cover.
  • Bake 30 minutes. Uncover and stir. Combine remaining ingredients; sprinkle over casserole. Bake 20-25 minutes or until casserole is heated through and topping is golden brown. Let stand 5 minutes before serving.
