6 ounces NO YOLKS® Extra Broad Noodles
1 tablespoon olive oil
1 (8 ounce) package sliced fresh mushrooms
2 ribs celery, chopped
3 medium (blank)s medium carrots, peeled and sliced
1 small onion, chopped
1 teaspoon garlic powder
1 quart chicken broth
1 sprig fresh thyme
1 (8 ounce) package light cream cheese, softened
½ cup Parmesan cheese, grated
1 ½ tablespoons all-purpose flour
2 breast half, bone and skin removed (blank)s cooked chicken breasts, chopped
1 cup panko bread crumbs
1 tablespoon butter, melted
1 pinch Salt and pepper, to taste

Steps:

  • Combine topping ingredients and set aside.
  • Preheat oven to 400 degrees F. Add olive oil to a 7-quart stock pot, and saute mushrooms, celery, carrots, onions and garlic powder for 3-4 minutes over medium heat. Add chicken broth and thyme sprig and bring to a boil, stirring occasionally. Add cream cheese, Parmesan and noodles. Stir until well blended. Sprinkle flour over top of mixture. Stir and cook for 1-2 minutes, or until mixture begins to thicken. Fold in chicken.
  • Pour into a 3-quart casserole dish. Sprinkle on reserved topping mixture. Bake uncovered 15 minutes. Remove from oven and let stand 10 minutes.

This will also work well using cooked cubed chicken, make, the complete casserole may be assembled and refrigerated up to 24 hours in advance, do not add in any extra salt to this recipe as the canned soups already have enough sodium content, low-sodium soups may be used if desired.

8 ounces dry medium egg noodles
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 (10 3/4 ounce) can cream of chicken soup, undiluted
1 cup reduced-fat sour cream
2 tablespoons melted butter
1/2 teaspoon garlic powder (can use more)
1 pinch cayenne pepper (optional or adjust to taste)
1/2 cup shredded cheddar cheese
1 (10 ounce) can sliced mushrooms, well drained (squeeze out excess moisture with hands)
1 small onion, finely chopped (you may omit if desired)
1 celery rib, finely diced
4 cups cooked cubed turkey (or chicken, can use more or less)
1/4 teaspoon fresh ground black pepper (or to taste)
1 1/2 cups crushed unsalted butter-flavored crackers (such as Ritz crackers)
1/4 cup melted butter

Steps:

  • Grease a 2-quart casserole dish (can use an 11 x 7-inch baking pan).
  • In a bowl combine both soups with sour cream, melted butter, garlic powder and cayenne pepper; whisk until smooth.
  • Mix in cheddar cheese, mushrooms, onion, celery, cubed turkey and black pepper; set aside.
  • Cook the egg noodles in boiling water until tender; drain transfer to the bowl with with soup mixture; toss to combine.
  • Transfer/spread to the prepared baking dish (at this point you may cover and refrigerate for up to 24 hours, remove from refrigerator 30 minutes prior to baking).
  • In a small bowl combine the crushed cracker crumbs with melted butter, then sprinkle evenly on top of the casserole.
  • Bake in a preheated 350 degree F oven for 30 minutes or until bubbly and browned on top.

12 ounces egg noodles, dumpling or ribbon-style
1/4 cup onion, chopped
2 tablespoons butter (or margarine)
8 ounces chicken breasts, cooked and cut into 1 inch cubes
1 cup frozen broccoli
1 cup frozen mixed vegetables
1 (10 1/2 ounce) can condensed cream of broccoli soup
1 (10 1/2 ounce) can condensed cream of chicken soup
1/2 cup milk
1/4 teaspoon dried thyme
1/2 teaspoon salt
1 teaspoon ground black pepper
2 cups cheddar cheese, shredded

Steps:

  • Cook egg noodles according to package directions. Drain and set aside.
  • Heat butter in medium saucepan. Saute onions until transparent, approximately 4-5 minutes.
  • Add chicken, vegetables, soups, milk, and seasonings. Cook over medium heat until broccoli is tender.
  • Add cooked egg noodles and mix until thoroughly blended.
  • Spread into a greased 9 x 12 baking dish. Cover.
  • Bake at 350 degrees F for 20 minutes.
  • Top with cheese and bake an additional 10 minutes.

1pound skinless boneless chicken breast halves
1 1/2 cups (about) water
2 large garlic cloves, minced
1 bay leaf
1/3 cup all purpose flour
2 tablespoons cornstarch
2 cups low-fat (1%) milk
1 teaspoon dried tarragon
1 teaspoon salt
1/8 teaspoon ground nutmeg
1/4 cup dry white wine
1 10-ounce package frozen spinach, thawed, squeezed dry
8 ounces spinach fettuccine
8 ounces mushrooms, sliced
1 1/2 teaspoons olive oil
3/4 cup coarse fresh breadcrumbs from French bread
1/4 cup freshly grated Parmesan cheese

Steps:

  • Combine chicken, 1 cup water, garlic and bay leaf in large saucepan. Cover and simmer just until chicken is cooked through, turning once, about 15 minutes. Transfer chicken to plate; cool. Shred chicken. Pour cooking liquid into measuring cup, adding more water to measure 1 cup if necessary. Reserve cooking liquid.
  • Whisk flour and cornstarch in heavy large saucepan. Add 1 cup milk; whisk until smooth. Stir in 1 cup milk, tarragon, salt, nutmeg and reserved 1 cup chicken cooking liquid. Stir over medium heat until mixture thickens and boils, about 5 minutes. Add wine; stir until mixture is very thick, about 2 minutes longer. Remove from heat. Stir in shredded chicken and spinach. (Can be made 1 day ahead. Cover and chill. Rewarm over medium-low heat, stirring frequently, before continuing.)
  • Preheat oven to 400°F. Oil 11 x 7 x 2-inch glass baking dish. Cook fettuccine in large pot of boiling salted water until just tender but still firm to bite. Drain. Return to pot. Add mushrooms and chicken mixture; toss. Season with salt and pepper. Transfer to prepared baking dish.
  • Heat oil in small nonstick skillet over medium-high heat. Add breadcrumbs; stir 1 minute. Sprinkle over casserole. Bake until casserole bubbles and breadcrumbs are golden, about 20 minutes. Let stand 10 minutes. Sprinkle with Parmesan.
