Just sorta came up with this tonight when I needed something fairly quick and healthy. It's creamy, but it only uses a touch of milk. Kind of like a skillet chicken stew. Guiltless comfort food, if you ask me. Either way, no complaints from my family! :D

Number Of Ingredients 10

2 chicken breasts, cut into 1-inch pieces
2 medium sized carrots, diced
1 small onion, chopped
2 teaspoons oil
1 1/2 cups chicken stock
2 1/2 teaspoons cornstarch
1/4 cup milk
1/2 cup green peas
1/2 cup corn
salt and pepper

Steps:

  • Sautée onions and carrots in oil over medium heat for about 5 minutes.
  • Add chicken and let it begin to brown.
  • Add chicken stock, cover, turn heat to low and let simmer about 10 minutes.
  • Mix corn starch with milk to make slurry, then bring heat back up to medium on skillet, adding the slurry.
  • Let thicken for 1-2 minutes, add peas and corn, and let cook another 2 minutes or so, salt and pepper to your liking.
  • Enjoy!

This recipe came to me this morning as I was preparing a meal for my friends on my group for our meet today. The measurements for this recipe was made to feed 20 or more people, feel free to reduce it to feed your family. It is fantastic, everyone wanted the recipe. I was so glad I wrote it down. I hope you try it because you will love it too.

Number Of Ingredients 14

2 to 3 cup(s) roasted or rotisserie chicken
2 cup(s) bacon
2 cup(s) cubed ham
3 cup(s) cheddar cheese divided
1 can(s) cream of chicken soup
1 can(s) cream of bacon soup
1 can(s) chicken broth
1 cup(s) sour cream
8 ounce(s) cream cheese
1 large bag of southern hash browns (cubed potatoes)
1 small bag of frozen peas and carrots
1 cup(s) milk
1 stick(s) butter melted
2 - sleeves of ritz crackers crushed in a ziploc bag

Steps:

  • Cook chicken in oven seasoned with rotisserie seasoning or use store bought rotisserie chicken, dice it up to make 3 cups
  • Cook bacon crisp and crumble it up
  • Canned cooked ham cut in cubes
  • Mix together cream cheese,sour cream, cream of chicken, cream of bacon, chicken broth,milk,2 cups of cheese,and the cooked chicken,peas and carrots and set aside
  • Spray 9x13 baking dish with cooking spray or grease with butter
  • Pour potatoes in the bottom of the dish, top with cubed ham, then pour mixture over the ham and potatoes
  • Crush 2 sleeves of Ritz crackers in a Ziploc bag, melt the butter and pour into the crackers, put all the crumbled bacon in also, close the bag and toss it to mix it up and make sure all the crumbs are wet with butter.
  • Place the dish in the oven for 20 minutes, remove from oven and sprinkle the cracker and bacon mixture along with 1 cup of cheese on top, place back in the oven for 35 to 40 minutes until it's bubbly all over and browned on top.
  • Remove from oven and allow to settle for 7 to 8 minutes before serving.
