4 boneless, skinless chicken breasts
½ cup grated Asiago cheese
½ cup light mayonnaise
¼ cup low-fat plain Greek yogurt
¼ cup dry white wine
1 ½ teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 pinch ground nutmeg
freshly ground black pepper to taste
1 tablespoon aged balsamic vinegar, or to taste
2 tablespoons grated Asiago cheese, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Place chicken breasts in the prepared baking dish. Whisk together Asiago cheese, mayonnaise, Greek yogurt, wine, oregano, garlic powder, onion powder, and nutmeg in a small bowl. Pour evenly over chicken breasts.
  • Bake, uncovered, in the preheated oven until chicken is no longer pink in the center and the juices run clear, 40 to 50 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Top with black pepper, balsamic vinegar, and additional Asiago cheese just before serving.

2 pounds medium leeks (white and pale green parts only)
4 boneless skinless chicken breast halves (1 1/2 pounds total)
1/2 tablespoon vegetable oil
2 1/2 tablespoons unsalted butter
1/3 cup dry white wine
1/3 cup chicken broth
1/3 cup heavy cream

Steps:

  • Halve leeks lengthwise, then cut crosswise into 1-inch pieces.
  • Pat chicken dry and season with salt and pepper. Heat oil and 1/2 tablespoon butter in a 10-inch nonstick skillet over moderately high heat until foam subsides, then brown chicken on both sides, about 4 minutes total. Transfer to a plate.
  • Add wine to skillet and deglaze by boiling over high heat, stirring and scraping up brown bits, until reduced to about 2 tablespoons, 1 to 2 minutes. Add leeks and remaining 2 tablespoons butter and salt and pepper to taste, then simmer over moderately low heat, covered, stirring occasionally, until leeks are wilted, about 10 minutes. Stir in broth. Top leeks with chicken breasts and juices from plate, then gently simmer over low heat, covered, until leeks are tender and chicken is just cooked through, about 8 minutes .
  • Transfer chicken breasts to a plate. Add cream to skillet and boil over high heat, stirring occasionally, until thickened slightly, 1 to 2 minutes. Add salt and pepper to taste.
  • Serve chicken on top of leeks.

It doesn't get much easier than this! If desired you could add a can of whole or sliced mushrooms to the recipe. I like to add in 1/4 cup grated parmesan cheese to the soup mixture, also if desired you can sprinkle grated cheddar cheese on top the last 5 minutes of baking, and brown the breasts in butter firstly and reduce cooking time slighty.

1 teaspoon hot sauce, such as Tabasco (eyeball it)
6 tablespoons extra-virgin olive oil (EVOO)

4 6-to 8-ounce boneless, skinless chicken breast halves
4 tablespoons mayonnaise, plain yogurt, or sour cream
3 tablespoons capers, drained, coarsely chopped
2 tablespoons red wine vinegar (eyeball it)
3 tablespoons fresh dill, chopped
1 tablespoon Dijon mustard
1 pint yellow cherry or grape tomatoes, halved
1 large head of radicchio, thinly sliced
6 scallions, thinly sliced

  • Preheat the oven to 400°F.
  • In a shallow dish, combine the garlic, parsley, hot sauce, 3 tablespoons of the EVOO, salt, and pepper. Add the chicken breasts and coat in the mixture; marinate for 5 minutes.
  • While the chicken is marinating, in a bowl combine the mayonnaise with the capers, red wine vinegar, dill, mustard, and some pepper. In a slow, steady stream, whisk in the remaining 3 tablespoons of the EVOO.

I made this dish with Hatch chiles that I had in my freezer and some onions and mushrooms that needed to be used. I served it over a bed of cilantro-lime rice. I shredded my chicken breast and mixed it in with the rice. Hubby preferred his chicken breast whole. We're going through a stay-at-home order due to the Coronavirus pandemic and this was a great meal to make with items that I already had.

1 pound skinless, boneless chicken breast halves
1 tablespoon olive oil
1 medium onion, thinly sliced
1 (8 ounce) package sliced fresh mushrooms
3 cloves garlic, crushed

1 teaspoon salt

4 Hatch chile peppers, halved and seeded

  • Spray a slow cooker with nonstick cooking spray. Place chicken breasts in the slow cooker.
  • Heat olive oil in a skillet until shimmering. Add onion; cook and stir for 5 minutes. Add mushrooms and cook until onion is translucent and mushrooms are soft, 2 to 4 minutes. Add garlic and cook for 1 minute more.
  • Transfer the onion mixture to the slow cooker. Add chicken broth, taco seasoning, salt, and pepper. Cook on High for 1 hour 30 minutes.
  • Meanwhile, set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place chile peppers cut-side down on baking sheet.
  • Broil the chile peppers until skin is heavily blistered and turning black, about 4 minutes per side.
  • Transfer the chile peppers to a bowl and cover tightly with plastic wrap. Allow to steam as they cool, about 15 minutes. Remove the skins and chop the flesh into 1-inch pieces.

1 and 1/2 lb skinless, boneless chicken breasts
2 Tbsp butter
salt and pepper to taste
1/4 c finely chopped shallots
1 Tbsp curry powder, or more to taste
1/2 c dry white wine
1 and 1/4 c heavy cream

Steps:

  • 1. Cut chicken breasts into thin strips or small chunks. Melt butter in a skillet and when it is hot but not brown, add the chicken. Season with salt and pepper.
  • 2. Cook chicken, stirring, until it loses its 'raw' look, about 2 minutes. Sprinkle chicken with the shallots and curry powder; stir to blend. Cook for 2 minutes or so, til chicken is done. With the small/thin pieces it will not take long. Do not overcook. Transfer all to a bowl.
  • 3. Add wine to the skillet and cook over high heat for about 3 minutes, or until it is reduced by about half. Add the cream to the skillet, along with any juices that have accumulated in the bowl holding chicken,and cook, stirring, over medium-high heat for 4 minutes. Add chicken and stir to blend; heat through.

1/4 cup all-purpose flour, plus

1 tablespoon Dijon mustard

Steps:

  • Place chicken between sheets of plastic wrap and pound with a meat mallet or heavy skillet until flattened. Season both sides with ½ teaspoon salt. Place ¼ cup flour in a small glass baking dish and drag the chicken in it. Discard excess flour.

hot cooked linguine or cooked fettuccine

1 (11 ounce) can low-fat cream of chicken soup

Steps:

  • Arrange chicken in a 13x9x2 inch baking dish that has been lightly sprayed with Pam.

24 square slices of thin-sliced lunch meat such as pastrami or ham
12 slices bacon (thin-sliced)
1 cup lowfat or non-fat sour cream
1 can Campbell's Cream of Mushroom Soup (Healthy Choices works as well as original recipe)

Steps:

  • Remove skin and bones, and separate each chicken breast into 3 servings. Pound lightly, if desired, to flatten thicker parts. Arrange two slices of lunch meat so they overlap slightly, and place a chicken portion on top. Roll up making the portion narrow and fat, rather than wide and thin. Lay out a slice of bacon, and roll the roll over it, to wrap it about 2 times. Lay in small baking pan with end of bacon on the bottom (no need to secure the ends with toothpicks). Repeat with remaining meats, and pop into preheated 350 degree oven for 30 minutes. Skim off fat from pan. Mix sour cream and mushroom soup, and spooon over the top, covering completely. Bake another 30 minutes, until nicely browned and bubbling in center of pan.

1/2 c butter
2 Tbsp finely chopped onion
1/2 c white wine, dry

1 c chicken broth
3/4 c heavy cream

Steps:

  • 1. Season chicken breasts with salt and pepper; dredge in flour. Set aside the remaining flour.
  • 2. In a large skillet, heat 3 tablespoons of butter over medium heat. Brown chicken on both sides. Remove chicken and keep warm.
  • 3. Add onion to skillet and saute for 1 minute.
  • 4. Add wine to skillet; increase heat to high and cook until liquid is almost evaporated, stirring to loosen browned bits on bottom of skillet.
  • 5. Reduce heat. Add reserved flour, making a thick paste. Add tarragon and chicken broth. Return chicken to skillet. Cover and cook until tender, about 20 to 25 minutes.

  • Mix all stuffing ingredients and set aside.
  • Lightly spray casserole dish with cooking oil.
  • Prepare chicken by placing a slit down the center of each breast and spooning approximately 1/4 of the stuffing mixture into each breast.

  • WINE SAUCE.
  • During the last 10 minutes prepare wine sauce.
  • Heat oil in saucepan and saute diced shallot until soft.
  • Add 1/2 cup of white wine and heat over medium heat 3-4 minutes.
  • Slowly add heavy cream, dijon mustard and salt and pepper to taste.
  • Bring to a boil and simmer.
  • To thicken combine 1 tbsp flour with some water until it forms a paste.
  • Add a small amount of the heated wine sauce into the paste and then slowly add this mixture to the entire amount of wine sauce until thickened. Heat through and serve over chicken. Garnish with parsley and serve!
  • *Basil may also taste nice in the wine sauce -- I am going to try next time.

6 boneless chicken breasts
8 thin slices Swiss cheese
2 cans cream of chicken soup
3 cups crushed seasoned croutons
3/4 cup melted butter

Steps:

  • Place chicken breasts in bottom of baking dish then arrange layer of Swiss cheese on top. Spread cream of chicken soup on top of Swiss cheese. Sprinkle crushed croutons evenly on top of soup layer. Pour melted butter over croutons. Bake at 350 degrees for 50 to 55 minutes.

2 tablespoons butter
1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breast halves
1 tablespoon flour
1 cup fat-free half-and-half
2 teaspoons garlic, minced
1 large tomatoes, coarsely chopped
1/4 cup fresh basil, coarsely chopped
basil leaves (to garnish)

Steps:

  • In a large skillet, melt butter over medium high heat until sizzling. Stir in salt and pepper.
  • Add chicken; cook 8 to 12 minutes or until juices are clear.
  • Remove from skillet; set aside. Reduce heat to medium.
  • Stir flour into skillet. Add half and half and garlic, stirring constantly l minute or until slightly thickened.
  • Stir tomatoes and basil. Return chicken to skillet. Cook 4 or 5 minutes or until heated through.
  • Garnish with basil leaves.

1 cup water

1/2 cup nonfat milk
1 teaspoon paprika
2 tablespoons KRAFT 100% Grated Parmesan Cheese

Steps:

  • Preheat oven to 400 degrees F. Combine stuffing mix and water in large bowl. Let stand for 5 minutes.
  • Meanwhile, pound chicken to 1/4 inch thickness using a meat mallet. Add broccoli to stuffing; mix lightly.
  • Spread the mix evenly onto chicken breasts to within 1/2 inch of outer edges. Roll up each breast from one of the short ends, enclosing the stuffing mixture.
  • Place chicken, seam-sides down, in 13x9 inch baking dish.

½ cup Italian-style salad dressing
⅛ teaspoon cayenne pepper
2 skinless, boneless chicken breast halves

  • In a large glass dish, mix together the creamy salad dressing, Italian-style salad dressing and cayenne pepper. Add chicken breasts and toss to coat. Cover and refrigerate. Marinate for 1 to 2 hours.
