Easy Cheesy Potatoes image

These potatoes are loaded with creamy goodness like sour cream and cheddar cheese and make a perfect side dish!

Number Of Ingredients 6

3 pounds diced potatoes (or 30 ounces country style hash browns)
¼ cup butter (melted)
1 cup sour cream
1 cup cream of chicken soup (or cream of cheddar)
¼ cup green onion (chopped)
2 cup cheddar cheese (divided)

Steps:

  • Preheat oven to 375˚F and grease a 9x13 inch baking dish.
  • If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
  • Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
  • Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
  • Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

3 russet potatoes, cooked and cubed
½ cup sour cream
¼ cup green onion, diced
¼ cup bacon, diced
1 teaspoon salt
½ teaspoon pepper
1 block cheddar cheese, cut into strips
oil, for frying
salt, to season
flour
egg
panko breadcrumb

Steps:

  • In a large bowl, combine cooked potatoes, sour cream, green onions, bacon, salt, and pepper.
  • Mash the ingredients together until most of the potatoes are mashed. (Some chunks are good!)
  • Cut cheese into ¼-inch (6 ½ mm) strips. Take a spoonful of potatoes and make a ball.
  • Place the cheese strip in the middle and wrap the potato around the cheese until it is evenly covered.
  • Dredge the sticks in flour, egg, and panko.
  • Option 1 - If you're going to bake, Preheat oven to 400°F (200°C).
  • Option 1 - To Bake: Transfer dredged sticks onto baking sheet and drizzle olive oil and salt. Option 2 - Fry in oil that is heated at 350°F (180°C) for 3 minutes or until golden brown.
  • Option 1 - Bake for 15 minutes or until cheese is completely melted in the middle and the outside is a light golden brown.
  • Option 2 - Transfer from oil to drying rack and season with salt.
  • Let it cool for a few minutes as they will be HOT.

1/4 cup all-purpose flour
1/2 teaspoon salt
1-1/2 cups 2% milk
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/2 pound process cheese (Velveeta), cubed
5 to 6 large baking potatoes, peeled
1 cup chopped onion
Paprika

Steps:

  • In a small saucepan, combine flour and salt; gradually whisk in milk until smooth. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; whisk in soup and cheese until smooth. Set aside. , Cut potatoes into 4x1/2x1/2-in. sticks; place in a greased 13x9-in. baking dish. Sprinkle with onion. Top with cheese sauce. Bake, uncovered, at 350° for 55-60 minutes or until potatoes are tender. Sprinkle with paprika.

This casserole-like dish reminds me of french fries smothered in cheese sauce. Yummy comfort food!! I have added crumbled bacon to this dish as well, and it is awesome! If you have a french fry cutter, use it to cut the potatoes to make prep super-easy.

4 large russet potatoes, scrubbed
1/4 cup unsalted butter
1/2 cup sour cream
1/2 cup shredded extra-sharp cheddar cheese, divided
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Set the potatoes directly on the rack in the center of the oven and bake until easily pierced with a fork, about 1 hour. Remove from the oven and turn the heat down to 400 degrees F. Cut a slit in the top of the potatoes and carefully scoop out the flesh into a bowl, leaving the shells intact. Mash the potato lightly with a fork. Add the butter, sour cream, and 1/3 cup of the cheese, and salt and pepper to taste. Refill the shells with the potato mixture mounding it slightly.
