EASY CREAMY SCALLOPED POTATOES (CHEESE OPTIONAL)
I grew up with the traditional 'layered potato and onion' version of scalloped potatoes. My husband doesn't care for onions, so I had to find another way to enjoy this dish. I'm not willing to give up the flavour you get by using onions, so I finely chop them before cooking. That way they disappear from site but not from taste. This has become our standard recipe that has received lots of compliments, and is always requested when the kids come to visit. Especially good with meatloaf. You can vary the taste by adding different spices. I've even added peas to the assembly. Also, feel free to increase the amount of cheese. NOTE: Your sauce will thicken much quicker if you use warmed milk. Microwave it for 1-1/2 minutes on High.

- Preheat oven to 350*. Spray a casserole dish with cooking spray. The size needed will depend on how large your potatoes are.
- Peel and slice potatoes 1/4" thick. Gently boil until almost cooked. Set aside to drain. Avoid breaking slices.
- In the same pot, melt butter on medium/high heat. Add onion and saute until tender but not brown. Sprinkle with flour and allow the flour to be absorbed by the hot butter. You may need to reduce the heat to avoid scorching.
- Slowly add the warm milk, stirring constantly until the mixture thickens. Add salt, pepper, and the 1/2 cup of cheese, if using. Remove from heat and stir until the cheese has melted.
- Pour a small amount of the sauce in the prepared casserole dish. Top with half of the potato slices. Add half of the remaining sauce, followed by the rest of the potatoes and then the last of the sauce. Sprinkle with the 1/4 cup cheese, if using, and sprinkle with chives.
- Bake for 30 minutes or until cheese has melted and is turning a golden brown.

- Preheat the oven to 425 degrees F.
- To make the potatoes: In a medium saucepan combine the vermouth, water, parsley, tarragon, lemon zest, and salt. Set aside.
- Cut the potatoes in half horizontally. Slice a small portion off of the rounded ends-- so the potatoes stand up without rolling around -- and discard. Add the halved potatoes to the saucepan. Bring to a boil over medium heat; adjust the heat to maintain a gentle simmer and cook until just fork tender, about 8 minutes. Set the potatoes aside to cool in the liquid for 5 minutes.
- Drain the potatoes, reserving 2 teaspoons of the cooking liquid. Discard the herbs and lemon zest. With a small spoon or melon baller, scoop out a little of each potato, to make a little "bowl" for the cheese.
- Toss the potatoes with the oil in a small bowl, and stand them up on a baking sheet. Bake until lightly browned, about 15 minutes.
- Meanwhile, make the filling: In a medium bowl, cream the cheese with the creme fraiche and the 2 teaspoons of reserved cooking liquid. Fold in the minced parsley, tarragon, chives, and chervil. Season with pepper, to taste.
- Remove the potatoes from the oven and let cool slightly. While the potatoes are still warm, spoon a dollop of the cheese mixture into each potato. Set the potatoes on a platter and top off with the chive segments to garnish. Serve.
CREAMY, RICH RANCH POTATOES WITH CHEESE
Many versions of this...but this is how I make them! Being a meat and potaoes kind of girl, these are just one of my all-time favorite potatoes! The original version just wasn't very creamy.

- In large bowl, blend soups and cream cheese.
- Microwave til creamy and cheese is melted, stirring occasionally.
- Stir in well, the dressing mix, then fold in 1 cup (half) the shredded cheese, then the potatoes.
- Fold well til all potatoes are coated.
- Pour/spoon into lightly greased 13x9 glass baking dish, mashing down a little, and spreading in pan evenly.
- Sprinkle top with rest of shredded cheese.
- COVER and bake at 350º for 50-55 minutes.
- Uncover, top with onions.
- Bake UNCOVERED for another 5 minutes or til onions are lightly browned.
