CREAMY PARSLEY, BASIL & PECAN PESTO image

4 cloves garlic
3/4 cup pecans
5 Tbsp chopped fresh flat leaf parsley
6 Tbsp chopped fresh basil leaves
6 Tbsp extra virgin olive oil
1/2 cup mozzarella cheese
sea salt to taste
1 Tbsp water
3/4 cup cream
1/4 red bell pepper, finely diced, for grnish
sprinkle of sweet paprika, for garnish
Parmesan cheese for garnish
chopped fresh flat-leaf parsley for garnish

Steps:

  • Cook the pasta of your choice (about 5 oz/150 g per person) according to package directions. In a food processor, process the pesto ingr. in the order listed, starting with hard ingr. such as nuts and garlic, then adding herbs and greens, then oil and remaining ingredients. Scrape down the sides with a spatula and continue processing until you have a smooth paste. Transfer the pesto to a large nonstick pan and heat over low for 1 minute. Toss in the cooked, drained pasta and stir well, until the pesto and pasta are heated through. Garnish as desired and serve.

My friend's father made these especially for me at a neighborhood BBQ. It can be adapted for meat eaters if necessary.

1 large tortilla
2 tablespoons basil pesto
3 tablespoons fat free cream cheese
3 slices tomatoes
6 slices cucumbers
1/4 cup alfalfa sprout
2 tablespoons shredded cheddar cheese
2 tablespoons shredded carrots
4 slices deli turkey (optional)

Steps:

  • Warm tortilla in the microwave for 20 seconds.
  • Spread pesto and cream cheese onto tortilla.
  • Sprinkle over vegetables (thinly sliced).
  • Roll up wrap tight, secure with tooth picks.
  • Cut into slices and serve as hor's derves or eat it all by yourself!
  • Note: Easy to adapt to your own liking.
