CREAMY ASPARAGUS AND PEA PASTA

Number Of Ingredients 10

2 slice(s) pancetta or bacon
2 clove(s) garlic minced
2 cup(s) chicken stock
1/2 cup(s) white wine
8 ounce(s) mascarpone cheese or cream cheese
1 1/2 cup(s) asparagus cut in 1 inch pieces
1 cup(s) frozen peas
1 teaspoon(s) salt and pepper
2 tablespoon(s) parsley chopped
8 ounce(s) curly pasta

Steps:

  • Place pancetta in saucepan and cook until it starts to crisp up. Add garlic and saute 30 seconds. Add wine and let reduce to half. Add the chicken stock. Cook for 5 minutes. Add mascarpone cheese and cook until melted and sauce is thickened.
  • Meanwhile cook pasta in boiling salted water. Add asparagus and peas in the last 5 minutes of cooking. Drain and add the sauce and season with salt and pepper. Add parsley and serve/

2 - thin slices pancetta or bacon
1 large garlic clove, thinly sliced
2/3 cup(s) unsalted chicken stock
1/3 cup(s) 1/3-less-fat cream cheese
3 tablespoon(s) mascarpone cheese
8 ounce(s) wide ribbon pasta
1 1/2 cup(s) (1-in) asparagus pieces
1/2 cup(s) frozen peas
1/2 teaspoon(s) salt
1/4 teaspoon(s) freshly ground black pepper
1 tablespoon(s) chopped fresh flat leaf parsley
1 tablespoon(s) thinly sliced fresh chives

Steps:

  • place pancetta in a large skillet over medium heat; cook 6 minutes or until pancetta begins to crisp, stirring occasionally. Add garlic; cook 30 seconds, stirring constantly. Add stock; bring to a boil. Reduce heat; simmer 4 minutes. add the cream cheese and mascarpone, stirring with a whisk until smooth. Strain sauce through a fine sieve over a large bowl. discard solids.
  • cook pasta according to package directions; omitting salt and fat. Add asparagus and peas during last 2 minutes. Drain. Add pasta mixture, salt, and black pepper to sauce in bowl; toss well to combine. sprinkle with parsley and chives. serve
