" THE" CREAMED DRIED BEEF/CHIPPED BEEF RECIPE
This is a long-time favorite recipe of our Lancaster County, PA family passed down from my mom. She gets requests for it all the time and has to make double or triple this amount now whenever she makes it so everyone has some to take along home too. For me, it's a true comfort food if there ever was one! We always serve it over toast and/or homefried potatoes. My dad refer's to it as S.O.S. from his days in the service. (Recipe makes about 4 servings for our hungry family but it freezes very well so any leftovers won't go to waste.)

Steps:
- Melt butter in 2 quart (non-stick) sauce pan or larger.
- Shred dried beef by hand into small pieces.
- Add dried beef to melted butter and cook over medium-high heat until edges curl (about 10 minutes but watch carefully-don't burn it).
- Stir in flour and mix thoroughly.
- Add milk, reduce heat to medium low and continue stirring frequently until mixture is smooth & bubbly. (Depending on how thick you like it, it may take from 20 minutes to 1 hours to achieve desired consistency).
- When it's as thick as you'd like, bring to a boil, stirring constantly and boil 1 minute.
- Remove from heat and serve over toast and/or home fried potatoes.

- Melt butter in a cast-iron skillet over medium heat until bubbling. Stir in flour, and then add whole milk, whisking until flour is completely incorporated. Stir constantly until the sauce has thickened.
- Add pepper and strips of dried beef to sauce mixture, stirring until pepper is incorporated and beef is evenly coated. Spoon over Texas toast or biscuit halves; serve warm and top with additional ground pepper, if desired.
CREAMED CHIPPED BEEF ON TOAST
My mom used to make this recipe. It can also be made with 3/4 pound browned, drained hamburger. We called it SOS: Same Ole Stuff. Great comfort food! Either recipe is easy to make and tastes great with a cold beer. Serve over toast.

ROB'S FAVORITE CREAMED DRIED BEEF
I prefer to use the dried beef from a local deli - ask to have it paper-thin sliced or chipped. I serve this over toasted wheat bread for my DH but it is also good served over a oven-baked russet potato. I found this recipe in the Fannie Farmer Cookbook.

Steps:
- Separate the slices of beef and set aside.
- In a medium-sized saucepan, melt the butter over a medium high heat.
- When the butter foams, sprinkle in the flour and whisk (yes use a whisk it works better) in the flour until very well blended.
- Add the hot milk and cook over low heat, stirring very often with the whisk.
- Slowly add the cream, continuing to stir constantly until the cream sauce is thickened (about 3-5 minutes).
- Add the pepper and the dried beef and using a spoon mix well until heated through.
- Serve over crisply toasted bread or hot baked potato.

I've had this recipe for years given to me by my mother. I have to at least triple this when I make it. The recipe says 4 servings, but we like a lot on our toast. We love it for breakfast with fried eggs. Yummy! I also add ground black pepper to mine, but that's just how I like it. Cook and prep times are approximate.

- 1. Tear (I cut with scissors) dried beef into small pieces and set aside. In saucepan, melt butter over low heat. After completely melted, add flour and mix in with spoon until no lumps show. Add milk and turn heat to high, stirring constantly until it boils. Turn heat back down to medium, stirring constantly, until desired thickness is achieved. Stir in dried beef. Serve over warm toast.

- 1. Gather all the ingredients together. This dish cooks rather quickly. If you have kids, enlist them to start toasting the English Muffins or bread! Prepare your beef by pulling it apart into shreds.
- 2. Melt the butter in a deep sided non-stick pan. When it begins to get bubbly, add the flour, and continue to stir until the flour is dissolved. Add the dried beef and sautee on low to moderate heat until it begins to darken (about 5-8 minutes).
- 3. Add the milk, and increase to heat to moderate. Cook until it begins to steam, then add the cheese all at once. At this point, you are "get your hands washed, phones off, 5 minutes to eat.."
- 4. Add the paprika and the ground black pepper as the cheese melts, but keep stirring. The sauce will thicken and become rich. Take it off the heat, and either put the whole saucepan on the table or pur it in a large bowl. Serve immediately, it thickens more as it cools! Enjoy!
