Number Of Ingredients 10

3 cups chicken broth
1 cup chopped walnuts
2 tablespoons chopped onion
2 tablespoons chopped celery
1/8 teaspoon ground nutmeg
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup 2% milk
1 cup half-and-half cream
Minced fresh parsley

Steps:

  • In a small saucepan, combine the first five ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Cool slightly. Transfer to a blender; cover and process until pureed. Strain., In a large saucepan, melt butter over medium heat. Stir in flour until blended. Gradually whisk in milk. Bring to a boil; cook and stir for 1 minute or until thickened. Gradually stir in pureed mixture. Add cream; heat through (do not boil). Garnish with parsley.

CUCUMBER AND WALNUT SOUP

Number Of Ingredients 10

1 English cucumber, peeled and seeded
4 cloves garlic
1 cup toasted walnuts
1 tablespoon toasted coriander seeds
1/2 teaspoon kosher salt
2 tablespoons walnut oil, plus more, for garnish
2 cups sheep yogurt
1/4 cup water
1/4 cup lemon juice
2 tablespoons chopped fresh mint

Steps:

  • Cut cucumbers into small dice and set aside in a large bowl. Using a mortar crush the garlic, walnuts, coriander and salt together and add the oil and continue to mix thoroughly.
  • Transfer to the bowl with the cucumber and whisk in remaining ingredients. Garnish with a drizzle of walnut oil. Serve chilled.

2 cups shelled walnuts (about 8 ounces)
1/4 cup rice flour
1 1/2 slabs brown candy (peen tong), about 3 ounces
1 cup water

Steps:

  • Preheat oven to 350 degrees. In a large saucepan, bring 1 quart water to a boil over high heat. Add the walnuts and boil, uncovered, 1 minute. Drain well. Spread the walnuts on a cookie sheet lined with aluminium foil. Bake 15 to 20 minutes, or until golden and fragrant. Cool on a rack. Place the cooled walnuts in a food processor or blender with 1/2 cup cold water and process until almost a smooth paste, scraping down sides of the work bowl. Add 1/2 cup cold water and process until almost smooth. In a 2-quart saucepan, whisk the rice flour and 1 cup water until smooth. Whisk in the walnut puree and 2 1/2 cups cold water. Heat over medium-high heat, whisking constantly, until mixture comes to a boil. Cut the brown candy into smaller pieces. Add the brown candy, reduce to low and simmer 10 minutes, whisking occasionally. The soup should be the consistency of a light cream soup. If mixture is too thick, whisk in up to 1/2 cup more water. Serve piping hot.

CREAM OF WALNUT AND CAULIFLOWER SOUP

I got the recipe for this cream soup from a book entitled "Soup: superb ways with a classic dish", edited by Debra Mayhew. Its a great book with some interesting international style recipes. This recipe for walnut cream sounded good, so I decided to try it out. It was great!

1 medium cauliflower
1 medium onion, roughly chopped
2 cups unsalted chicken stock or 2 cups vegetable stock
2 cups skim milk
3 tablespoons walnut pieces
salt & freshly ground black pepper, to taste
paprika
chopped walnuts, to garnish

Steps:

  • Trim the cauliflower and break into small pieces.
  • Combine the cauliflower, onion and chicken stock and bring to a boil.
  • Cover and simmer for 15 minutes until cauliflower is soft.
  • Add the milk and walnut pieces, then puree in a blender until smooth.
  • Add soup back to the pot and season with the salt and pepper to taste. Bring once again to a boil. When serving, sprinkle each serving with paprika and chopped walnuts.

LENTIL SOUP WITH POUNDED WALNUTS AND CREAM



Lentil Soup With Pounded Walnuts and Cream image

2 cups lentils
2 to 4 tablespoons butter
1 onion, finely diced
1 bay leaf
6 cups vegetable or chicken stock (or water)
Sea salt and freshly ground black pepper
2 large garlic cloves
2/3 cup lightly toasted walnuts
1/2 cup plus 2 tablespoons crème fraîche
2 tablespoons minced parsley, optional

Steps:

  • Soak the lentils in water for 2 hours, then drain.
  • Melt the butter in a large pot over low heat. Add the onion and bay leaf. Sauté over medium-high heat until onion is translucent, 5 minutes. Add lentils, stock and 1 teaspoon salt. Bring to a boil, then reduce heat. Simmer, covered, until lentils are soft, about 30 minutes. Season with salt and pepper.
  • Using a mortar and pestle, pound the garlic with a large pinch of salt. Add the walnuts and work until finely ground. Add 2 tablespoons crème fraîche, mixing it in a teaspoon at a time, to form a paste.
  • Add the remaining 1/2 cup crème fraîche to the finished soup. To serve, ladle the soup into bowls and top each with a large spoonful of walnut cream, a bit of ground pepper and, if desired, a sprinkle of parsley.
