An interesting and attractive appetizer and snack. These cheese snacks are delicious as is or served along side some japanese rice crackers and/or edamame! Also excellent as an appetizer or for a party tray. :)

- Trim nori to the same size as the cheese slices, if neccesary. Squares are easiest to work with.
- Starting with a slice of cheese, layer with the nori and alternate, using 3 sheets/squares of nori and 4 slices of cheese.
- Press together firmly and cut into triangles or bite sized squares. If serving as an appetizer feel free to put little toothpicks in the centre of each piece - these hold together well though so it's not neccesary. :).

CRAB AND CREAM CHEESE PAN SUSHI (NO ROLLING!)
My little sister had an Asian themed 14th birthday party and really wanted sushi. I had a nightmare of a time trying to roll it so I found a recipe to make pan sushi and changed the filling ingredients to make the sushi that I thought 14 year old girls would eat. It's very simple and saves a ton of money from what you would pay to buy a platter of sushi in stores. The hardest part is flipping the pan and you want to make sure you have a VERY sharp knife to cut through the vegetables in the sushi. I hope you like it as much as we did! (Serving amount is approximate. I didn't count the number of pieces but it was A LOT).

- Cook rice according to package directions and while it is still hot, stir in rice vinegar, sugar and salt (if using) to make your sticky rice.
- Spray a 9x13 pan VERY WELL with non-stick cooking spray or line it with wax paper (I used cooking spray and it worked well). Try to use a pan that has straight edges on the bottom.
- When the rice is cool enough to handle, measure out 2 1/2 cups and press it evenly in the bottom of the pan.
- Layer 2 sheets of nori over the rice and press to make it stick. Cut the nori so it fits, if necessary.
- Spread the cream cheese evenly over the nori.
- Layer to julienned cucumber evenly over the cream cheese. You may need more than one cucumber to cover all the cream cheese.
- Chop the crab meat and sprinkle it over the cucumber.
- Top the crab meat with 2 more nori sheets and press lightly to compact everything.
- Take the remaining 2 1/2 cups of sticky rice and carefully spread it out over the nori.
- Cover with wax paper and press everything firmly into the pan. I actually used a brick to make sure the edges were pressed, too. A pancake turner would work as long as you really press with all your might.
- Keeping the wax paper over the top of the sushi, place a cutting board on top of the pan.
- Quickly but carefully flip the pan onto the cutting board. If the sushi sticks, tap lightly with a wooden spoon until it releases. If you lined the pan with wax paper, remove the paper now.
- Sprinkle rice with sesame seeds, to taste.
- Cut the sushi into squares with a very sharp knife. If it is still sticking, try wetting the knife in between cuts.
- Serve with soy sauce, pickled ginger and wasabi.

VEGETARIAN NORI ROLLS
Delicious nori rolls that look great too. Even people who haven't eaten Japanese before liked these. Impress your friends!

- In a large saucepan cover rice with water and let stand for 30 minutes.
- In a shallow dish combine soy sauce, honey and garlic. In this mixture marinate tofu for at least 30 minutes.
- Bring water and rice to a boil and then reduce heat; simmer for about 20 minutes, or until thick and sticky. In a large glass bowl combine cooked rice with rice vinegar.
- Place a sheet of nori on a bamboo mat. Working with wet hands, spread 1/4 of the rice evenly over the nori; leave about 1/2 inch on the top edge of the nori. Place 2 strips of marinated tofu end to end about 1 inch from the bottom. Place 2 strips of cucumber next to the tofu, then avocado and carrot.
- Roll nori tightly from the bottom, using the mat to help make a tight roll. Seal by moistening with water the 1/2 inch at the top. Repeat with remaining ingredients. Slice with a serrated knife into 1 inch thick slices.

CREAM CHEESE SNACKS ROLLED IN NORI LEAVES
This can be a starter, or -- cut up into bite-sized pieces -- perfect as a snack with drinks. Very quick and easy to make! I'm giving here the ingredients for just one nori seaweed sheet, so adjust the quantities! One nori sheet will make about 9 small finger snacks. I did not really measure, just eye-balled, so please use your own judgment! This is so easy, and the ingredients can be adjusted to your taste. On taste, I got the thumbs-up from my husband, my most honest critic, so here goes ... (The photos are awful. I simply could not get the dark green of the nori leaves to show! Photos look rather rude to me. I use Blue Dragon Sushi nori sheets).

- Put the nori sheet on a counter or wooden board.
- Mash the cream cheese with the green onions, lemon juice, seasoning salt and garlic until soft. * My seasoning salt has a slight peppery bite. If yours does not, you may want to add a few drops of hot pepper sauce.
- When the cream cheese is spreadable, spread thinly with a knife over the nori sheet. You'll probably have some filling left over.
- Use a potato peeler to slice the 2 cucumber ribbons. Pat them dry with kitchen paper, and lay near the edge of the cream cheese filling.
- Tear each mint leaf into 2 - 3 pieces, and lay on the cucumber ribbons.
- Roll up the nori carefully but firmly. The nori should have softened by now, and you should have a nice sushi-sized "sausage". With a sharp serrated knife carefully slice the roll into as many pieces as you want. From the above ingredients you will get either 3 pieces (photo), which could be a starter, or you could cut finger snacks to get 9 pieces from this recipe.
- Repeat the recipe to get as many snacks as you want.
