This is my spin on Alfredo sauce. We love cream cheese, mushrooms and garlic. So I decided to try different ways of creating this tasty dish! Serve with fettuccini, and sliced crusty bread for mopping!

2 tablespoons butter
2 portobello mushroom caps, thinly sliced
1 (8 ounce) package cream cheese
½ cup butter
1 ½ cups milk
6 ounces grated Parmesan cheese, or to taste
1 clove garlic, crushed
1 tablespoon minced fresh basil leaves
ground white pepper, to taste

Steps:

  • Heat 2 tablespoons of butter in a skillet over medium heat. Stir in the mushrooms; cook and stir until softened, about 5 minutes. Set aside.
  • Meanwhile, melt the cream cheese and 1/2 cup of butter in a saucepan over medium heat, stirring occasionally. Stir in the milk and Parmesan cheese, mixing until smooth. Add in the garlic, basil, and white pepper. Simmer for 5 minutes, then remove the garlic. Stir in the cooked mushrooms before serving.

This is a recipe I found a while back and have made a few embellishments on. Caution!!! Very rich!!! I use garden gourmet basil paste in all my recipes requiring basil. This stuff is amazing. If you can't find it sub fresh or dried basil. Just don't overdo it on the dried basil. I am not sure on the cook times yet and will edit that once I find out. The sauce can take some time to turn creamy

12 tablespoons butter
16 ounces cream cheese
16 ounces heavy cream
1 tablespoon garlic powder
1/3 cup parmesan cheese (optional)
1 tablespoon basil (I use gourmet garden basil paste)
2 boneless skinless chicken breast halves
2 cups frozen chopped broccoli (or fresh)
2 small zucchini, julienned
1/2 cup julienned red pepper (or assorted package for color)
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Alfredo Sauce: 1) Melt butter and cream cheese together over med heat until creamy.
  • Add heavy cream, parmesan cheese, garlic powder, basil paste, and salt and pepper to taste.
  • Add chicken, zucchini, peppers, and broccoli. All of these indredients are optional except for the chicken. Unless you are doing some type of vegan thing.
  • Once sauce is mixed, take it off the burner and set aside or put it on very low heat so it can thicken up. Use this sauce with any food that you want to use Alfredo sauce with.
  • Serve fettucine, Spoon sauce/chicken mixture over noodles and put your garlic bread on the side.
  • Enjoy.

My son and I have been using Knorr Pasta Sides. We just knew that we cold make them better. This is one of the dishes we came up with... I knowit is not from scratch. But by the time we got done with it.It is pretty close.

2 pkg "knorr pasta sides"
6 oz button mushroom,sliced.
3 c chicken stock, no salt
1 c whole milk
3 Tbsp real butter
4 oz cream cheese, room temperature,cubed
2 c cooked chicken
4 oz each chedder cheese & jack cheese,shredded

Steps:

  • 1. In a large saucs pan ,add chicken stock,milk,and butter..Bring to a low boil,stering all the time. Do not walk away. Milk will boil over if not stired. Once butter has melted. Add a pinch of salt and pepper. Add 2 packages of pasta sides.Lower heat to med-high. Continue stiring for 5-6 min.
  • 2. Now add chicken and mushrooms cook 2 more min. Stiring. Add cream cheese one cube at a time. Stir to mix. Add the rest of the cream cheese stir till cheese melts. Add chedder and jack cheese. Stir till cheese melts. Remove pan from heat and let sit 2-3 minutes. stir . We served this over mashed potatoes.
