Cabbage And Noodles image

It's a hearty dish that's good any time. Use it for a main dish or a side. If you want, you can spice it up a bit with red pepper flakes. I made a few tweaks to a recipe I found in a vegetarian cookbook, "From Vegetables With Love".

Number Of Ingredients 7

1 medium head of cabbage
1 pkg wide egg noodles (16 ounces)
1 stick butter (1/2 cup) (i know it sounds like a lot of butter, but it's not.)
1 medium onion, diced
3-4 clove garlic, sliced or minced
1 Tbsp caraway seeds, optional
salt and pepper to taste

Steps:

  • 1. Start a large pot of water boiling for the noodles. In another large pot, bring salted water to a boil.
  • 2. Slice cabbage into medium size pieces. Boil until tender crisp, about 5 minutes. Drain.
  • 3. Heat butter in medium skillet. Saute onion and garlic until soft. Add caraway seeds, if desired, salt and pepper. (Reduce heat to low and keep warm while noodles finish cooking if necessary)
  • 4. Cook noodles according to package directions. Drain and return to pot.
  • 5. Add cabbage and onion-butter mixture. Mix well. Check seasoning and serve.
