3/4 cup sugar
3/4 cup brown sugar, firmly packed
2 large eggs
2 teaspoons vanilla extract
1 cup Pillsbury BEST® All Purpose Flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 3/4 cups old fashioned oats
1 cup dried cranberries
1 cup walnuts, chopped

Steps:

  • HEAT oven to 350ºF. Coat baking sheets with no-stick cooking spray.
  • BEAT shortening, sugar and brown sugar in large bowl at medium speed of electric mixer until blended. Beat in eggs and vanilla. Combine flour, baking soda, cinnamon and salt in small bowl. Beat into shortening mixture until smooth. Stir in oats, dried cranberries and walnuts. Drop by rounded tablespoonfuls about 2-inches apart on prepared baking sheets.
  • BAKE 10 to 12 minutes or until light brown. Cool on baking sheets 2 minutes. Place on cooling rack to cool completely.

1 cup white sugar
¾ cup firmly packed brown sugar
½ cup butter, softened
¼ cup milk
2 tablespoons orange juice
1 egg
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon salt
¼ teaspoon baking soda
2 ½ cups cranberries, halved
1 cup chopped walnuts
¼ cup confectioners' sugar for dusting, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  • Cream white sugar, brown sugar, and butter together in a large mixing bowl. Beat milk, orange juice, and egg into the creamed mixture.
  • Sift flour, baking powder, cinnamon, salt, and baking soda together in a separate bowl; blend into the wet ingredients in the mixing bowl to form a cookie dough. Stir cranberries and walnuts into the dough.
  • Drop the dough onto the prepared baking sheet by the teaspoonful.
  • Bake in the preheated oven until the edges are golden, 10 to 15 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely. Sprinkle confectioners' sugar over the cookies to serve.

Steps:

  • Preheat oven to 350F Beat together butter and brown sugar until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and mix well. Stir in oats, cranberries, walnuts adn mix well. Drop by spoonful onto ungreased cookie sheet. Bake 10 minutes (should be slightly under-cooked) Cool 1 minute on cookie sheet and transfer to wire rack.

This is the best cranberry oatmeal cookie I've ever tasted. Slightly crisp on the outside, but oh so chewy on the inside. I can't believe it hasn't been posted yet! It's from the Crisco site. Note: If you use old-fashioned oats, the cookies will come out crisper and less moist; If you use quick oats, the cookies will be chewier and more moist. Also, bake until cookies are *just* set, where the center of the cookie still looks a little wet.

1 tsp pure vanilla extract
1 3/4 c all-purpose flour

2 Tbsp orange zest

Steps:

  • 1. Heat oven to 350. In a large bowl, beat butter and sugars on medium speed with electric mixer until creamy. Add eggs, vanilla and orange zest; beat well.
  • 2. Combine flour, oats, baking soda and salt in a separate bowl then add to moist ingredients with wooden spoon. Add walnuts and cranberries and mix.

  • Cream wet ingredients (butter, sugars, eggs, vanilla) with a mixer until light and fluffy.
  • Stir the flour mixture into the creamed mixture and mix for 3 minutes.
  • Add the oats, chips, craisins & walnuts; stir to incorporate.
  • Form 2 inch sized balls.
  • Drop 2-inches apart onto baking sheet sprayed with nonstick spray.

1 cup sugar
2/3 cup packed brown sugar
2 large eggs
1 tablespoon thawed orange juice concentrate
1 tablespoon grated orange zest
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1 teaspoon salt
1 cup coarsely chopped fresh cranberries
1 cup chopped walnuts

Steps:

  • In a large bowl, cream shortening and sugars. Beat in eggs, one at a time. Add orange juice concentrate, orange zest and vanilla. Combine the flour, cream of tartar, baking soda and salt; gradually add to creamed mixture and mix well. Stir in cranberries and walnuts. 1 tablespoon smooth applesauce
2/3 cup brown rice syrup
2 egg whites
1/2 cup firmly packed brown sugar
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup rolled oats, quick cooking
3 -4 tablespoons chopped walnuts or 3 -4 tablespoons miniature chocolate chips
3 -3 1/2 tablespoons craisins (or raisins)

Steps:

  • In a dry saucepan on medium, toast the walnuts (if using) and oats together until browned and fragrant, stirring occasionally. Set aside.
  • In a large bowl, beat margarine(at room temp) and applesauce with brown sugar until light and fluffy (with electric beaters).
  • add egg whites, brown rice syrup, and vanilla and beat until smooth, about a minute.
  • In a smaller bowl, combine flours, cinnamon, baking soda, and salt.
  • Mix into creamed mixture. Stir in oats, walnuts (or chocolate chips), and craisins.
  • Chill dough for 30 minutes.
  • Drop dough on parchment paper-covered cookie sheet (dont flatten tops).
  • Bake at 330° F 12-15 minutes or until spread out and very lightly browned. They will be flat and the tops will have small bubble pockets, and though they may look soft and not done, they are! Allow cookies to cool slightly then place cookies on cooling rack. Use a very good spatchula or else they will be tricky to get off the pan without breaking!
  • Cookies will be quite delicate and slightly sticky (especially when hot), so when you store them, be sure their edges arn't touching eachother and use wax paper to line between the layers. ENJOY!

1/2 cup white whole wheat or all purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt

6 tablespoons unsalted butter, at room temperature
1/2 cup dark brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla
1/3 cup chopped toasted walnuts plus 3 T.
1/3 cup dried cranberries plus 3 T

  • Preheat oven to 350 degrees F.
  • Combine oats, flour, baking powder, baking soda, salt and cinnamon; set aside.
  • Beat butter and sugars until light and fluffy. Add egg and vanilla; beat until combined.
  • Add oat mixture to butter mixture and stir until partially mixed. Add 1/3 cup nuts and 1/3 cup cranberries and stir until fully blended. Scoop dough up by rounded tablespoons and shape into balls. Flatten slightly. Mix the reserved nuts and cranberries together and press a few gently into the top .
