This simple turkey stuffing recipe is studded with dried cranberries, walnuts, celery, and onions, and scented with a mix of fresh herbs, for an easy and comforting addition to your Thanksgiving table.

10 cups unseasoned dry bread cubes
2 cups walnuts (, chopped)
1 cup dried cranberries
9 tablespoons butter
3 celery stalks (, chopped)
2 large yellow onions (, chopped)
1/4 cup Italian parsley (, chopped)
1 tablespoon ground sage
1 tablespoon ground thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 1/2 - 2 cups chicken broth

Steps:

  • Preheat oven to 350°F.
  • Place bread cubes, walnuts and cranberries in large bowl and set aside.
  • Coat a 9x13-inch baking pan with 1 tablespoon butter.
  • Melt remaining butter in skillet over medium-high heat and add celery and onions. Cook 4-5 minutes, or until softened and lightly browned, stirring frequently. Add parsley, ground sage, thyme, kosher salt and pepper and mix well. Add mixture to bread cube mixture and toss to combine.
  • Drizzle 1 1/2 cups of the chicken broth over mixture in bowl, and stir to combine. Add more chicken broth and salt and pepper as desired.
  • Place stuffing in prepared pan and bake, uncovered, until top is lightly browned, about 50-60 minutes.

Number Of Ingredients 12

3 tablespoons unsalted butter, plus more for the baking dish
1 1/2 cups walnuts
8 ounces sweet Italian sausage, casings removed
2 celery stalks, chopped
1 medium onion, chopped
Kosher salt and freshly ground black pepper
1 cup dried cranberries
One 14-ounce package cornbread stuffing mix, such as Pepperidge Farm
1 tablespoon finely chopped fresh sage
2 teaspoons finely chopped fresh thyme
2 cups turkey or chicken stock
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F. Lightly butter a 2- to 3-quart glass or ceramic baking dish.
  • In a dry saute pan set over medium heat, toast the walnuts until lightly golden brown, about 5 minutes; cool and chop.
  • Melt the butter in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Reduce the heat to medium and add the celery, onion and 1/2 teaspoon salt and cook, stirring occasionally, until softened, about 8 minutes. Stir in the cranberries and cook to just slightly plump them, about 1 minute, and then remove from the heat.
  • In a large mixing bowl, add the stuffing mix, sage, thyme and walnuts. Mix together the stock and egg in a large measuring cup, then add it to the mixing bowl along with the sausage-vegetable mixture. Add 1/2 teaspoon each salt and pepper and stir gently to combine thoroughly.
  • Transfer the stuffing mixture to the baking dish and bake until hot and golden brown on top, 30 to 40 minutes. Serve hot.

DRIED CRANBERRY AND APPLE TURKEY STUFFING

A recipe of my girlfriends, made at her house for a Christmas dinner a few years back...an excellent recipe for a stuffing, that is prepared to cook inside the turkey. Note cooking time depends on how long the turkey is cooked, I imagine that you could bake this outside the turkey also too. This recipe can be doubled if desired.

5 tablespoons butter
1 large onion, chopped
1 -2 tablespoon fresh minced garlic (optional)
4 -5 cups diced bread
2 granny smith apples, peeled, cored and chopped
1/2 cup white wine
1/2 cup chicken stock (more if needed)
1 cup chopped toasted pecans
2 ounces fresh sage, chopped fine
2 ounces fresh thyme, chopped fine (or 1-2 tsp dried, or to taste)
1 cup chopped fresh parsley, to taste (1 cup measured after chopping)
1/2 cup dried cranberries (can use more)
1 eggs or 1 egg white
salt and pepper

Steps:

  • In a frypan, melt butter, saute onion and garlic until soft (not brown), about 5 minutes.
  • Add in the bread cubes and herbs, stirring to combine.
  • Stir in apples, wine, stock, pecans, cranberries and parsley (if the mixture seems too dry add in just a bit more stock, not too much!).
  • Cool to almost room temperature.
  • Add in egg or egg whites.
  • Season well with salt and lots of pepper.
  • Stuff into the turkey.

3/4 pound bulk Italian sausage
2 celery ribs, finely chopped
1 small onion, finely chopped
6 garlic cloves, minced
1 can (14-1/2 ounces) chicken broth
1/2 cup butter, cubed
1 package (12 ounces) seasoned stuffing cubes
1-1/2 cups chopped apples
1 cup dried cranberries
1/2 cup slivered almonds
1-1/2 teaspoons dried sage leaves
1-1/2 teaspoons dried thyme
1/8 teaspoon pepper
Dash salt
1 to 1-1/2 cups apple cider or juice

Steps:

  • Preheat oven to 350°. In a Dutch oven, cook sausage, celery, onion and garlic over medium heat until sausage is no longer pink; drain. Add broth, stirring to loosen browned bits from pan. Add butter; cook and stir until butter is melted. Remove from the heat., Stir in stuffing cubes, apples, cranberries, almonds, sage, thyme, pepper, salt and enough cider to reach desired moistness. Transfer to a greased 13x9-in. baking dish., Cover and bake 25 minutes. Uncover; bake until lightly browned, 5-10 minutes.

CRANBERRY, WALNUT & APPLE CIDER TURKEY STUFFING
6 c. stale bread cubes
1/3 c. chopped onion
3/4 tsp. poultry seasoning
3/4 c. Ocean Spray Fresh or frozen cranberries, chopped
3/4 c. raisins
1/2 c. chopped walnuts
1 c. peeled apples, coarsely chopped
1/3 c. chopped celery
1 1/2 tsp. salt
1/2 tsp. pepper
1/2 c. butter, melted
3/4 c. apple cider**
** can substitue cider for water
In large bowl combine all of the above ingredients, mix well. Use to stuff turkey.

Steps:

  • I mixed the bread and spices and the liquid and then added celery, onion, raisins, apple and cranberries. I also used water instead of cider. It made enough to feed 11, but didn't leave leftovers. Next time I would make two helpings, one for the oven and one for in the turkey.
