- In a large bowl, dissolve gelatin in boiling water. Stir in concentrate. Combine cranberries, apple and sugar; add to gelatin mixture. Stir in pecans. Pour into a 1-1/2-qt. serving dish. Refrigerate for 4 hours or overnight.

WILD-RICE AND LIMA-BEAN SALAD WITH CRANBERRY RELISH
Three great natives of the Americas-wild rice, lima beans, and cranberries-meet in this hearty, protein-rich salad.

- Pulse cranberries, orange zest and juice, 1/2 cup mint, sugar, and 2 teaspoons salt in a food processor just until finely chopped. Transfer to a small bowl. (Relish can be refrigerated, covered, up to 1 day.)
- Cook lima beans in a pot of generously salted boiling water until tender, 3 to 4 minutes. Transfer with a slotted spoon to an ice-water bath; let cool completely, then drain. Meanwhile, return pot of water to a boil and stir in rice. Reduce heat to medium and simmer until tender, 35 to 40 minutes; drain. Spread rice on a lightly oiled rimmed baking sheet; let cool completely.
- Heat 2 tablespoons oil in a medium skillet over medium. Add shallot and cook, stirring occasionally, until soft, 2 to 3 minutes. Add lima beans; season with salt and pepper. Cook, gently stirring occasionally, until warmed through, 2 to 3 minutes.
- Transfer lima-bean mixture to a large bowl. Stir in rice, 1/3 cup relish, vinegar, parsley, and remaining 2 tablespoons each mint and oil. Generously season with salt and pepper; serve.
FRESH CRANBERRY RELISH OR SALAD
So much better than cranberries from a can! Has a little zip (Grand Marnier or Congnac). Make at least a day ahead to best enhance the flavors. I got this recipe from Larry Benfield after Thanksgiving one year in the 1980's. Reading his original the oranges were UNPEELED. I have always peeled them.

- Take nuts for a spin in food processor to chop. Place in bowl.
- Wash cranberries removing bad ones. Take for a spin in food processor. Place in bowl.
- Wash then core apples and quarter. Take for a spin in food processor. Place in bowl.
- Peel and remove seeds from orange. Take for a spin in food processor. Place in bowl.
- Add sugar and liquor. Mix.
- Refrigerate overnight. The flavors will blend and be enhanced.
- Keeps and freezes well.

SO MUCH time and effort went into preparing meals for our large family that it was a real bonus to find a recipe with a shortcut. This salad was one of them. CRANBERRY RELISH SALAD
I adapted this dish from The Fresh Market cranberry relish recipe. By adding gelatin it becomes an excellent side salad. I serve it with pork or fowl. It has become a big hit!

Steps:
- 1. Using a processor or chopper coarsely chop cranberries with orange zest, orange slice, sugar and lemon juice.
- 2. Bring 1 cup of water to boil and in large bowl stir in gelatin. Stir until totally dissolved. Add cranberry mixture and gently blend.
- 3. Line a 13 x 9 baking dish or pan with parchment paper. Spoon mixture in a single layer into pan. Sprinkle top with chopped walnuts. Cover and refrigerate for 6 hours or until gelatin is firm. Cut into squares to serve.
- 4. Top with a small dollop of sour cream and garnish with fresh mint leaves.
