3 c sifted cake flour
3 tsp baking powder
1 tsp salt
1 egg
1 1/4 c milk
1 c firmly packed brown sugar
1/4 c melted shortening
3 chocolate, unsweetened squares
16 oz semi sweet chocolate chips
1/2 c maraschino cherries-chopped

Steps:

  • 1. Heat oven to 350 degrees. Grease and flour three mini loaf pans or one large loaf pan.
  • 2. In a large bowl, sift together flour, baking powder, and salt. Stir in egg, milk, and brown sugar. Add melted shortening and chocolate to batter and stir until blended. Stir in chocolate chips and cherries. Pour batter into prepared pans.
  • 3. Bake for 45 minutes or until toothpick inserted in the center comes out clean. Cool in pans for 15 minutes. Remove from pan and cool completely before slicing.
