1-1/2 cups fresh cranberries
2 green onions, minced
1 seeded jalapeno pepper, minced
1/3 cup sugar
3 tablespoons minced fresh mint
2 tablespoons lime juice
1 tablespoon orange juice
1/4 teaspoon ground ginger
2 pork tenderloins (3/4 pound each)
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • To make relish, pulse cranberries in food processor until finely chopped. Combine with next seven ingredients. Reserve 1/2 cup relish for grilling; cover and refrigerate the rest., Brush tenderloins with olive oil; sprinkle with salt and pepper. Grill, covered, over direct heat 12-15 minutes, turning occasionally and spooning with reserved relish, until thermometer reads 145°. Let stand 10-15 minutes. Discard used relish. Slice meat; serve with refrigerated relish.

1 package (12 ounces) fresh or frozen cranberries
1-1/4 cups sugar
1/4 cup port wine or grape juice
2 teaspoons cornstarch
2 tablespoons cold water

Steps:

  • In a small saucepan, cook cranberries, sugar and wine over medium heat just until berries begin to pop, 10-12 minutes. Combine cornstarch and water until smooth; stir into cranberry mixture. Bring to a boil; cook and stir until berries pop and sauce is thickened, about 2 minutes. Serve warm or cold. Refrigerate leftovers.

1 orange
2 cups fresh or frozen cranberries (about 8 ounces)
3/4 cup sugar
1/4 cup chopped walnut pieces

Steps:

  • Finely grate the zest of half of the orange into a medium saucepan, then squeeze in all of the juice. Add the cranberries, sugar and walnuts and cook over medium heat, stirring occasionally, until the mixture thickens and the cranberries start to pop, about 10 minutes. Let cool.

1 cup ruby port
1 cinnamon stick, broken n half
1 cup dried cranberries
1 (12 ounce) bag fresh cranberries
3/4 cup water
3/4 cup sugar

Steps:

  • Bring port and cinnamon stick to boil in a saucepan.
  • Reduce heat to medium, add dried cranberries and cook 3-5 minutes.
  • Add fresh berries, water, sugar.
  • Bring back to boil until sugar dissolves, then lower to simmer, cover and cook 15-20 minutes, stirring frequently.
  • Discard cinnamon stick and serve at room temperature.

1/4 teaspoon cinnamon
1 cup diced orange sections

Steps:

  • Wash berries, and discard those that are wrinkled.
  • Combine berries, sugar and wine, and boil over high heat until sugar has dissolved. Reduce heat, and boil, uncovered, until berries begin to pop, about 5 minutes.
  • Stir in cinnamon and orange sections. Remove from heat and chill. Refrigerate at least overnight.

3 cups fresh cranberries
1 medium onion, finely chopped
1/3 cup cider vinegar
1 cup golden raisin
1 cup sugar
1 1/2 cups port wine
1/2 teaspoon ground nutmeg
1 teaspoon ground ginger
1 teaspoon ground cinnamon

Steps:

  • In a 3-4 qt.
  • pan, combine all ingredients and bring to a boil over high heat, stirring occasionally.
  • Reduce heat and simmer, uncovered, until relish is thick and reduced to 3 cups, about 30 minutes; stir often as relish thickens to prevent scorching.
  • Let cool.
  • This will keep in the refrigerator for up to 2 weeks.

175g light muscovado sugar
2 x 250g/9oz packs fresh or frozen cranberries

Steps:

  • Tip the port and sugar into a pan and bring to the boil. Add the cranberries, then cook for 5 mins for frozen and 8-10 mins for fresh until tender, but holding their shape. The sauce will thicken as it cools. Will keep in the fridge for 1 week or freeze for up to 6 weeks. Thaw for 2 hrs or overnight before serving.

A kicky condiment, usually made with cranberries, can offset the neutral (read: bland) yet rich nature of the Thanksgiving meal. This hot red-pepper cranberry relish with jalapeños and cayenne fits the bill. You can keep the seasoning somewhat tame, or ramp up the heat to taste. It will keep for 2 weeks or so; make it in advance, as soon as cranberries are available, and have it on hand in the fridge through the holiday season.

1 cup sugar
2 large jalapeños, preferably red, seeded and finely diced
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon cayenne
1 tablespoon grated ginger
12 ounces cranberries

Steps:

  • Put sugar, jalapeños, lemon juice, salt and cayenne in a heavy-bottomed saucepan over medium-high heat. Add 1/2 cup water, then stir with a wooden spoon to dissolve sugar, and simmer 2 minutes.
  • Add ginger and cranberries, and bring to a boil. Reduce heat to medium and let mixture cook, stirring occasionally, until cranberries have softened and no liquid remains in pan, about 15 minutes.
  • Let cool and taste. Add more cayenne or jalapeños if desired. It can be stored in the refrigerator for up to 2 weeks.
