Steps:
- Add boiling water to gelatin; stir until dissolved, about 2 minutes. Stir in cranberry sauce. Add pineapple, orange juice and lemon juice. Refrigerate until thickened, about 30 minutes. Stir in nuts. Pour into an 11x7-in. dish. Refrigerate until set. Cut into 12 squares; if desired, serve each with a lettuce leaf and a dollop of Miracle Whip.

Most simple, most delicious cranberry jello salad. This was my mother's recipe and has become a tradition for my family. I serve it as a side dish at Thanksgiving and Christmas dinner every year.

Steps:
- Drain pineapple juice into measuring cup and add water to make 1 cup of liquid.
- In small saucepan, dissolve jello in the liquid.
- Heat to boiling.
- Remove from heat. Add cranberries and pineapple. Mix well.
- Pour into small jello mold or glass bowl and refrigerate at least 4 hours.

Steps:
- Drain and reserve syrup from pineapple, add water to equal 1 cup.
- In a saucepan over medium heat, bring the pineapple juice to a boil, add gelatin and stir until dissolved. Remove from heat, add cranberry sauce, orange peel, orange juice and lemon juice. Blend together and cool until slightly thickened.
- Stir in pineapple and celery, turn into mold or 8 inch square pan. Chill until firm.

- In a food processor or blender, process cranberries, sugar and pineapple until the cranberries are finely chopped. Pour into a bowl; let stand for 10 minutes. Fold in whipped topping. This recipe was pulblished by Dole and is my favorite cranberry salad. It has become one of my most requested sides for our traditional holiday meals. This can be made with sugar free Jell-0 to reduce the calories without sacrificing taste at all. It is also a great make ahead dish for the busy holidays.

Steps:
- Drain pineapple, reserving liquid in 1-quart liquid measuring cup. Remove 1 tablespoons of the crushed pineapple, set aside for garnish. Add enough cold water to the reserved liquid to measure 3 cups; pour into large saucepan. Bring to boil; remove from heat. Add gelatin; stir at least 2 minute until completely dissolved. Add cranberry sauce; stir (gelatin mixture should be thick. Pour into large bowl.
- Refrigerate 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites).
- Stir in remaining pineapple, apples and walnuts; stir gently. Pour into medium serving bowl.
- Refrigerate 4 hours or until firm. Top with reserved crushed pineapple just before serving. Store leftover gelatin in refrigerator.
- Cooking time would actually be refrigeration time.

- Spray a 4-cup gelatin mold or a 9-inch square pan with vegetable oil cooking spray.
- In a medium glass mixing bowl, combine the raspberry gelatin and unflavored gelatin. Add 1 cup boiling water and stir with a metal spoon continuously for 2 minutes, until the gelatin is completely dissolved.
- Stir in 1/2 cup cold water. Add the pineapple and juice, cranberry sauce, and walnuts. Stir with a metal spoon until all ingredients are completely incorporated.
- Pour the mixture into the prepared mold, cover with plastic wrap and refrigerate until firm.
- About 1 hour before serving, invert the mold onto a serving platter and allow to sit at room temperature; the salad will release itself and come clean from the mold.
- Combine cream cheese, powdered sugar, whipped cream and walnuts in bowl. Spoon into the center of the mold.

- 1. In a bowl; blend the cream cheese, sugar and mayonnaise.
- 2. In another bowl; mix cranberry, pineapple and nuts.
- 3. Add to cream cheese mixture and stir well.
- 4. Stir in the whipped topping.
- 5. Pour into a 9×5 inch loaf pan or 8×8 inch pan and cover with or Divide into 16 - 18 cupcake liners placed in muffin cups, number depending on size. After frozen, cover with plastic wrap, then foil.

- 1. Drain pineapple thoroughly, strain, ring out any excess juices, set aside.
- 2. In a food processor, add cranberries and chop fine, add to drained pineapple. (If cranberries are frozen, place under warm water for 2 minutes to thaw) add 1 1/2 T sugar while processing
- 3. With a hand mixer, mix softened cream cheese until smooth, add 1/4 c. milk and 1/2 cup powdered sugar, mix until smooth.
- 4. Add 4 oz marshmellow creme to cream cheese, stir until combined.
- 5. In a bowl mix pineapple, cranberries, chopped celery.Add Cream cheese mixture, fold in 8 oz whipped topping and fold into mixture. Add chopped walnut pieces and fold until combined.
- 6. Chill cranberry-pineapple salad in refrigerator for 20-25 minutes to an hour to chill.
- 7. To Serve: a) add to Texas sized muffin pan, sprayed with cooking spray, level off and set in freezer for 10 min to chill. Turn out muffin pan onto a cookie sheet, with a spatula place one at a time on bib or green lettuce leafs; or b) Line a martini glass with leaf lettuce, add salad to 1 cup measuring cup and turn onto lettuce in glass, top with extra cranberries if desired.
