GRANDMA'S CRANBERRY-ORANGE GELATIN SALAD
My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

Steps:
- Place the gelatin into a bowl, pour in the boiling water, and stir until the gelatin dissolves. Mix in the cranberry sauce, pineapple, celery, pecans, and orange zest until evenly blended. Pour the gelatin mixture into a mold or serving dish.
- Chill in the refrigerator overnight, or up to 8 hours.
- To make the topping, beat the cream cheese with half of the whipped topping. Fold in the remaining whipped topping until well blended. Unmold the gelatin, and spread with the topping mixture.

CRANBERRY-ORANGE GELATIN SALAD
Cool and creamy, these colorful fruity treats can be served as a salad or dessert.

Steps:
- Drain pineapple, reserving juice in 4-cup measuring cup; set pineapple aside. Add enough water to pineapple juice to measure 2 1/2 cups; pour into 1-quart saucepan. Heat to boiling.
- Place gelatin in rectangular baking dish, 11 x 7 x 1 1/2 inches (2-quart size). Add boiling juice mixture; stir until gelatin is completely dissolved. Add ice cubes; stir until ice is completely melted and gelatin begins to thicken. Place in freezer 10 to 15 minutes, stirring once or twice, until slightly thickened.
- Meanwhile, place 2 cups cranberries and the orange in food processor. Cover and process until coarsely chopped; set aside.
- Remove gelatin from freezer. Stir cranberry mixture and pineapple into gelatin. Cover with plastic wrap and refrigerate at least 30 minutes until firm. Garnish with cranberries, orange slices and mint. Serve with Creamy Topping.

PAM'S CRANBERRY AND ORANGE GELATIN SALAD
I can't remember where I found this recipe, but I have been making it for years to go with the Thanksgiving turkey. I really like jellied cranberry sauce, so this recipe hits the spot. I used a Google image until I can get my own photo taken.

- 1. In a bowl, completely dissolve gelatin in boiling water stirring 2-3 minutes. Add pineapple, celery, orange juice and lemon juice. Mix well. Chill until partially set. Chop nuts, section and cut the orange and cube jellied cranberry sauce into 3/4 inch cubes while waiting for it to thicken.
- 2. Remove thickened gelatin mixture from fridge and stir in nuts and orange segment pieces. Stir cranberry sauce carefully into chilled mixture. (Try to keep the jellied sauce cubes intact if possible) Pour into an 11-in. x 9-in. casserole dish
- 3. Chill until firm 2-3 hr or overnight. Cut into squares; serve each on a lettuce leaf and top with a dollop of mayonnaise.
