Steps:
- Bring the cranberries, water, sugar and jalapeno to a boil, reduce the heat and simmer until the cranberries burst and the the sauce starts to thicken, about 10-15 minutes.
- Mix in the lime juice and tequila and remove from heat.

- Finely grate zest from limes. Cut limes crosswise in half; squeeze juice from limes. Transfer zest and juice to a small saucepan. Stir in remaining ingredients. Bring to a boil, stirring to dissolve sugar. Reduce heat to medium; cook, uncovered, until berries pop, 12-15 minutes, stirring occasionally. Remove from heat., Transfer to a small bowl; refrigerate, covered, until cold.

Steps:
- Add to a medium saucepan, cranberries, 1/3 cup water, lime zest, lime juice, splenda and the pinch of salt.
- Bring to boil, reduce heat and simmer until the cranberries start to burst, 3 or 4 minutes.
- Make a slurry with the teaspoon of water and cornstarch.
- Add the slurry to the saucepan, stir and simmer 1 minute longer or until thickened.
- Cool and serve with poultry.

- 1. In a medium heavy saucepan, stir together sugar, maple syrup, water, lime peel, and lime juice. Bring to boiling; reduce heat. Simmer, uncovered, about 3 minutes or until sugar is dissolved.
- 2. Stir in cranberries. Simmer, uncovered, for 5 minutes, stirring occasionally. Stir in ginger. Simmer, uncovered, about 6 minutes more or until berries have popped and mixture starts to thicken, stirring occasionally. Cool. Makes 12 servings.
- 3. Can be made ahead. Prepare sauce as directed; cool. Transfer to an airtight container and chill for up to 3 days. Let stand at room temperature for 30 minutes before serving.
