Steps:
- Bring cranberries, horseradish, sugar, and water to a simmer in a 3-quart heavy saucepan over moderate heat, stirring with a wooden spoon until sugar is dissolved. Simmer, uncovered, stirring and mashing berries frequently with spoon, until berries break down, 5 to 10 minutes.
- Serve sauce warm or at room temperature.

Steps:
- In a medium saucepan over medium heat, stir together first five ingredients.
- Bring to a boil but stir frequently.
- Once sauce boils, remove from heat.
- Pour into a heat proof bowl and refrigerate for 1 hour.
- This can be made ahead which makes this recipe very nice.
- It can be refrigerated up to three days.
- Place cream cheese on a nice appetizer plate and top with Cranberry-Horseradish Sauce.
- On side of cream cheese, place fresh rosemary sprigs and fresh cranberries.
- Serve with assorted crackers.

PAN SEARED DAY BOAT SCALLOPS OVER SPROUT SALAD WITH CRANBERRY HORSERADISH DIPPING SAUCE

- In a small bowl, combine cranberry sauce and horseradish. Refrigerate until ready to serve.
- Heat oil in a medium saute pan over medium-high heat. Season scallops with salt and pepper. When oil is hot, add scallops and sear on both sides until browned. Remove from heat, but keep warm.
- Divide sprouts among 2 plates, and make a bird's nest on each plate with the sprouts. Spoon cranberry sauce mixture into the center of the bird's nest. Garnish with snow pea shoots. Place scallops around the bird's nest and serve immediately.

- Add liberal amounts of smoke and salts to both sides of the brisket, rub them in well.
- Place brisket in crockpot and add a little water.
- Cover with lid and cook on low for 8-10 hours, or till the beef is fork tender.
- During the last hour of cooking add the barbeque sauce.
- Serve with the Cranberry Horseradish sauce.
- To make the Sauce: In a pan on the stove, heat all ingredients until the butter and brown sugar are melted and well mixed. Serve warm with the Brisket.
PORK CHOPS WITH CRANBERRY HORSERADISH SAUCE
I don't usually like to use recipes that you have to buy specific brand ingredients, but I had the Cranberry Horseradish Sauce on hand, and I created this recipe with it. If you don't want to buy the Stonewall Kitchen, I'm sure you can combine whole cranberry sauce and 2-3T of horseradish (to taste). Because RZ does not find this ingredient, it is not included in the calories - it is about an additonal 50 calories a serving (although more for the whole dish, you are probably only eating about 1 T of the sauce).

- Combine the cranberry horseradish sauce, chili sauce, sugar mustard, garlic powder and onion powder. Set aside.
- Put the flour, salt, and pepper in a bag.
- Heat a large covered skillet, add the oil.
- Shake pork cutlets in the bag with flour, one at a time, and add to the skillet.
- Brown pork on both sides, 2-3 minutes. (I barely had enough room for the 2lbs of pork cutlets - there were about 8 of them - in my 14" skillet, so you may need to do this in batches.).
- Add the sauce from step one and coat the pork with it. Cover and cook on med-low for 10 minutes.
- I served with white rice and carrots.

- Add all ingredients except ham to the slow cooker crock and mix well. Place ham on top of the cranberry mixture.
- Cover and cook on LOW for 7 hours, stirring sauce (around the ham) halfway through the cooking process. Some of the cranberries may pop during cooking or when you stir; that's okay.
