White Chocolate Chip Cookie Bars with Oatmeal and Cranberry image

A friend of my daughter's made these white chocolate chip cookie bars, and they are now one of my daughter's favorites.

1 cup butter, softened
1 cup brown sugar, packed
½ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
salt
3 cups oatmeal
1 cup dried cranberries
1 cup white chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Beat butter, brown sugar, and white sugar together in a mixing bowl using an electric mixer until creamy. Add eggs and vanilla extract; continue mixing until well blended.
  • Add flour, baking soda, cinnamon, and salt to sugar mixture; mix well. Stir in oats, cranberries, and white chocolate chips. Pour into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the bars comes out clean, 25 to 28 minutes.
  • Remove baking pan from the oven and let stand for 30 minutes. Cut into bars.

1 cup brown sugar
½ cup butter, softened
1 large egg
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups all-purpose flour
⅛ teaspoon salt
¾ cup white chocolate chips
½ cup dried cranberries
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) package cream cheese, softened
2 large eggs
1 teaspoon lemon zest
1 teaspoon vanilla extract
1 (12 ounce) jar cherry preserves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat brown sugar and butter together in a bowl using an electric mixer until smooth and creamy. Add 1 egg, 1 teaspoon vanilla extract, and almond extract; mix until combined. Stir flour and salt into creamed mixture until crust mixture is well combined; fold in white chocolate chips and dried cranberries. Press crust mixture into the prepared baking dish.
  • Beat sweetened condensed milk and cream cheese together in a bowl using an electric mixer until well combined. Add 2 eggs, lemon zest, and 1 teaspoon vanilla extract; beat well. Spread cream cheese mixture over crust mixture.
  • Whisk cherry preserves in a small bowl until runny. Drop spoonfuls of cherry preserves over cream cheese mixture layer. Lightly draw a knife through cream cheese mixture creating a swirling pattern.

FROSTING:

1/3 cup dried cranberries, coarsely chopped

Steps:

  • Preheat oven to 350°. In a large bowl, beat brown sugar, melted butter, eggs and vanilla until well blended. In another bowl, whisk flour, baking powder and salt; gradually beat into sugar mixture. Stir in baking chips, cranberries, pecans and orange zest., Spread into a greased 15x10x1-in. baking pan. Bake until a toothpick inserted in center comes out clean, 18-22 minutes. Cool completely in pan on a wire rack., For frosting, in a large bowl, combine cream cheese, confectioners' sugar, butter, 1 tablespoon zest and vanilla; beat until smooth. Spread over bars. Combine dried cranberries and remaining 2 tablespoons zest; sprinkle over frosting. Refrigerate at least 2 hours. Cut into triangles. Store in the refrigerator.

The first time I tried these, a co-worker on a specialized team brought them in for breakfast. She got them from Starbucks® (a seasonal delight, I'm told). So, I checked them out after I got off from work and at over $2 per little "triangle" piece, I decided I'd learn to make them for a lot less. My family members all urged me to recreate these. So after a bit of research, I found that there's a few copycat recipes online; but this is my twist on that concept.

1 cup unsalted butter, at room temperature
1 cup brown sugar
⅓ cup white sugar
3 large eggs
1 teaspoon orange extract

1 cup sweetened dried cranberries (such as Craisins®)
½ cup white chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper.
  • Beat butter, brown sugar, and white sugar for bars together with an electric mixer until light and fluffy, about 5 minutes. Stir in eggs, orange extract, and vanilla extract until well blended. Add flour, baking powder, and ginger; mix until well incorporated and the batter looks like soft cookie dough. Stir in cranberries and white chocolate chips until well mixed. Spread the stiff batter into the prepared pan.

  • Mix white chocolate chips and oil together in a glass, microwave-safe measuring cup. Microwave until fluid enough to drizzle, 1 minute to 1 minute 15 seconds, stirring every 15 seconds until melted. Use a fork or whisk to drizzle the melted chocolate diagonally across the bars.
  • Allow chocolate to set for at least 1 hour before cutting into squares or triangles.

Butter, water and egg called for on cookie mix pouch
1/2 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray.
  • In large bowl, stir cookie mix, softened butter, water, egg and cinnamon with spoon until soft dough forms. Reserve 1/4 cup of the chopped white chocolate for topping. Stir remaining chopped white chocolate and the cranberries into dough. Spread dough in bottom of pan.
  • Bake 25 to 29 minutes or until toothpick inserted in center comes out clean and edges are golden brown. Cool completely on cooling rack, about 1 hour 30 minutes.
  • In small microwavable bowl, microwave reserved 1/4 cup chopped white chocolate uncovered on Medium (50%) 30 seconds. Stir; continue to microwave in 15-second increments until white chocolate can be stirred smooth. Spoon into small resealable food-storage plastic bag; partially seal bag. Cut off tiny corner of bag. Squeeze bag to pipe over top of bar.

½ cup butter, melted
2 tablespoons white sugar
¾ cup fresh cranberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with aluminum foil and lightly grease with cooking spray.
  • Combine graham cracker crumbs, melted butter, and 2 tablespoons sugar in a bowl. Mix until butter evenly coats the crumbs. Transfer to the baking dish and flatten into an even layer.

Kudos Holly! There are so many flavors in these bars. The cinnamon really shines through in the graham cracker crust. The cranberries give a sweet, tart flavor. And the chocolate on top ties it all together!

COOKIE CRUST
2 1/4 c flour
1/2 tsp cream of tartar
1/2 tsp baking soda
1/2 c powdered sugar
1/2 c sugar
10 whole graham crackers (we used cinnamon)
1/2 tsp vanilla
1/2 c vegetable oil
1 stick butter
1 large egg
TOPPINGS
1 can(s) cranberry sauce
1 c chocolate chips
1 Tbsp shortening

Steps:

  • 1. Mix all dry ingredients well for crust, add wet ingredients and mix very well. Press into greased 13x9" pan. Run cranberry sauce through food processor until smooth, pour and level out over cookie crust. Bake in 350* oven for about 20 minutes until crust is done and cranberry sauce is a little bubbly.
  • 2. While it's baking, add chocolate chips and shortening to heavy pot and melt over low-medium heat stirring constantly so not to burn!
  • 3. Pour chocolate over cranberry sauce and cookie crust, cover and let set 4 hours or overnight.

Always looking for more recipes for Cranberries !!! Found this one in my Cape Cod cookbook. It is very good ! I only had a 13 1/2 by 9 1/2 inch glass baking pan, sooo they would be thicker in a regular 13x9" pan. Hope you enjoy ~ could try using other fruits, such as blueberries which is what I am going to try next time I make this !

  • In a second bowl , cream butter and both sugars. Add eggs one at a time, beating until fluffy. Add vanilla. (or almond flavoring)
  • Blend in dry ingredients. Stir in chopped cranberries and nuts. Spread in greased pan.
  • Bake 30 minutes. When cool, cut into bars. Do not overbake ( Mine only took 24 minutes) because of the amount of sugar, cookie dough tends to become hard and stick to the pan if overbaked.
