1/2 cup mayonnaise
1 to 2 tablespoons honey
1 teaspoon cider vinegar
1/2 teaspoon salt
1/4 teaspoon celery seed
Dash pepper
3 cups shredded cabbage
1/4 cup chopped fresh or frozen cranberries

Steps:

  • In a small bowl, combine the first six ingredients. Place cabbage in a serving bowl. Add mayonnaise mixture and toss to coat evenly. Fold in cranberries. Serve immediately.

1/3 cup dried cranberries
1/4 cup chopped walnuts (optional)

Steps:

  • In a small bowl, whisk together mayonnaise, lemon juice, water, sugar and salt.
  • Combine shredded cabbage, carrot, scallions, cranberries and optional nuts in a large bowl.
  • Pour dressing over cabbage mixture and toss well to coat.
  • Allow coleslaw to chill for at least 15 minutes before serving, tossing occasionally.

I adapted this from a recipe I found on here. I wanted to use up some apples and an open bag of leftover coleslaw. This recipe is simply delicious with some nice clean fall flavors. This is nothing like the creamy wet coleslaw you would get at a deli. Its light, crisp, and crunchy.

2 apples, thinly sliced
2 cups bagged coleslaw mix
2 stalks of peeled and chopped celery
1/2 medium onion, thinly sliced
1/4 cup dried cranberries
1/4 cup walnuts, toasted
4 tablespoons lemon juice, separated, about 1/2 a lemon
1/2 cup sour cream
1/4 cup mayonnaise or 1/4 cup Miracle Whip
2 -3 tablespoons sugar
1/2 teaspoon salt
1 pinch pepper

Steps:

  • Thinly slice the apples into a small bowl.
  • Stir in two tablespoons of lemon juice onto the apple.
  • In a large bowl, combine the coleslaw, onion, celery, cranberries, and walnuts.
  • Stir in the apples.
  • In another small bowl, combine sour cream, mayo, sugar, salt, pepper, and remaining lemon juice.
  • Poor the wet ingredients onto the coleslaw mix and combine.
  • Serve chilled.

1 1/2 cups dried cranberries
1/2 cup pine nuts, toasted

1/2 cup mayonnaise
1/4 cup sweet pickle relish
1 tablespoon yellow mustard
2 tablespoons honey
1/4 teaspoon salt (to taste)
1/8 teaspoon black pepper (to taste)

Steps:

  • In a skillet on low heat toast pine nuts until golden brown stirring regularly and set aside until cool before adding to slaw.
  • Combine mayonnaise, sweet pickles, yellow mustard, honey, salt and pepper and set aside.
  • In a large mixing bowl add the pre-shredded coleslaw mix, dried cranberries, toasted pine nuts and celery and top with mayonnaise/mustard mixture made earlier, mix well and serve.

1/2 cup Greek yogurt
1 Tbsp. KRAFT Real Mayo Mayonnaise
1 Tbsp. honey
1 Tbsp. lemon juice or white wine vinegar
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1/2 tsp. celery seed
1/4 cup plus 1 Tbsp. dried cranberries
2 Tbsp. plus 1 tsp. shelled sunflower seeds or slivered almonds

Steps:

  • WHISK to combine yogurt, honey, lemon juice (or vinegar), salt, pepper, and celery seed to make the dressing. Set aside.
  • ADD coleslaw vegetables to a mixing bowl. Toss in 1/4 cup of the cranberries and 2 Tablespoons of the sunflower seeds. Pour the dressing over the slaw and toss to coat completely. Transfer to a serving dish and scatter reserved cranberries and sunflower seeds over the top. Store leftovers, tightly lidded, in the refrigerator for up to 4 days.
