1 ½ cups butter, melted and divided
1 (16 ounce) package frozen hash brown potatoes
1 (10.75 ounce) can condensed cream of chicken soup
1 (16 ounce) container sour cream
1 pound crabmeat
1 (16 ounce) package Cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour 1 cup melted butter in a 9x13 inch casserole dish. Spread frozen hash browns in the bottom of the dish.
  • In a small bowl combine chicken soup and sour cream; spread over hash browns. Sprinkle crab meat evenly over potatoes and top with cheese. Pour remaining 1/2 cup melted butter over cheese.
  • Bake in preheated oven for 25 minutes.

We have potatoes and crab festivals near our home. I combined the two ingredients into a recipe that gives potatoes a surprise taste.

Number Of Ingredients 7

3 large baking potatoes
1/2 cup butter, melted
2 tablespoons milk
1 tablespoon mayonnaise
Salt and pepper to taste
2 cans (6 ounces each) crabmeat, drained, flaked and cartilage removed
3/4 cup shredded cheddar cheese, optional

Steps:

  • Bake potatoes at 375° for 1 hour or until tender. Cool. Cut potatoes in half lengthwise. Scoop out the pulp and place in a bowl; set shells aside. Add butter to pulp and mash. Beat in milk, mayonnaise, salt and pepper until smooth. Fold in crab. Spoon into potato shells. Place in an ungreased 11x7-in. baking dish. Sprinkle with cheese if desired. Bake, uncovered, at 350° for 30 minutes or until heated through.

The potatoes aren't in a bad mood.. they are stuffed with crab filling.. LOL! Serve on individual plates or all on a huge platter. Enjoy!

3 cup(s) crabmeat
1 cup(s) cooked plain shrimp
8 large potatoes
1 stick(s) butter
1 cup(s) onion, minced
1 cup(s) mushrooms, sliced
2 - green onions, minced
2 1/8 cup(s) vermouth, dry
1/3 cup(s) plain yogurt
1/3 cup(s) sour cream
1/2 cup(s) half and half
1 cup(s) gruyere cheese
- ground black pepper (to taste)

Steps:

  • Wash and bake the potatoes.
  • Let cool slightly, cut lengthwise in half. Scoop out most of the inside of the potatoes, leaving about 1/4 inch thick potato walls to form a "bowl". Set the potato "bowls" aside.
  • Mash the potato that you scooped out
  • saute the onions and green onions in the butter in a frying pan. Cook about 10 - 15 minutes or until the onion is done. At this point add the mushrooms and cook 3 minutes before adding the crabmeat and shrimp. Add some ground black pepper to taste.
  • Add the vermouth, bring to a boil, stirring constantly until all the liquid is gone.
  • Stir in the dairy products, using half of the cheese. Pour this into the mashed potato bowl. Stir well. If you think you need more ground black pepper and half and half, add it now. Stir well again.
  • Put this filling into the reserved potato "bowls", place them on baking sheet. Sprinkle with remaining cheese. Bake at 375 degrees until the cheese is melted and bubbly.

this is a nice recipe for an appetizer if using small new red potatoes, or a nice side dish for a seafood platter. My man loves twice baked potatoes and this was a pleasant surprise for him

12 small red potatoes
1 tsp olive oil
4 oz flaked cooked crabmeat
2 Tbsp each plain yogurt and hellmans mayonaise
2 Tbsp minced chives or green onions thinly sliced
1 tsp lemon juice
1 Tbsp chopped fresh parsley
2 Tbsp grated parmesan cheese
pepper to taste

Steps:

  • 1. pierce potatoes several times, toss in olive oil and bake on a shallow baking pan at 375 degrees 45 to 55 minutes. let cool slightly (at this point you can cover and refrigerate one day.
  • 2. cut potatoes in half and with a melon baller remove potato to leave a 1/4" shell
  • 3. set potato skins open side up on a shallow baking pan.
  • 4. In a small bowl combine crab, yogurt, mayonaise, chives, lemon juice and cheese.
  • 5. season to taste with pepper. blend well. spoon mixture into potato shells.
  • 6. place potatoes under broiler about 4" and broil until golden brown. 3 to 5 minutes.
  • 7. I have done this with bigger potatoes adding in some of the scooped out potato. (4) baking potatoes
