CREAMY BROCCOLI CASSEROLE

RECIPE VIDEO ABOVE. This is the broccolli version of Cauliflower Cheese! Tender broccoli smothered in a creamy garlic-parmesan cheese sauce which is pretty much the one I use for everybody's favoure Mac and Cheese. It's nice and saucy, rather than being stodgy and so thick you can cut into it like cake, so there's extra cheese sauce to spoon over once served.

600g / 1.2 lb broccoli florets (, small to medium (2 large heads, Note 1))
60g / 4 tbsp unsalted butter
4 garlic cloves (, minced)
6 tbsp plain flour
2 cups milk (, preferably warm (full or low fat))
1 1/2 cups chicken broth/stock (, preferably warm)
1.5 cups cheddar cheese, freshly grated ((Note 2))
1/2 cup grated parmesan cheese
Salt and pepper
1/2 cup panko breadcrumbs
1/4 cup grated parmesan cheese
20g / 1.5 tbsp unsalted butter, melted

Steps:

  • Preheat oven to 180C/350F.
  • Mix Topping ingredients in a bowl with a pinch of salt and pepper. Set aside.
  • Melt butter in a large pot over medium heat. Add garlic and cook for 1 minute until it smells incredible.
  • Add flour and cook for 1 minute, stirring constantly.
  • While whisking, slowly pour in half the milk. Once fully incorporated, whisk in the remaining milk plus the chicken broth.
  • Cook for 4 to 5 minutes, whisking every now and then and more towards the end, until the sauce thickens so that it coats the back of a wooden spoon and when you draw your finger across it, the path stays (see video).
  • Turn off heat, add cheeses, stir in (don't worry if it doesn't melt fully). Then do a taste test and add a bit of salt if required.
  • Add broccoli and stir well to coat.
  • Pour into a casserole dish, pat down to fill. Sprinkle over Topping, cover with foil then bake for 25 minutes.
  • Remove foil and bake for a further 20 minutes until the topping is deep golden and the broccoli is tender.
  • Stand for 5 minutes before serving.

1 (16 ounce) package frozen broccoli, thawed
2 tablespoons butter
ΒΌ teaspoon salt
2 tablespoons all-purpose flour
2 cups milk
1 (8 ounce) package cream cheese, cubed
1 cup crushed buttery round crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 4 to 6 minutes; drain.
  • Melt butter in a large saucepan over medium heat. Stir in salt, flour, and milk. Cook, stirring constantly, until thick and bubbly. Stir in cream cheese until melted. Remove from heat, and stir in broccoli.
  • Sprinkle 1/2 cup of crushed crackers over the bottom of a 1 1/2 quart casserole dish. Slowly pour the broccoli mixture into the dish, and top with remaining crushed crackers.
  • Bake in preheated oven for 30 minutes.

A wondrous little creation that goes together easily, smells terrific while it's cooking, and fills the mouth with delicious flavors! Excellent for taking to potlucks (different from the "ordinary" stuff you often see!). I make this whenever my mom comes to visit--to her it is such a special treat!

2 (10 ounce) cans cream of celery soup or 2 (10 ounce) cans cream of mushroom soup
1 1/2 cups milk (swished in the soup can)
salt & pepper
1 teaspoon curry powder (or more)
3 bunches broccoli (see note)
1 lb imitation crabmeat, thawed
3 -4 cups dried breadcrumbs (see note)
1 lb cheddar cheese, grated

Steps:

  • Preheat oven to 350; butter a 13x9 cake pan; set aside.
  • In a small bowl, blend soup and milk; add seasonings; set aside.
  • Peel the broccoli stems, cut into 3-4 inch spears; spread broccoli in prepared baking pan, stems and all.
  • Cut crab pieces into bite-size chunks; spread HALF over the broccoli; sprinkle with HALF of the bread crumbs; pour HALF of the soup-milk over this; sprinkle HALF the cheese over the milk; repeat with remaining crab, crumbs, soup-milk and cheese.
  • Bake for 45 minutes.
  • SUBSTITUTE two or three 10 oz. pkgs of frozen (thawed) broccoli for the fresh.
  • *** NOTE *** Cut 4-5 slices of bread into cubes, toast in the oven while it is preheating, coarsely crush them.
  • VARIATION: Try SWISS or Monterey Jack cheese instead of Cheddar---yummy!
  • OPTION #2: Substitute SHRIMP for the crab, to get a whole 'nother thing! Delish!

8 eggs
2 cups half-and-half cream
2 (6 ounce) cans crabmeat, drained
1 cup frozen chopped broccoli
1 cup plain breadcrumbs
1 cup cheddar cheese, shredded
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dill
1 tablespoon butter
1/2 cup onion, chopped
1/2 green pepper, chopped
1 cup mushroom, sliced

Steps:

  • Combine eggs, half and half, crab, broccoli, bread crumbs, cheese, salt, pepper and dill.
  • Saute onion, pepper, and mushrooms in butter until tender.
  • Combine with egg mixture.
  • Place in greased 9x13" pan.

1/4 c butter
1/4 c onion, chopped
1 can(s) crabmeat
1/4 tsp curry powder
1 c milk
1/2 c bread crumbs
1 broccoli, frozen or fresh bunch
1 c cheese, grated
1/4 c butter
2 Tbsp butter
2 Tbsp flour
1/2 tsp salt
1 Tbsp lemon juice

Steps:

  • 1. Drain crab and set aside.
  • 2. Cook broccoli until almost tender and arrange in the bottom of greased 1 quart casserole; sprinkle with grated cheese.
  • 3. Melt 1/4 cup of butter and saute the onion; add flour, curry powder and salt.
  • 4. Gradually stir in milk; cook until thickened, then stir in lemon juice and add crab.
  • 5. Pour over broccoli and cheese in casserole.
  • 6. Mix 2 tablespoons of melted butter with bread crumbs and sprinkle over top.
  • 7. Bake at 350 for 30 minutes.
  • 8. NOTE: This is a good dish to use imitation crabmeat, if you would prefer. Also does nicely in individual casseroles.

1 (6 1/2 ounce) can crab, drained
1/4 cup finely chopped red onion
1/2 cup low-fat mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon italian seasoning
1/2 cup reduced-fat mozzarella cheese, shredded

Steps:

  • Preheat oven to 375 degrees.
  • Spray 8x8-inch baking dish with cooking spray.
  • Place broccoli in bottom of dish; add flaked crab and onion.
  • Combine mayonnaise, mustard and italian seasoning; spread over top of crab mixture.
  • Sprinkle with cheese.
  • Bake for 20 minutes, or until heated through.
