3 1/4 c all purpose flour
1 1/2 tsp salt
1 tsp ground nutmeg
2 tsp baking soda
1 tsp ground cinnamon
3 c sugar
1 c vegetable oil
4 eggs, beaten
1/3 c water
2 c grated zucchini
1 tsp lemon juice
1 c walnuts or pecans

Steps:

  • 1. Preheat oven to 350 degrees F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. Alternately, bake in 5 mini loaf pans for about 45 minutes.

2 cups grated zucchini
1/3 cup water
4 beaten eggs
1 cup vegetable oil
3 cups sugar
1 teaspoon ground cinnamon
2 teaspoons baking soda
1 teaspoon ground nutmeg
1 1/2 teaspoons salt
3 1/4 cups all purpose flour
1 teaspoon lemon juice
1 cup chopped (or pecans) walnuts

Steps:

  • Preheat oven to 350 °F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. Chocolate chip zucchini bread is made with chocolate chips for added sweetness.

3 cups all purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
3 eggs
2 cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract
2 cups grated, plus ribbons for serving zucchini
1 cup chopped pecans
1 cup semisweet chocolate chips
1 tablespoon orange zest
whipped cream

Steps:

  • Preheat oven at 350 °F. Grease (2) 9 by 5-inch loaf pans.
  • Sift together flour, baking powder, salt, spices and baking soda.
  • In a large bowl, beat eggs until light and fluffy. Add sugar, and continue beating until well blended. Stir in oil, vanilla, zucchini, pecans, chocolate chips and orange zest. Stir in sifted ingredients. Pour into prepared loaf pans.
  • Bake for 50 minutes, or until a skewer inserted in the middle comes out clean. Remove loaves from pans and cool. Chill before slicing. Serve with whipped cream and ribbons of zucchini.
