1 cup mayonnaise
1/2 cup grated onion
1 cup shredded Cheddar cheese
6 drops Tabasco sauce
1/4 teaspoon curry powder
1 6 1/2 or 16 ounce crab meat, drained/rinsed
2 French bread baguettes, sliced on the diagonal at 1/2 inch thicknesses

Steps:

  • In medium bowl, combine mayonnaise, grated onion, Cheddar cheese, Tabasco, curry powder and crab meat. This may be made 1 day in advance. To serve, place mixture on bread rounds and broil until golden brown. Serve immediately.

1 (6 ounce) can crabmeat, drained and flaked
⅓ cup creamy salad dressing, e.g. Miracle Whip ™
½ teaspoon Worcestershire sauce
1 teaspoon cocktail sauce
½ cup thinly sliced celery
2 tablespoons sweet pickle relish
1 French baguette, cut into 1/2 inch slices
1 (6 ounce) package sliced mozzarella cheese

Steps:

  • Preheat the broiler.
  • In a medium bowl, mix together crabmeat, creamy salad dressing, Worcestershire sauce, cocktail sauce, celery and pickle relish.
  • Arrange French baguette slices on a medium baking sheet in a single layer. Broil until lightly toasted, 2 to 5 minutes, in the preheated broiler.
  • Spread even amounts of the crabmeat mixture on the toasted baguette slices. Top with mozzarella slices.
  • Broil in the preheated oven 15 minutes, or until cheese is melted and lightly browned.

1 -2 stalk fresh lemongrass (each 10 to 12 in. long) or 1 tablespoon grated lemon peel (yellow part only)
12 kaffir lime leaves, sections (each 1 1/2 to 2 in. long) or 1 tablespoon lime zest (green part only)
1/3 lb shelled cooked crabmeat
1/4 cup thinly slivered shallot
1 tablespoon finely shredded carrot
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh mint leaves
1 tablespoon chopped green onion
2 tablespoons lime juice
1 1/2 teaspoons thai chili paste (purchased or homemade)
1 teaspoon asian fish sauce or 1 teaspoon salt, to taste
1 teaspoon sugar
8 ounces English cucumbers

Steps:

  • Rinse lemon grass. Cut off and discard tough tops and root ends; peel off and discard tough outer green layers of stalks down to tender white parts. Finely chop enough to make 1/4 cup.
  • Rinse kaffir lime leaves. Stack three or four leaves at a time and cut crosswise into very fine shreds.
  • In a bowl, mix lemon grass, kaffir lime leaves, crab, shallots, carrot, cilantro, mint, and green onion.
  • In a small bowl, mix lime juice, chili paste, fish sauce (but not salt, if using), and sugar.
  • Just before serving, stir lime-juice mixture into crab mixture. If not using fish sauce, add salt to taste.
  • Rinse cucumber and cut crosswise into about 24 rounds about 1/4 inch thick. Top each slice with a scant tablespoon crab mixture.

2 lb crab or imitation crab meat, chopped fine
mayonnaise
salt and pepper
1 loaf french bread

  • 1. Combine cheese and crab. Add enough mayo to moisten. Add salt and pepper to taste. Spread on a small slice of french bread. Heat in the oven, about 350F till cheese is melted. Serve warm.
