CRAB MEAT AU GRATIN

Steps:
- Preheat the broiler to high.
- Melt two tablespoons of the butter in a saucepan over medium heat. Add the flour and blend well. Do not brown. Add the milk and cook, stirring with a whisk, until blended and smooth. Season with cayenne pepper, nutmeg, salt and pepper.
- Add the cream, bring to a boil and simmer briefly about 3 to 4 minutes. Stir in half of the sherry, beat in the egg yolk well and remove from heat.
- Melt the remaining tablespoon of butter in a nonstick skillet over medium-high heat. Add the shallots and cook them briefly until wilted. Add the crab meat and cook briefly, stirring gently. Sprinkle with the remaining sherry.
- Spoon the crab meat into a baking dish and smooth over with a spatula. Cover with the hot sauce and spoon it over with a rubber spatula. Sprinkle with the cheese.
- Place the dish under the broiler until golden brown and bubbling hot.

CRAB MEAT AU GRATIN
This recipe comes from a famous New Orleans restaurant but I don't remember which one! However, I remember the taste of the dish and have been trying to duplicate for years. This is very good!

Steps:
- In a heavy saucepan, over moderate heat, melt butter, add onions and celery.
- Cook, stirring occasionally until onions are soft and transparent but not brown.
- Stir in the flour, blend well.
- Add milk, stirring constantly until smooth.
- Add pepper, nutmeg, mustard and cheese.
- Take pot away from heat.
- Beat egg yolk and lemon juice.
- Then add crabmeat, mix well.
- Butter baking pan or individual baking dishes.
- Add onion/cheese mixture to baking pan.
- Pour egg mixture over all.
- Combine cheese and breadcrumbs, sprinkle over top of mixture, then add dash of paprika.
- Bake at 350 degrees F for 15 to 20 minutes until top is au gratin, brown and crusty.

CRAB MEAT AU GRATIN
I grew up on the Texas Gulf Coast and my father loved to fish, crab and shrimp when he had time off. We are of Cajun decent, so I am privledged to have a lot of wonderful recipes passed on from my family and friends. This is a wonderful dish. I make it in small dishes and freeze the extras to have on hand.

Steps:
- 1. Saute' celery and onions in butter until tender.
- 2. Slowly blend in flour and mix well
- 3. Pour in milk slowly, stirring constantly until well blended.
- 4. Add egg yolks, salt, black and red pepper. Cook on medium heat for 5 minutes until sauce thickens.
- 5. Rinse crab meat and put into a mixing bowl. pour the cooked sauce over the crab meat. Blend ingredients well and pour into a greased casserole dish or individual oven proof dishes.
- 6. Sprinkle with grated cheese and bake at 375 degrees for 10-15 minutes or until light brown.
CRAB MEAT & SHRIMP AU GRATIN
This is a FANTASTIC recipe that I developed many years ago. It began at first as Crabmeat Au Gratin & recently I decided to also add Shrimp, which greatly improved an already great dish. Also, instead of a mild chedder, I sometimes use the 4 or 6 blend of shredded cheese, either Kraft or Sargento.

- Place crabmeat into large mixing bowl.
- Add ONLY 1 cup unseasoned bread crumbs, eggs, butter or margarine, flour, heavy whipping cream, Port Wine or Cream Sherry, ONLY 1/2 cup grated mild cheddar cheese, salt, pepper, onion powder, garlic powder, thyme,& parsley flakes. Mix well with large spoon.
- Place into a well-greased oven-proof baking dish or casserole.
- Push the shrimp down into the mixture distributed evenly& then cover the holes with the mixture. Sprinkle top with additional bread crumbs& cheese. Sprinkle top with paprika.
- Place, uncovered, into preheated 400 degree oven 15 to 20 minutes, or until cheese is melted& top is a light golden brown, but not burned.

- Preheat broiler.
- In a small heavy saucepan cook carrot, celery, and bell pepper in butter over moderate heat, stirring, 1 minute. Add broth, vermouth or wine, and tarragon and boil mixture until liquid is reduced to about 1 tablespoon. Add cream and boil sauce until thickened, 1 to 2 minutes. Stir in crab meat, lemon juice, and salt and pepper to taste and divide mixture between two 1-cup shallow baking dishes. Sprinkle Parmesan over crab mixture and set dishes in shallow baking pan. Broil gratin about 4 inches from heat 2 minutes, or until bubbling and golden, and serve with toasts.
SHRIMP & CRAB MEAT AU GRATIN
Steps:
- Melt butter in a stock pot add flour just heat do not brown cook 3-5 min. Add milk must be stirred constantly; add both cheeses and the 2 tablespoons Of Parmesan cheese as it begins to thicken add the Tony's, Tabasco, Old Bay and lemon juice. Keep stirring, mix the cornstarch with a ¼ cup cold-water mix well and add to mixture stirring constantly. When mixture thickens between 15-20 minutes remove from heat stir in the crab and shrimp. You are now ready to place the mixture into the tart pans. Place a small amount of the remaining parmesan cheese in the bottom of the tart pans fill the pan with mixture leaving ¼ inch at top and cover the mixture with shredded cheddar cheese, place the pans on a cookie sheet bake at 400* for 16-18 min or till the cheese starts to brown. Steps:
- Blend butter, flour, and salt; gradually stir in milk.
- Cook over medium heat until thickened.
- Stir in crab meat and onions.
- Stir in cheese until melted.
- Pour into 4 to 6 Au Gratin dishes.
- Toast and butter bread.
- Cut each piece into 4 triangles.
- Place 4 to 6 pieces of toast into each dish (arrange around the edge of the dish) to use for dipping.
