CRABMEAT ON ENGLISH MUFFINS
This Appetizer recipe came from a dear friend Sue F. My family has loved it ever since trying it the first time. Hope you will too.

Steps:
- 1. Mix the first 4 ingredients at room temperature. Add crab meat and blend well.
- 2. Spread mixture onto untoasted, split English Muffins. Cut into 4ths. At this point you can either bake on a cookie sheet at 350 for 10-15 minutes. Broil the last 5 minutes until golden brown and serve hot.
- 3. or freeze on a cookie sheet until firm and store in air tight bags for later use. See section 2 for baking instructions.
CHEESY CRABMEAT ENGLISH MUFFINS
This is an old family recipe. It is a great finger food/ appetizer for a holiday party. These can be prepared ahead of time and frozen until you are ready to serve.

Steps:
- Mix the Old English Cheddar Cheese, crabmeat, garlic powder and butter together in a mixing bowl. Salt to taste.
- Spread the mixture over 6 english muffin halves.
- Place coated English muffins in the freezer until firm.
- Cut each english muffin half into 12 approximately equal pieces.
- Place in a ziplock bag and freeze until cooked or cook immediately.
- To cook: Cover a cookie sheet with aluminum foil. Place the pieces on the cookie sheet cheese side up.
- Broil for 10-15 minutes or until the top is brown/ bubbly.

Steps:
- Soften butter and cheese spread at room temperature.
- Mix together well in mixer with seasonings.
- Fold in crab meat and spread on English muffin halves.
- Cut with a sharp knife into four sections and freeze (they cut easier if they're slightly frozen first).
- Flash freeze individually on a cookie sheet until frozen.
- Package in freezer bags and store in the freezer.
- Preheat oven to 400ºF degrees.
- Heat in oven 10 to 15 minutes until hot and bubbly.

- Toast English muffins in a toaster oven. Place muffin halves on toaster oven tray. In a small bowl, combine the crab, cheese sauce, butter, mayonnaise and garlic powder. Spread over the muffin halves. Cut each into four pieces. , Bake in toaster oven at 350° for 8-10 minutes or until lightly browned. Sprinkle with paprika if desired.

CRAB ON A MUFFIN APPETIZERS
Simple, delicious, cheesy, freezes well. Can be served as an appetizer or for a luncheon, depending how you slice it. Be sure to take a copy of the recipe along, cause everyone will want a copy -- no kidding!

Steps:
- Melt butter in skillet.
- Add Old English cheese until all is melted.
- Remove from heat, add mayonnaise, parsley and Old Bay.
- Gently fold in crab meat.
- Cut muffins in half.
- LIGHTLY toast muffins (just until they start to toast).
- Cut the muffins into 1/4ths, for appetizers.
- Spread the crab/cheese mixture onto each 1/4th.
- You may freeze at this point.
- To cook, bake at 350°, for 20 minutes, till bubbly.
- For luncheon, spread the mixture on the muffin half and cook as directed.

- Place muffin pieces on 2 cookie tins. Rinse and drain crab meat; drain well. Mix crab with butter, cheese, salts and mayonnaise. Mix well and spread on muffin pieces. You must freeze for at least 30 minutes or longer before broiling. Broil until puffed, bubbly and slightly golden brown. Serve hot.
