1 lb well picked crabmeat
3 eggs, beaten
1 tablespoon chopped fresh parsley
5 tablespoons butter, melted, divided
1 teaspoon salt
1 dash pepper
1/2 teaspoon Worcestershire sauce
1/2 teaspoon prepared mustard
1 cup evaporated milk
1 tablespoon finely chopped green pepper
1/2 cup soft breadcrumbs

Steps:

  • Grease botton and sides of a 2 quart baking dish.
  • Combine crabmeat, eggs, parsley, 3 tablespoons butter, salt, pepper, Worcestershire sauce, mustard, milk and green pepper.
  • Gently pat into dish. Combine bread crumbs with remaining butter, sprinkle on top.
  • Bake for 20 minutes or until set.

1 tablespoon butter
1/2 cup chopped onion
1/2 cup chopped red bell pepper, can use green
1/2 cup crushed cracker
8 ounces cream cheese, softened
8 ounces sour cream
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/2-1 teaspoon hot sauce, favorite brand
1 teaspoon Old Bay Seasoning
1/2 teaspoon paprika
1/4-1/2 teaspoon garlic powder
1/4 teaspoon pepper
salt, to taste
1 lb crabmeat, preferably lump, you could you imitation I suppose
1 cup grated cheddar cheese, gouda works well, too

Steps:

  • Preheat oven to 350.
  • In a skillet or saucepan, melt butter. Saute onions and peppers over medium heat until tender; stir in the crushed crackers; remove from heat.
  • In a mixing bowl, beat together cream cheese, sour cream, worcestershire, hot sauce, and dry seasonings.
  • Stir in the sauteed onion/pepper/cracker mixture.
  • Gently fold in the crabmeat -- careful not to break up the lumps too much.
  • Pour into a 2-1/2 - 3 quart casserole dish. Bake uncovered for 20 minutes at 350. Remove from oven and stir. Sprinkle cheese on top and return to oven for another 10 minutes.

1-3/4 cups sliced fresh mushrooms
5 tablespoons butter, cubed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.

1 cup herbed potato purée
1 cup provolone cheese (shredded)
1 cup mozzarella cheese (shredded)
2 teaspoons green leeks (fried)
2 tablespoons olive oil
4 tablespoons shallots (chopped)
1 tablespoon garlic cloves (chopped)
1/4 cup carrot (diced small)
1/4 cup celery (diced small)
1 cup yellow corn kernels
4 tablespoons dry white wine
2 cups lobster stock
2 cups whipping cream
6 teaspoons fresh parsley (finely chopped)
To taste kosher salt
To taste white pepper (cracked)
2 pounds lump crabmeat
(cleaned, drained, shells removed)

Steps:

  • Heat oil in a large saute pan on medium heat. Sweat shallots, garlic, carrot, celery and yellow corn in oil until tender; do not brown. Add white wine and reduce to almost dry, followed by lobster stock and whipping cream. Reduce by half to a slightly thick consistency. Remove from heat. Fold in chopped parsley; season with salt and pepper. Add crabmeat and mix together. In 6 ungreased small individual baking casseroles, pipe a small layer of potato puree on bottom. Divide the stuffing equally among casseroles on top of potatoes. Cover with shredded cheeses.
  • Bake in 350 degrees F (175 degrees C) oven for 8 minutes; remove and garnish with fried leeks.

Mrs. Tawes was the wife of a Maryland governor, many years ago, and my parents lived in Annapolis, MD, where the Chesapeake Bay watermen brought FRESH crabs to be steamed, picked, and sold. This was a meal meant for when the boss was coming to dinner, or non-Marylanders, to be impressed. The egg yolk mixture gave the appearance of lovely yellow crab fat, which every steamed crab lover craved to find inside the shell. This recipe doubles easily, or more, for the dinner party group or hearty eaters. Do not re-heat in microwave.

1 lb blue crab meat, back fin or jumbo lump
6 eggs, hard cooked
1 cup heavy cream
1 tablespoon butter
1 tablespoon flour
1/4 teaspoon dry mustard
1 tablespoon white vinegar
1 teaspoon vegetable oil
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 cup dry breadcrumbs

Steps:

  • Chop whites of eggs and add to crab meat. Handle gently so that crab lumps are not broken.
  • Add salt and pepper.
  • Mash egg yolks and set aside.
  • Make roux with butter and flour.
  • Add cream, egg yolks, dry mustard, vinegar, and oil, cooking gently and stirring constantly until thickened.
  • Pour while hot over crab and mix gently.
  • Place in buttered 1 quart casserole.
  • Cover top with bread crumbs.
  • Dot with butter.

1 cup mayonnaise
1 cup soft breadcrumbs
3/4 cup half-and-half
6 hard-boiled eggs, finely chopped
1/2 cup chopped onion
1/4 cup sliced stuffed green olives
2 tablespoons chopped fresh parsley
3/4 teaspoon salt
Pinch of pepper
1/2 cup buttered soft breadcrumbs
Olive slices, for garnish

Steps:

  • In a large bowl, break up the crabmeat in chunks. Add the mayonnaise, soft breadcrumbs, half-and-half, eggs, onion, olives, parsley, salt, and pepper, and fold together. Divide the mixture among greased individual bakers or spoon it into a 1-quart casserole dish. Top with the buttered crumbs and bake at 350 degrees for 20 to 25 minutes. Garnish with olive slices.

CASSEROLE FILLING
2 lb crab meat, flaked, cartilage removed
1/2 lb velveeta cheese, cut in small cubes
(or use a package of velveeta cheese shreds)
1 Tbsp prepared horseradish
1 tsp tabasco sauce
salt and pepper to taste
1 1/2 tsp old bay seasoning
1/2 c real mayonnaise
2 Tbsp minced onion
1/2 stick (1/4 cup) melted butter
4 large eggs, beaten
TOPPING
1 bag unseasoned pepperidge farm bread crumbs
(or you can use panko bread crumbs)
1 stick (1/2 cup) butter

Steps:

  • 1. Drain crab meat well. Remove any bits of cartilage. Set aside.
  • 2. Preheat oven to 350°. In a large mixing bowl, stir together horseradish, Tabasco, salt, pepper, Old Bay seasoning, mayonnaise, onion, and 1/4 cup melted butter.
  • 3. Fold in beaten eggs, crab meat, and Velveeta cheese, mixing gently until uniform.
  • 4. Place mixture into a lightly oiled 9x13-inch baking dish.
  • 5. For topping, melt 1 stick butter in a skillet. Add crumbs and coat but do not brown.
  • 6. Spread topping on top of casserole. Bake at 350° until bubbly, about 45 minutes to 1 hour.
