1 lb. lean ground beef
3/4 cup finely chopped yellow onions
1/3 cup seasoned dry bread crumbs
1/4 cup KRAFT Sweet Honey Barbecue Sauce
1 egg, beaten
2 tsp. chili powder
1 pkg. (24 oz.) ORE-IDA STEAM N' MASH Cut Russet Potatoes
1 Tbsp. butter or margarine
1 can (5 oz.) evaporated milk
1 Tbsp. chopped fresh parsley
1 tsp. garlic powder
1/2 cup OSCAR MAYER Real Bacon Bits
1/4 cup french-fried onions
2/3 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat oven to 375ºF.
  • Mix meat, yellow onions, bread crumbs, barbecue sauce, egg and chili powder just until blended; press onto bottom of 9-inch square baking dish sprayed with cooking spray.
  • Bake 20 to 25 min. or until done (160ºF).
  • Meanwhile, microwave potatoes as directed on package; place in medium bowl. Add butter, milk, parsley and garlic powder; mix well. Gently stir in bacon and French fried onions.
  • Remove baking dish from oven. Heat broiler. Spread potato mixture over meat mixture; top with cheese. Broil, 4 inches from heat, 3 to 5 min. or until cheese is melted.

1/3 Cup Seasoned Dry Breadcrumbs
1/4 Cup Jack Daniels® Honey Smokehouse Barbecue Sauce
1 Egg, lightly beaten
2 Teaspoons Chili Powder
3/4 Teaspoon Salt
1 Package Ore-Ida® Steam n' Mash Cut Russet Potatoes
2/3 Cup Canned Evaporated Milk
1 Tablespoon Butter
1 Tablespoon Chopped Fresh Flat-Leaf Parsley
1 Teaspoon Garlic Powder
1 Cup Cooked Bacon Crumbles
1/4 Cup Canned Crispy Fried Onions
2/3 Cup Shredded Mexican-style Cheese Blend

Steps:

  • 1.Preheat oven to 375°F. Coat 9x9 baking dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, Barbecue Sauce, egg, chili powder and salt until well mixed. Gently press into bottom of baking dish.
  • 2.Bake uncovered for 20 to 25 minutes, or until cooked through. Remove from oven and carefully pour off any excess fat if needed. Adjust oven temperature to broil and place oven rack 6 to 8 inches from heat source.
  • 3.Meanwhile, microwave Potatoes according to package instructions. In a large bowl, mix together hot Potatoes, milk, butter, parsley and garlic, and mash with a potato masher until smooth. For a smoother consistency, mix with an electric mixer to desired consistency. Stir in bacon and fried onions. Spread evenly on top of beef mixture and sprinkle with cheese.
  • 4.Broil for 3 to 5 minutes, or until cheese is lightly browned. Serve hot with additional Barbecue Sauce if desired.

1 Package of premade refrigerated mashed potatoes
⅓ C. Bread crumbs
½ Large onion chopped
¼ C. BBQ sauce
1 Large egg
2 tsp. Chili powder
1 C. Bacon pieces
1 C. Mexican blend cheese
Salt and pepper to taste

Steps:

  • Preheat the oven to 375 degrees.
  • In a mixing bowl, add the ground beef, onion, bread crumbs, bbq sauce, egg, chili powder, and salt and pepper to taste. Mix together to combine completely.
  • Press the meat mixture into a 9x9 well-greased baking dish.
  • Bake for 20-25 minutes until cooked through.
  • Drain the extra fat.
  • Cook the mashed potatoes according to the package instructions.
  • Spread the cooked potatoes over the meatloaf mixture in the baking dish.
  • Top the potatoes with the shredded cheese and bacon pieces.
  • Place the oven on broil, and broil for several minutes until the cheese is melted.

1/3 cup finely crushed saltine crackers

1/2 cup chopped celery
1/2 cup diced green bell pepper

1/2 cup barbecue sauce, divided

I found another version of this recipe that suggested using uncooked, grated potato instead of the cooked potato. That's a time-saving method probably worth a try, because there is quite a lot of prep required for this recipe.
