COWBOY BREAKFAST SANDWICHES

16 slices Texas toast
Butter
1 pound breakfast sausage, cut into 8 patties
12 eggs
1/2 cup half-and-half
Salt and freshly ground black pepper
1 cup jarred jalapeno slices
Sandwich spread of your choice, such as mayo, spicy sandwich spread or spicy mustard
8 slices cheese, such as American, Cheddar or Cheddar-Jack

Steps:

  • Cook the Texas toast on a griddle over medium heat, using lots of butter. Set aside.
  • Fry the sausage patties in a skillet over medium heat, flattening with the spatula as they cook. Set aside.
  • Mix the eggs, half-and-half and some salt and pepper in a separate bowl. Pour the eggs onto the griddle in a rectangular shape. Flip to cook on both sides. Cut the rectangle of eggs into 8 squares and set aside on a plate.
  • Increase the heat, then jump the jalapeno slices onto the hot griddle. Let them sizzle for a couple of minutes, chopping them with the side of the spatula as they cook. Drop on a tablespoon of butter for flavor. Cook until the jalapenos have some brown and black bits. Remove from the griddle, then set aside.
  • Spread whatever sandwich spread you'd like to use onto the Texas toast. Top with a sausage patty, eggs, a slice of cheese and some jalapenos. Top with another slice of Texas toast, then wrap in foil for serving.

SLOW-COOKER COWBOY BEEF AND BBQ BEAN SANDWICHES

Loaded with beef and baked beans, saucy sandwiches satisfy hunger in a hurry. Coleslaw adds a cool crunch.

2 medium onions, sliced
2-pound beef boneless arm roast, trimmed of fat
1 can (16 ounces) baked beans
1/4 cup barbecue sauce
1 teaspoon finely chopped jalapeƱo chili
12 onion kaiser rolls, split
1 1/2 cups prepared coleslaw

Steps:

  • Place onions in 3- to 4-quart slow cooker. Add beef. Top with baked beans and barbecue sauce.
  • Cover and cook on low heat setting 8 to 10 hours.
  • Remove beef from cooker; place on cutting board. Shred beef, using 2 forks. Return beef to cooker and mix well. Stir in chili. To serve, place 1/2 cup beef mixture in each roll and top with 2 tablespoons coleslaw.

Cowboy sandwiches have always been a family favorite! My great-grandmother Charlotte Kennedy made these for her children, grandchildren and great-grandchildren. And all of us have made them for our children and grandchildren.... This is a very simple, fast, delicious, and fun meal to prepare. We love watching sports on T.V....

10 slice white bread
10 large slices of tomatoes (about 1/4 - inch thick)
20 slice bacon (cooked and crisp)
10 slice american cheese

Steps:

  • 1. Toast the bread slices. Place them on a baking sheet.
  • 2. Place one large tomato slice on each slice of toast. (If you don't have a large slice of tomato use 1 - 2 slices).
  • 3. Put two slices of bacon in the shape of an X on top of the tomato.
  • 4. Top each one with a slice of cheese.
  • 5. Place in oven under the broiler. Keep close watch so they don't burn! They are done when the cheese is melted, bubbles form with browned spots.
  • 6. ***These open face sandwiches are good with nothing on them, but we do like a sprinkle of salt and pepper on top.
