I found this recipe on a can of tomatoes. It tastes great right after it is made or even the next day. The addition of bacon adds a nice smokey flavor to this pasta salad. You could easily add some chopped cooked chicken and serve this on a bed of lettuce for a complete lunch.

4 cups shell pasta, cooked
2 (14 1/2 ounce) cans diced tomatoes with garlic and olive oil, well drained
4 slices bacon, cooked and crumbled
1/4 cup green onion, sliced
1/4 cup red bell pepper, diced
1/4 cup yellow bell pepper, diced
1/2 cup mozzarella cheese, diced
1/3 cup fresh basil, chopped
1/2 cup balsamic vinaigrette
salt and pepper

Steps:

  • In a large bowl combine pasta, tomatoes, bacon, onions, peppers, cheese, and basil. Drizzle with the dressing and toss until thoroughly mixed. Season with salt and pepper to taste.

Great salad,quick and easy to make for any meal or a light lunch.I use honey mustard dressing .Easy to make 1/4 cup mayonnaise ,1Tblsp. mustard,1Tblsp.honey and a 1/2 Tblsp. lemon juice.Wisk together in a small bowl and store cover in the refrigerator.

2 c cooke farfalle(bow-tie) pasta,chilled
2/3 c basil, finely chopped fresh basil
1/2 c shredded mozzarella cheese
4 slices fully cooked bacon ,chopped
1/4 c balsamic vinegarette dressing
or honey mustard dressing

Steps:

  • 1. Combine diced tomatoes, pasta, basil,cheese and chopped bacon in a large bowl.
  • 2. Add dressing; toss to coat .
  • 3. Serve on a bed of lettuce and enjoy.

2 garlic cloves, chopped
3 tablespoons wine vinegar
1/2 cup olive oil
3 red potatoes, cooked in skins and still hot
10 slices mild salami, julienned
4 tablespoons red onions, chopped
2 green onions, chopped
1 tablespoon parsley, chopped
4 tablespoons pimentos, chopped
salt and pepper

Steps:

  • Place garlic, vinegar, and oil in bowl, seasoning with salt and pepper.
  • Whisk for 1 minute.
  • Slice potatoes thick and add remaining salad ingredients. Toss.
  • Pour in vinaigrette and toss again.
  • Marinate 15 minutes before serving.
