1 (10 ounce) package frozen puff pastry shells
3/4 cup milk
2 tablespoons butter, divided
1 tablespoon flour
3/4 cup grated gruyere cheese
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1/3 cup chopped cooked ham
1 tablespoon chopped green onion
4 large eggs, lightly beaten
paprika
chopped green onion

Steps:

  • Bake four pastry shells according to package directions. Reserve remaining shells for another use.
  • Microwave milk in a 2 cup microwave-safe glass measuring cup on HIGH for 1 minute.
  • Melt 1 tablespoons butter in a small heavy saucepan over medium heat; gradually whisk in flour. Cook for 1 minute, whisking constantly. Gradually whisk in warm milk; cook over medium heat, whisking constantly, 3-5 minutes or until thickened and bubbly. Remove from heat; whisk in 1/2 cup of Gruyere cheese, salt and pepper.
  • Melt remaining 1 tbsp of butter in a medium-size nonstick skillet over medium heat. Add ham and green onions and saute 2 minutes or until green onions are tender. Add eggs and cook, without stirring, 1-2 minutes or until eggs begin to set on bottom. Gently draw cooked edges away from sides of pan to form large peices. Cook, stirring occasionally, 1-2 minutes or until eggs are thickened and moist. Do not overstir. Gently fold in reserved Gruyere cheese sauce.
  • Spoon egg mixture into prepared pastry shells. Sprinkle with remaining 1/4 cup of Gruyere cheese and paprika and garnish with chopped green onions, if desired.
  • Can substitute extra-sharp white cheddar for Gruyere and chopped cooked chicken for ham.

Chicken breast, hash browns, fried onions and cheese. Now that's country cookin' for ya! This is a wonderful easy recipe, especially if want a filling meal, but don't have time to stay in the kitchen. This is my mother-in-law's favorite dish, and it heats up well for leftovers.

3 cups shredded hash brown potatoes
1 (6 ounce) can French-fried onions, divided
6 slices processed American cheese
4 skinless, boneless chicken breast halves - cut into bite size pieces
1 (10.75 ounce) can condensed cream of chicken soup
¾ cup milk
1 (15 ounce) can corn

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Stir hash browns and 1/2 of the onions together in a 9x13 inch baking dish, then lay cheese slices on top and layer chicken over cheese. In a small bowl, mix soup and milk together and pour mixture over chicken.
  • Bake in preheated oven for 30 to 35 minutes, or until chicken is cooked through and juices run clear. Pour corn onto chicken and stir to combine all ingredients, then bake for an additional 20 minutes.
  • Sprinkle remaining onions over all and bake for another 5 minutes, or until onions are golden brown. Let sit 5 minutes before serving.

Super cozy and creamy, a few staple ingredients combine to create a veggie-filled casserole easy enough for a busy weeknight.

1 pound lean ground beef
1 medium onion, diced
1 medium green bell pepper, diced
1 teaspoon salt
½ teaspoon black pepper
1 (8 ounce) package uncooked egg noodles
1 (14.5 ounce) can petite diced tomatoes
1 (10.75 ounce) can condensed tomato soup, undiluted
1 cup cottage cheese
1 cup sour cream
2 teaspoons Worcestershire sauce
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine ground beef, onion, and bell pepper in a large skillet over medium heat. Cook and stir until vegetables are tender and beef is browned and cooked through, 10 to 15 minutes. Season mixture with salt and pepper while cooking.
  • Meanwhile, fill a 5-quart Dutch oven or other oven-safe pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain noodles and return to the pot.
  • Add diced tomatoes, condensed soup, cottage cheese, sour cream, and Worcestershire sauce to the egg noodles; stir to blend. Stir in ground beef mixture until evenly combined. Taste and adjust seasonings. Sprinkle Cheddar cheese over the top.
  • Bake uncovered in the preheated oven until heated through and cheese is melted and golden, 25 to 30 minutes. Serve immediately.

1 c chopped celery
1 Tbsp butter
2 Tbsp chopped onion
1 1/2 c cooked rice
2 c cooked cubed chicken
1 can(s) cream of chicken soup ( i have also used cr. mushroom soup)
3/4 c mayonnaise
1 can(s) drained sliced water chestnuts
1/2 c almonds, slivered
1 c cheese shredded ( add a little more because we like it cheesy)
2 Tbsp melted butter
1 c corn flakes ( i have also used bread crumbs)

Steps:

  • 1. Cook celery and onions in butter till tender.Add the next 7 ingredients. Place in a 9x13 casserole dish. Crush the corn flakes and mix with the butter and add to top of casserole. Bake 350 degrees for 40 min
