GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

Wow, talk about an easy salad to make this is it! Now, my Grammie didn't have a name on this recipe so I just gave it a name. I remember eating this jello when I was a kid. I love that it has cottage cheese in it and it is light, creamy and just the right amount of sweet. It would be great to be served at Easter time or any...

Steps:
- 1. Gather together your 4 ingredients.
- 2. Sprinkle dry jello out of box over the top and mix. Fold in the cool whip.
- 3. Mix pineapple and cottage cheese together and chill. (Grammie says that the lime jello or orange pineapple were her favorite)
LIME JELLO SALAD
Steps:
- Bring 4 cups of water to a boil.
- Remove from heat and quickly mix in the jello and pudding mix.
- Pour into a glass dish and add pineapple evenly throughout. I have used various sizes of glass dishes, they all work.
- Cover and place in the fridge for at least four hours.
- Remove from fridge and move the jello to a large bowl - mash around until it's broken up.
- Mix in Cool Whip and coconut flakes.
- Keep refrigerated until ready to serve.

- Dissolve gelatin in sugar and hot water.
- Stir in pineapple and chill until mixture begins to stiffen, but is not firm.
- Whip lime mixture using an electric mixer. Add cottage cheese and beat all together.

LIME COTTAGE SALAD
This is a refreshing summer salad that goes with just about anything. This does not have as many ingredients as some do, but it is sooo good, and very easy to make as I usually have all three of the ingredients on hand most of the time. It is a pretty green and I just love it. We all do. I make it all year long. If you make it with the sugar-free jello and low-fat cottage cheese, it is a great Weight Watcher dish. I have used both kinds, and they both taste the same. It has only 1-2 points per serving.

Steps:
- Drain the pineapple well and save the juice.
- Mix the jello according to directions on the box, using all of the pineapple juice as the liquid, adding enough water, if needed, to make the right amount on package.
- Put the jello in the refrigerator until it is partially set.
- Mix in the cottage cheese and pineapple.
- Put into a mold or pretty dish and refrigerate till firm.
- Enjoy!

- Add water if needed to make 1 1/2 cups juice.
- Put juice in saucepan and boil for 1 minute.
- Add marshmallows and melt while stirring.

- Add boiling water to gelatin mix in large bowl; stir 3 min. until completely dissolved. Stir in pineapple. Refrigerate 1-1/4 hours or until slightly thickened.
- Mix cream cheese and cottage cheese in medium bowl until blended. Gently stir in COOL WHIP with whisk. Gradually add to gelatin, mixing well after each addition. Stir in nuts and cherries. Pour into 6-cup mold sprayed with cooking spray.
